Crave-worthy bakery, for those seeking gluten-free...or not.

SOLUTION

By using a blend of flours, we achieved the right

texture without grittiness or dryness that can occur

in gluten-free products. Then, we implemented

a longer fermentation time (bulk & proof) to add

the appropriate functional aeration and flavor

development to the dough. Finally, a shorter bake

time at a higher temperature delivered a crisp

exterior crust and soft interior crumb.

CHALLENGE

Gluten-free baked goods can come with a long list

of challenges, including building back the structure

gluten typically provides, and achieving a proper dough

rise with open crumb. Solving these challenges is key

to attaining the desirable taste and texture of

traditional baked goods.
