Mixer with a dough hook
Pour hot tap water into mixer bowl. Add honey, lemon juice, gluten, flax seed and 4 cups flour. Mix until flour is wet. Add yeastand mix for 15 seconds on low. Add oil and salt. Turn mixer to low and add flour until dough forms a ball and starts to clean thesides of the bowl (it will still look abit sticky). Mix on Medium speed for 6 minutes until dough is smooth and elastic.
Turn dough onto oiled surface. With oiled hands, form dough into 4 or 5 loaves. Put loaves into greased pans and place inCOLD oven for 10-30 minutes to rise until double (depending on air temperature). Leaving bread in oven, turn oven to 350 andbake for 35-40 minutes.
