Chilean CultureChiles industry sectors are based primarily on local mineral resources:agricultural raw materials, and forestry. There is also a large textile, clothing, and leather industry concentrated mainly in the urban cen-ters.
For recreation, Cueca, which is a form of polka, is considered to beChiles national dance. And, contrary to popular belief that soccer isthe most popular sport in Chile, it is actually Tennis.
Chilean Food Typical Chilean cuisine arose from the fusion of traditional indigenousingredients with Spanish culture and traditions. Chilean farms typi-cally produce grapes, apples, pears, onions, wheat, corn, beef, andpoultry. Common Chilean dishes include:
Ceviche: Raw sea bass in lemon juiceEmpanada de Pino: typical turnover filled with diced meat, onionsolive, raisins and a piece of hard-boiled egg, baked in earthen orplain oven.

When the Brewmaster from the Big & Easy bottle Brew sent us Samples of their new Brown Ale, we were excited and could not
wait to bring it to market!
This Brown Ale is brewed with 4 differentmalts:
1. Pale malt2. Caristan Malt3. Munich Malt4. Chocolate Malt
These four malts give it a unique and full
bodied flavor. Deep hazelnut brown in col-our, this beer has a malty, nutty flavor.
The Brown Ale is unique with 2 pills re-quired to brew the beer:
The first pill is the traditional yeast pill The second pill is an essential hop oilcompound of the Cascade hops
The hop oil compound contribute to a com-
plex and hoppy character. The micro bubbledispersion of the hop oils promotes maxi-mum absorption of flavor and aroma compo-nents into the brew.
Beer will be 4.5% - 5.0% ABV.
This beer only takes 2 weeks from beginning to end!!!
1. Let the bottle adjust t to room temperature. Unscrew and discard thesolid cap
2. Drop the pills into the bottle and firmly screw on the pressure capNOTE: NEVER use the solid cap, the bottle will explode!
3. Store upright and out of direct sunlight at room temperature (not below 19 degrees Celsius) until beer comes clear (approximately 2 weeks)
4. Refrigerate upright for at least 12 hours (this beer will explode and spray out of the bottle if it is not well-chilled prior to opening)

While Merlot wines are oftenof the fruity and soft style,
bold, hearty and tannic Merlot wines are gaining popularity. When Merlot wines are well-aged in oak barrels, the winemay have notes of chocolate, coffee, smoke, caramel and
vanilla.
As mentioned previously, Mer-lots homeland can be found inBordeaux region of France, butMerlot grapes are also grown
in , Chile, California, Washing-ton state and even New York!
Hearty, more tannic Merlots pair well with heavier, grilled and charred
red meats. The easy drinking, fruit-ier Merlots can easily be paired withlight-fare such as salmon. Light-bodied Merlots work well with shell-fish like shrimp or scallops, espe-cially bacon-wrapped scallops orprosciutto-wrapped shrimp.
We offer the following Merlot wines:
Heritage Estates Merlot - $55Grand Cru Merlot - $70GCI Washington Merlot - $79Cru Select French Merlot - $100En Primeur Chilean Merlot - $138
Spotlight on Merlot Merlot wines softer and fruitierthan the popular Cabernet
Sauvignon.
The fruit notes most com-monly associated with Merlotinclude berries like blackberry, blueberry, and mulberry. Also, notes black or red cherries andplum are often commonly as-sociated with merlot wines.
In hearty merlots with a moretannic structure, vegetable andearthy notes may be presentand include olives, leather, mushrooms and tobacco.
With love in the air, February is an excellent time to enjoy the
luscious flavours of Merlot. The noble Merlot is a redFrench wine grape variety thatis the most planted wine vari-ety in Frances Bordeaux re-gion and is hugely popular herein North America as well.
Merlot grapes tend to have alighter colour then CabernetSauvignon grapes and Merlotskins are more fragile and havefewer tannins.
This tendency towards fewertannins and malic acid makes
Pairs well with chocolate coveredstrawberries...
