    I am often asked whether it is proper to bring a bottle of wine into

    a restaurant. I dont discourage anyone from bringing their own wine,

    but only suggest a few guidelines and advice on what to expect whenyou arrive with your bottle. Be aware that some restaurants have

    limits regarding customers taking in their own wine and some do not

    permit it at all.Aside from high wine list prices being the motivation for taking

    your own bottle to dinner, the restaurant wine list that offers a verylimited choice of wines that also provides a reason to bring your

    own. Unfortunately, often wine list selections are either lopsided

    toward the mass-produced, popular brands, or else do not offer awide enough variety of wines styles. This is why bringing your own

    bottle to the restaurant sometimes makes sense. Here is how Iapproach it:

    If I am uncertain about a particular restaurants policy I will call

    advance to ask about bringing my own bottle. I respect a restau

    that does not permit private party wine, and this is more palatabto me if their wine list is extensive, diverse and reasonably price

    I will only bring wine that is special--not an ordinary supermark

    wine that can be found on virtually any restaurant wine list. I donot want to appear as if I am competing with the restaurant by

    bringing in a bottle of something they already have on their list. course, it isnt always possible to know this in advance so either

    ask in advance or I reduce the chance of that conflict by selectin

    an older vintage bottle from my collection. On the other hand, frestaurants that have small and very limited wine lists, bringing

    an ordinary wine may not be a sensitive issue I expect to pay a fee to the restaurant, known as a corkage fee, t

    open and serve my bottle. This fee usually ranges from $5 to $2

    depending on the restaurant. Some restaurants may waive this ffor their regular customers or if you also order a bottle off their

    wine list.

    I always offer a taste of my wine to my server, host or sommelier.do this simply as a courtesy and it is always appreciated, especia

    if I have brought an older wine, or one from an unknown, high-

    quality producer. I tip my server based upon the dinner price and the approximat

    value of the wine that I brought.

    Has someone ever handed you a random glass of sparklingwine at an event, from which you eagerly sipped, expecting

    creaminess and length, but ended up instead disappointed in theinsipid, sweet, bubbled white or pink grape juice actually in the

    glass? No, it wasnt you, and no, all bubbles are not created equal or

    equally. Blame soda for ever making you think otherwise since thatsessentially how that wine was made.

    Inexpensive sparkling wine tastes cheap not necessarily

    because of inexpensive grapes (though they dont help) but becauseof an inexpensive production process, called the Charmat or bulk

    process, which accelerates the fermentation and thus thecarbonation, creating an artificially-tasting mouthfeel on the tongue.

    Through the use of glass-lined pressure tanks, carbon dioxide can

    also be injected into the wine, giving it carbonation ala sodawater. The result of either looks like sparkling wine, but it sure

    doesnt give the same pleasures.

    Indeed, without considerable time on the lees, the spent yeastand other fermentation by-products, the creaminess we associate

    with a sparkling wine wont be present, which is why the bubblesdont have the same mouthfeel. This latter, methode traditionelle,

    process produces the bubbles as part of a long, slow fermentation

    on the yeast in individual bottles and is what creates the luxuriouslycreamy yet fruity essence of proper sparkling wine or its various

    pseudonyms around the world (cava, prosecco, Asti, Champagne,

    etc.). Its no joke that patience is rewarded in sparkling wines. The

    timeframe is completely different for each methodology, and thathas the impact on the finished product.

    Equally, because the pressure tanks are proportionally so much

    larger than a sparkling wine bottle, the liquid-to-solids ratio is far

    different. What produces the creaminess of the mouthfeel in aged

    sparkling wines is precisely the length of time in contact with thfine lees thats what forms the modern day frozen bolt that ea

    bottle releases during disgorgement before final bottling. Producwill sometimes move sparkling wines into other glass sizes befor

    bottling in the finished glass for this reason: the right ratio really

    matters to the aging. In fact, all of the packaging for these wineshas to be specially designed, but thats a tale for another day.

