CAVE DE BISSEY Crémant de Bourgogne White Story Cave de Bissey is a group of growers established since 1928 in Bissey sous Cruchaud. This small village is located in the Côte Chalonnaise between the Maconnais region and the Côte d’Or. It is one of the oldest cooperatives in the region and is very well known locally for the quality of the wines. 65% of the wine produced by its members is sold at the cellar in France, which is why the name is not very well known in the US. It remains a small-scale operation with just 40 growers and 5 employees. They are the only growers in the area to control the whole vinification process of their Crémant, from harvesting to bottling, which ensures excellent quality. Grape varieties 60% Aligoté, 10% Chardonnay, 30% Pinot Noir Terroir The Crémant de Bourgogne appellation is reserved for sparkling wines created from still wines known as ‘base wines’, prepared according to the traditional method. The vines are situated on hills of 800-900 feet high, facing south- southeast to ensure optimal maturity of the grapes. Soils: limestone, clay, granite and sand. Sustainable farming. Size of the vineyard: 60 acres. Average age of the vines: 20-40 years. Winemaking Hand-picked and placed in slatted crates. Vinification in thermo-regulated stainless steel tanks. Secondary in-bottle fermentation (traditional ‘Champenoise’ method). Maturation on the lees for a minimum of 36 months. Tasting notes Color: Crystal clear with yellow-gold hints. Bouquet: White fruits, lemon balm, and floral notes of acacia. In the mouth: Fine bubbles, elegant on the palate, fresh with a long finish. Food pairing suggestions Ideal as an aperitif and for festive occasions, but also with seafood (fish and shellfish) and with desserts (brioche-based, biscuits, ice cream, sorbets, etc.).
