Hello my butchery friends,
I am so excited to be introducing our very special combined Sauce-It & Prime Cuts edition.
It’s amazing when you look back over the last decade how well the most forward thinking retail butchers have developed. Sometimes reinventing their offering to successfully meet the demands and aspirations of an ever discerning consumer. My congratulations to you all.
I hope, and believe, we have been a part of that journey and this edition is about celebrating some of the ideas we have explored together - reminding us all of the very many products we should be considering. I know you can’t possibly sell them all - but I hope one or two spark your interest
and create additional customer interest and more sales and profit for your business.
And - of course - to thank you for your continued business we have worked with our partners to create many exciting offers. Hope some are suited to you.
There is a lot to digest in this issue and I thought it may help to summarise some of our aims. So here goes:

Two aims here:
Firstly, we should all be trying to do our bit for the environment and we will try search out some good options - these two are great quality and may just get us started.
Secondly, and of great importance to me - a retail butcher makes a great meat product - far superior to most supermarket product. Your product deserves the best presentation. When the customer takes it home - it should be like unwrapping a Christmas present, the wrapping should reflect the quality - we would not put a Xmas present in an HD bag.
Your product is made with TLC maybe the Seal Fresh Bag is the answer.
Finally it’s nice to hear from you and therefore I have included some past testimonials and some current updates from some very dedicated butchers. I’m proud to be associated with such inspiring people and such a responsive industry.
Do you remember pubs? My local is the Cross Keys, it’s v good, but the Red Lion just under a mile away always features a guest ale - I like to walk there try the new offering and if it’s good stay for another or for a few. They don’t change their standard range just introduce a “guest”.

M E T H O D• Mix the minced chicken, poultry burger
mix and water together thoroughly and form into 150 gram balls.
• Form a pocket in the ball and insert the mozzarella. Place 30-40 grams of sliceable sauce on top of the mozzarella and fold the burger meat around the sliceable sauce forming a flattened ball.
• Use a lattice cutter to lattice the puff pastry and cut a small amount to cover the ball. Place the pastry over the top and tuck the ends underneath.

SIX GOLDEN RULES1. QUALITY COUNTS Boneless Pork Loin & Belly - your pork
must be of good quality and fresh. Prepare your pork by removing the chain muscle on the loin and trim each end to make sure it’s square, pork trim accumulated can be easily used for manufacturing.
2. CONSISTENCY IS KEY Dry Curing Usage Rate - to create
consistent dry cured bacon always work out your dry curing usage rate, it’s easy when using the Lucas Easicure range:
• 30g per Kg meat - Easicure Traditional • 40g per Kg meat - Easicure Smoke • 50g per Kg meat - Easicure Sweet3. GET HANDS ON Hand Rub - once you have weighed the
correct quantity of Easicure, start rubbing it onto the pork. Ensure the Easicure is distributed evenly, particularly in pockets, cavities and on the larger muscles of the loin or belly.
4. GOOD THINGS COME TO THOSE WHO WAIT
Curing Time - now vacuum pack your pork and allow good time for the curing process. The curing time depends on the thickness of the pork, always work on 1 day per half inch (13mm) thickness of the pork, plus 2 days. Apply a finished cured date sticker for records and turn every 2 days to achieve an even cure.
5. KEEP COOL Temperature - the optimal temperature for
the curing process is between 2°C to 4°C. Any colder or warmer will slow down the curing process resulting in a miss-cure.
6. DRY & INTENSIFY Air Drying - once the curing process is
finished, take the pork out of the bag and ensure it’s fully air dried before slicing and packing. Air drying and the maturation of your dry cured bacon will intensify the flavour, around 2-3 days recommended.
FINAL TIP Take care to avoid contact with other meats throughout the whole dry curing process to avoid cross-contamination by nitrite.

We have lost some wholesale business since the crisis, so we created an online shop which has really helped to boost trade.