    And so, unlike a lot of other things in the world today, you re

    do get what you pay for with fine sparkling wines and theirnatural bubbles produced the low and slow way first recogni

    by winemasters Francesco Scacchi and Dom Prignon all thosecenturies ago. Any sparkling wine made the traditional way will

    indicate as such on the label because the imposters legally canno

    and given the time, expense and headaches involved, those whocan want credit where its due! At your next event, ask to see the

    bottle before you imbibe and if anyone gives you a funny look

    now youve got a conversation starter for those awkward eventbeginnings when no one knows what to talk about. Enjoy!

    Quality Wines from Celebrated Sta. Rita Hil

    ON THE COVER

    Since its establishment in 2001, the Sta. Rita Hills AVA has becom

    one of Californias most celebrated destinations for Pinot Noir and

    Chardonnay. Located in Santa Barbara County, between the bucolic

    towns of Buellton and Lompoc, the area is popular for its slow pace

    gorgeous scenery, great restaurants and fine accommodations.

    Any visit to Sta. Rita Hills should include a stop at Foley Estates.

    winery was founded by Bill Foley in the late 1990s and today is one

    the most important properties in the appellation. Much of the winery

    success can be attributed to the two extraordinary estate vineyards:

    Rancho Santa Rosa and Rancho Las Hermanas.

    The 460-acre Rancho Santa Rosa Vineyard features 230 acres ofvines that climb from 500 to 1,000 feet above sea level. The soils are

    maritime-based and the weather is consistently cool thanks to moist

    ocean breezes that sweep the property daily.

    The majestic 500-acre Rancho Las Hermanas property features 20

    acres of Pinot Noir (Lindsays Vineyard) and 52 acres of Chardonnay

    (Courtneys Vineyard). It is a cool, rolling site blessed with six distinc

    limestone-based soil types.

    In addition to the unique terroir at both sites, winemaker Leslie

    Mead Renaud credits Foleys intense farming protocols for the qualit

    and style of the wines. One of the simplest, yet most radical

    developments in California viticulture since the 1990s is micro farmIt is based on the Burgundian model of mapping soils and contours

    piece of land down to the smallest increment. At Foley, we use soil p

    when planting a parcel and aerial photography when it is producing

    pinpoint changes in the terrain that affect vine growth and wine

    character. We then farm each of these tiny sections as if they were

    single, independent vineyards.

    According to Bill Foley, Our goal with our farming and winemak

    programs is to ensure wines that are true to both their origin and the

    grape variety. Our Pinot Noir has all the exotic spice and complexity

    youve come to expect from Sta. Rita Hills Pinot. Our Chardonnay is

    concentrated and lush, yet it still retains the freshness and balance owine from a cool, maritime climate.

    Since the first vintage, Foley Estate wines have received universal

    acclaim from the wine media garnering more than 40 scores of 90

    points or above from Wine Spectator, Wine Enthusiast, Wine Advoc

    and Connoisseurs Guide.

    Paso Robles Inn Steakhouse has been a favorite place for localsand visitors for more than 50 years, but their history dates even

    further back.Sitting on top of natural sulfur springs, the El Paso de Robles

    Hotel was opened in 1891. Built in the Victorian style, the hotelstood as a fortress in the small town of Paso Robles and was thedestination of the day. But, the golden era of the El Paso de RoblesHotel and Hot Springs came to an end after a major fire in 1940burned down everything except the Grand Ballroom.

    The Paso Robles Inn was reopened in 1942 as a modernbungalow-style hotel with surrounding gardens. While the inn

    If filmmaker Tim Burton ever went into the wine business, youcan imagine his tasting room looking something akin to the tasting

    room at Clautiere. Part fantasy, all whimsical and self-described as

    Edward Scissorhands meets the Mad Hatter at the Moulin Rouge..

    but, regardless of how one may try and describe the magical vibe a

    amazing estate wines of this distinctive winery, you really do have

    see it to believe it.

