~ The McGregor Po-lice Department is putting to good use a $100,000 technol-ogy grant they recently were awarded through the Depart-ment of Justice.
Cover chicken with wa-ter and bring to a boil in a large Dutch oven. Add 1 1/2 teaspoons salt, 1/2 teaspoon black pepper and next 3 in-gredients; cover, reduce heat and simmer 1 hour. Remove chicken, reserving broth in Dutch oven; cool chicken. Skim fat from broth; bring broth to a simmer. Skin, bone and coarsely chop chicken. Add chicken, bouillon and re-maining salt and black pepper to broth. Return to simmer.
Combine flour and poul-try seasoning in a bowl. Cut in shortening and bacon drip-pings with a pastry blender until mixture is crumbly. Add milk, stirring until dry ingredients are moistened. Turn dough out onto a lightly floured surface. Roll out to 1/8-inch thickness; cut into 1-inch pieces.
Bring broth mixture to a boil. Drop dumplings, a few at a time, into broth, stirring gently. Reduce heat, cover and simmer, stirring often, for 25 minutes. Serves 8.
A few tips for making this dish perfect every time includes: Boil the chicken the night before and refrigerate the broth. All the fat will col-lect on the surface, making it easier to remove; break short-ening into small pieces, and use solidified bacon drippings. They’ll cut into the flour more evenly; and as soon as you have a moist ball of dough, resist the urge to keep work-ing it. The more you work the dough the tougher the dump-lings will be.

to a boil in a large Dutch oven; reduce heat and simmer mixture 1 1/2 hours or until chicken is done.
Remove chicken, reserv-ing 3 1/2 cups broth in Dutch oven; discard celery tops. Let chicken cool; skin, bone and cut into bite-size pieces. Set aside.
Cook bacon in a large skillet until crisp; remove ba-con, and drain on paper tow-els, reserving 3 tablespoons drippings in skillet. Crumble bacon and set aside.
Saute’ green onions and chopped celery in hot drip-pings in skillet over medium heat 5 minutes or until tender. Gradually whisk in flour until blended. Gradually add re-served broth; cook, whisking constantly, 3 minutes or until thickened and bubbly. Stir in chicken, bacon, eggs and next 5 ingredients.
Spoon mixture into a 3-quart baking dish, and top with refrigerated pie crust. Bake, uncovered, at 450 de-grees for 25 minutes or un-til golden and bubbly. Serve with cranberry sauce. Serves 6 to 8.

Remove chicken from buttermilk, discarding but-termilk. Dredge chicken in flour. Pour oil to a depth of 1 1/2 inches into a deep skil-let or Dutch oven; heat to 360 degrees. Add chicken, a few pieces at a time; cover and cook 6 minutes. Uncover chicken and cook 9 minutes. Turn chicken; cover and cook 6 minutes. Uncover and cook 5 to 9 minutes, turning chick-en the last 3 minutes for even browning, if necessary. Drain on paper towels. Makes 4 to 6 servings.
