The Convection Express is capable of cycling through up to four cooking stages per pro-grammed menu item. Most items do not require that degree of sophistication. As youdevelop your own programs for your specific applications, however, you may utilize allcycles on a regular basis.

In the following examples, if both the CONVECTION and MICROWAVE modes are shownrunning simultaneously, this requires programming of convection and microwave for thatparticular food item. For example, Mini Bagels under “Appetizers” requires programmingof 400°F convection and 60% microwave cooking for a total of 3:00. Mini Bagels is a singlestage cooked item.

If multiple stages are necessary, you will see more than one time setting indicated as wellas multiple temperature indications. For example, Chocolate Chip Cookies under “BakedGoods” requires two stages; a first stage of 475°F convection and 50% microwave powerfor 1:00 and a second CONVECTION only stage at 475°F (no microwave, 0%) for 5:30.Chocolate Chip Cookies are a multiple stage cooked item requiring a total of 6:30.Example

Cook times in the following tables are approximations only. It is important that rec-ommended cook times not be exceeded without first checking the food. If food appearsto require additional cook time, remove from oven, inspect, and if additional time isrequired, return to oven and resume cooking. Do not add additional time without firstopening door and inspecting food. Factors that will affect the cook time of a particularfood item are; starting temperature, portion size, food shape, container used and food vol-ume.