    Visitors to the converted-farmhouse tasting room are greeted b

    mesmerizing 230-foot curvaceous metal fence that fronts the

    property. The oak-studded grounds are dotted with mosaic sculptu

    and ornaments, so you might think you must have missed the win

    entrance and are in a sculpture garden. But no, youre just through

    the Clautiere looking-glass, Alice. Once in the tasting room, youre

    met with bold, periwinkle walls and a black and white checker-bo

    floor that is a down-the-rabbit-hole moment for sure. In the bac

    Playroom, there are neon colored wigs and crazy hats.

    But the big question still lingers: Why the wigs?

    Well, turns out, something amazing happens when people dec

    to don a wig or crazy hat. Suddenly, a person is able to leave their

    troubles and inhibitions at the door and is a great way to try

    something new, without any prejudices. Certainly every winery fee

    that it is important to differentiate themselves from other wineries,

    merely a question of how you chose to do so. It would be easy to

    assume that Clautiere has put all their energy into the trappings ofthe tasting room and not the wines. This could not be further from

    the truth. The Clautiere portfolio is full of spectacular, rich reds an

    crisp white wines, reflecting the unique growing conditions of Pas

    Robles. I feel Clautiere is known as being a tasting room that you

    only can have a fun time, but also get an education with the wine

    gourmet cheese pairing says Operations Manager, Susan West.

    Clautiere has a magical feel and its evident from the minute you ge

    out of your car with the landscaping, the metal gate and fences plu

    the large mosaic balls hanging from our beautiful huge tree, all of

    which were made by Claudine. We truly have wines with an artist

    expression. West said. Clautieres wines include Rose, Syrah,

    Viognier, Roussanne, Cabernet Sauvignon, Port and several other

    Bordeaux and Rhone blends with prices ranging from $15 to $38.

    They also offer the popular not-your-everyday table wines, 2 Cock

    Sisters in a white or a red. They are just now releasing their 2009

    Cabernet Sauvignon and their Non-Vintage Mon Beau Rouge, a bl

    of 50% Syrah, 17% Counoise, 17% Mourvdre and 16% Grenach

    We are very proud of these fine tasting wines, says West.

    The creative forces behind Clautiere Vineyard are Claudine

    Blackwell and Terry Brady (Clautiere is a merging of their first

    names). Since moving to Paso Robles in July 1999, the couple has

    could have anticipated. Terry and Claudine were living in Southern

    California and they were looking for a project that would take up 20

    to 30 years, something long term they could immerse themselves

    into. Once they arrived in Paso Robles, they were shown the

    property which is now Clautiere and they were hooked. They soon

    found themselves knee-deep in the wine business. The first few

    years, from manning the tasting room to harvest and crush, it was

    mostly the Terry and Claudine Show, but as the popularity of the

    winery and tasting room grew, so inevitably, has the Clautiere Family.

    Clautiere has long been primarily a word of mouth place, but

    they have recently hired a social media person for Facebook and

    other marketing projects and to keep everyone informed and

    entertained about the goings on at Clautiere. They have also recently

    expanded and opened a second, larger tasting room, Clautiere Too

    for private parties and large groups. We offer the same, unique wi

    tasting experience as in our main tasting room but can also offer

    catering and other special event services for groups up to 100, We

    says. Clautiere Too also has a stage with surround sound so specia

    music can be programmed or a band can even be brought in for liv

    music, making this a perfect choice for holiday, birthday, bachelore

    and anniversary parties. If you can dream it up, we can make it

    happen, West says, echoing the overall theme of the winery.

    During the month of December Clautiere is having an Open

    House every weekend with special surprises and offerings on all gi

    and Clautiere merchandise. They will also be offering some of thei

    fabulous library wines at special half case and full case discounts.

    Silver Horse Winery is a dream realized by the Kroener family

    dating back to when they first moved to the Central Coast in 1996.

    Stephen Kroener has been interested in wine for most of his life and

    has had the opportunity to work with some Paso Robles most

    renowned Winemakers. Now at Silver Horse, Stephen produces

    Spanish and Bordeaux style wines mostly from the families 80-acre

    vineyard on the Pleasant Valley Wine Trail in San Miguel. The

    geography of this region has stunning rolling hills mostly covered

    with vineyards, cattle or horses. Majestic oaks seem to be strategically

    placed along the gently winding roads. Since 2005, Silver Horse has

    operated in its beautiful new winery and hospitality facility. Steves

    background in architecture and construction management was put to

    good use to create this Mission-style building. The parking and

    picnic area is elegantly appointed with native landscaping and rustic

    style outdoor furniture. During any given weekend, there may be a

    game of horseshoes, bocce ball, or cornhole being played and picnic-

    ers lounging and enjoying a bottle of wine.

    As the path leads inside, it is hard to miss the 100-year-old roof

    tiles of the building. The Tasting Room is just as welcoming and

    relaxing as the outdoor space. Wine barrels hold up a long copper

    bar and there are two separate seating areas along the walls. A

    window overlooks the winery production area. The tasting menu

    changes frequently but always offers a nice variety of the Spanish andBordeaux wines Silver Horse is known for. The Albarino is a lovely

    and crisp white wine - a great way to get the palate ready for some of

    the bigger reds. One of the more popular blends at Silver Horse is

    The Main Thing, which is comprised of Merlot, Petite Sirah, and

    Cabernet Sauvignon. This one definitely fits into the food-friend

    wine category that Steve is known for. Another blend, of

    Tempranillo, Garnacha, and Cabernet Sauvignon, is called The Big

    Easy and named in honor of Steves mom for her relaxed attitude a

    easy-going nature. The wine is reminiscent of Spanish reds mean

    pair with heavily sauced foods. Several new releases showcase

    100% varietal wines like Tempranillo, Cabernet Sauvignon and PeVerdot. The Petit Verdot is unusual because it is normally blended

    into wine but in this case the wine is balanced and complex on its

    own. In addition to the ever-changing tasting menu, there are sev

    case specials offered throughout each month. There might be a gr

    Silver Horse is renowned for the beautiful private parties and

    weddings held on the property. However, there are plenty of

    INGREDIENTS

    cup extra-virgin olive oil 1 teaspoon crushed red pepper flakes 2 to 3 flat fillets of anchovies, drained 1 pounds cod, cut into 2-inch chunks 1 (14-ounce) container chicken stock

    1 (32-ounce) can chunky style crushed tomatoes 4 sprigs fresh thyme, leaves removed-about 1 tbsp 1 handful flat-leaf parsley, chopped 6 cloves garlic, crushed 1 bay leaf, fresh or dried 2 celery ribs, chopped 1 medium onion, chopped 1 cup good quality dry white wine 8 sea scallops 16 to 20 raw mussels, scrubbed 8 large shrimp, peeled and deveined Salt and pepper

    Cioppino is a hearty classic seafood stew that I always enjoy

    making. It has loads of fresh seafood and, while it does take some

    time to prepare, its one of those lovely meals that sits and simmers on

    the stove while filling the house with delightful aromas that you cant

    wait to taste. A good wintery stew recipe paired with Pinot Noir is a

    necessity at this time of year and this dish is fun because there are so

    many different variations that can be made.

    The 2011 Laetitia Estate Pinot Noir is an ideal wine for this

    cioppino. The sweetness of the onion combined with the herbal notes

    of thyme and parsley bring out the red fruit notes in the wine, while

    the minerality of the scallops and mussels is well tempered by the redpepper flakes and notes of curious spice in the Laetitia Estate Pinot

    Noir. I made baguettes to go along with this stew because everyone

    likes it for dipping and this broth is so flavorful that I didnt want to

    leave any in the bowl!

    DIRECTIONS

    In a large pot over moderate heat combine oil, crushed pepper,anchovies, garlic and bay. Let anchovies melt into oil.

    Chop celery and onion near stove and add to the pot as you work.Saut vegetables for a few minutes to begin to soften and add wine tothe pot.

    Reduce wine a minute, then add chicken stock, tomatoes, thyme andparsley. Bring sauce to a bubble and reduce heat to medium low.

    Season fish chunks with salt and pepper.

    Add fish and simmer 5 minutes, giving the pot a shake now and then.Do not stir your soup with a spoon after the addition of fish or you willbreak it up.

    Add shrimp, scallops and mussels and cover pot.

    Cook 10 minutes, giving the pot a good shake now and again.Remove the lid and discard any mussels that do not open.

    Carefully ladle stew into shallow bowls and pass bread at the table.

    Dont let the boar at the door scare you. Eberles Tasting Room is nothing but friendly. In

    fact, it is considered good luck to rub the boars nose and toss a coin or two into the water; an

    the Eberles will make sure those coins are donated to local charities for children.

    Located along Highway 46 East and snuggled into the vineyard and surrounding countrys

    Eberles redwood Tasting Room is one of the few complimentary tasting rooms in the area, so

    there is never a charge. It is also one of the busiest Tasting Rooms, seeing more than 50,000

    visitors a year. Currently there are some award winning wines to be tried in the Tasting Room

    The 2010 Steinbeck Syrah and 2011 Syrah Ros were Gold Medal winners of the 2012 San

    Francisco International Wine Competition. Eberle also received the Silver Medal for their 20

    Reserve Estate Cabernet Sauvignon, 2011 Mill Road Viognier, 2011 Estate Chardonnay, 2011

    Estate Muscat Canelli and their 2009 Sangiovese. The 2012 Competition had more than 4,50

    wines from 29 countries and 26 states and the Eberle Winery came through with the best of th

    a 100% Cabernet Sauvignon. There were only 350 cases produced, so if they still have some

    Like most passionate wine

    enthusiasts, a great epiphany ledJoe Davis to his calling as a wine-

    maker...

    While in college on an athleticscholarship, Davis, the son of a

    Monterey California fishing family,took a job in a wine shop. One

    Christmas, a good customer

    brought Joe a gift of a 1978 Closde la Roche Grand Cru, Domaine

    Dujac. One sip and he was completely taken with the flavor and

    sheer deliciousness of the wine.To have winemaking as a life pursuitand to make wine like this, he thought, would be the most

    wonderful thing in the world. And so his quest began.Joe voraciously read everything he could find that was wine

    related and enrolled in UC Davis graduate program. In 1985, he met

    and went to work for Dan Lee of Morgan Winery. While primarilymaking award-winning Chardonnay, Davis never lost site of that

    fantastic Burgundy and in 1990, he presented a classic Pinot Noirproduction plan to Morgan Winery.

    His original plan included techniques Davis applies today to his

    Arcadian Winery Pinot Noir; whole cluster fruit is hand picked andis sorted early in the day to ensure chilled fruit. Obviously, not all

    vintages are the same, the recipe might change, but by using these

    methods consistently, I impart a common thread among my wines

    that translates into my style says Davis. He employed these proce-dures for all of his Pinot Noir vintages (1986-1994) at Morgan andthen took this knowledge to a general managers position at

    Bernardus Winery. Finally, in 1996, on his own and ready to fulfill

    his dream, he released Arcadian Winerys first vintage of Chardonnayto rave reviews.

    Joe realized another dream in late November 2011 when he

    opened his long-anticipated tasting room in the Lompoc WineGhetto. Arcadian Winery tasting room is open daily from 11 a.m. to

    Byron Winery is situated on the eastern edge of the Santa Mari

    Bench in Santa Barbara County, a cool-climate region recognized

    one of the great Crus in California Pinot Noir and Chardonnay

    production. The winerys Nielsen Vineyard has been at the epicen

    of experimental, cutting-edge viticulture since its inception as the

    oldest planted commercial vineyard in Santa Barbara in 1964.

    Viticultural pioneer, Uriel Nielson, took a chance that the propert

    fog-drenched, maritime-influenced weather and sandy loam soils

    would be ideal for cool-climate varieties. It was a hunch that prov

    correct.

    Byron Winery specializes in small lot, artisan Pinot Noir and

    Chardonnay. Bench is a geographical term meaning the shoulder

    mountain. Its that part of the hillside where the steep incline beg

    its rise at Byron this is roughly 500 to 800 feet above sea level. Tbench contributes largely to the style, texture, aromatics, flavors a

    intensity of Byron wines. The unique mineral content and drainag

    capabilities of bench soil create distinctive wines that are unique

    from those grown in lower elevations such as the valley floor.

    Byron Winery purchased the historic Nielson Vineyard in 1989

    For the next twenty years, Byron Winery initiated a series of grape

    trials to determine the best methods for producing exceptional fla

    and complexity. More than two dozen clones of Pinot Noir and

    Chardonnay were planted with several dozen rootstocks in the

    European high-density style on the Santa Maria Bench. With prai

    Tucked away in the beautiful back patio of the quaint 100-year-old

    building that houses J. Woeste, is the equally charming William

    James Cellars.

    We have a beautiful location and its the perfect place to come and

    enjoy a glass of wine on the patio, said owner and winemaker, Robin

    Bogue. Its a very tranquil and happy place to go.

    But dont be fooled by the name, William James Cellars was

    founded in 1993 by female winemaker Robin Bogue, and is named

    after her father, William, and son James. Along with her father, Bogue

    creates wines with an energy and passion with fruit sourced from

    premium vineyards throughout the Santa Barbara County. The wines

    she creates reflect the diversity of microclimates, soil and rich varie

    flavors from these select producers.

    When visiting the tasting room, youll notice there are a couple

    other wine labels in addition to the William James wines. Make su

    Family Vineyard, Santa Ynez Valley Syrah.

    The other wine label, Camino Real, was inspired by Bill Bogue,

    who spent his life working in vineyards and is a founder of the

    Central Coast Wine Growers Association.

    With only 1500 cases produced each year, these small-lot wine

    are a fun way to experience some of the best the varietals of the

    Central Coast.

    Wandering Dog Wine Bar is a family owned business by people who

    are passionate about wine. Director di Vino, Charles CT Williams, has

    an extensive knowledge of the local wine country and has a knack for

    picking out under the radar wines before anyone else has heard of

    them. Everything here is palate-picked meaning that we try every

    wine that we carry and are not influenced by the latest trends or scores.

    In fact, you will not a see a score for any wines anywhere on our site.

    Leave your leash behindit is more than just

    a motto, it is a way of life for us. We encourage

    you to try wines youve never heard of from

    producers you didnt know existed in places that

    you never thought produced wine. This is notthe place to sample your typical Cabernets and

    Chardonnays and chances are, you may only

    have heard of half of the wines that we carry.

    With a wide variety of wine, beer and

    sparkling from artisan producers along the Central Coast, as well as

    from around the world, there is always something for everyone. Enjoy

    one of our themed flights or order a glass of wine and relax with

    friends. If you need a little break from all of the wine, do a beer flight

    instead, or just kick back with a cold one! The only thing better than

    wine and beer is having some little bites to go along with it, so we

    offer a nice array of gourmet antipasto and cheese platters as well asdelicious chocolate truffles and caramels.

    Join them for fun holiday events! The annual sparkling and cheese

    tasting is Saturday, December 15th which showcases local bubbles

    along with delicious Champagnes, each paired with a gourmet

    cheese. Festive chocolates include

    offering a special holiday themed

    sparkling and cupcake flight everyday from December 21st through

    January 1st. Cupcakes are from

    Solvang Bakery and will be served

    along with a variety of local and

    international sparklings.
