“...he wanted to go to sea since he was eight.”
Shivering in Portsmouth, United Kingdom, on a dismal winter’s day in 1988 is what helped bring Nick Nash to Princess Cruises.®
Nash, serving with the Royal Fleet Auxiliary at the time, was at the naval base when he saw a sleek, white ocean liner gliding by on her way to the Caribbean. It was P&O’s SS Canberra and Nash immediately wrote to P&O, looking for a job. He was hired as Third Offi cer on Royal Princess® – and has been with the company ever since.
Nash, who was born in Penzance, Cornwall, UK, says he wanted to go to sea since he was eight. At 17, he got his wish, working on various cargo ships with Cunard until 1986, when he joined the auxiliary. In 1989, he joined Royal Princess, becoming Staff Captain in 1997.
In 2002, he was promoted to Captain, taking command of Royal Princess in Cabo San Lucas. To date, he has captained eight Princess® ships.
His favorite part of his job is the feeling of satisfaction he gets “after a successful cruise, it’s the sense of a job well done by a good team eff ort.”
Nash is also active in the professional maritime world. “I have written a few nautical interest papers and have been elected a fellow of the Nautical Institute, Royal Institute of Navigation and the Royal Geographical Society.”
His most memorable Princess® moment he says was the 1996 christening of his daughter, Victoria, aboard Royal Princess, using the ship’s bell as the baptismal font.
Captain Nick Nash
When John Ibbotson graduated from Hotel School in London in 1978, he thought he’d work for a couple of years in the cruise industry to get some experience. Thirty-three years later, he’s still here, having worked for P&O initially and, since 1986, for Princess Cruises.®
Even after more than three decades, the native Brit says he’s visiting areas he’s never been and fi nding that “some places are still able to surprise me.”
His job can still surprise him, as well, with each day bringing new challenges. His goal, however, has always remained the same – “to make sure that passengers continue to have a wonderful onboard experience.”
His funniest moment, he says, occurred in 1987 when there was a reception onboard that included Queen Elizabeth II. “My job was to ensure the elevators were in the right place at the right time.
So you could say I was ‘Elevator Coordinator to the Queen’!”
Among his favorite destinations are Sydney, Australia, seeing the iconic Opera House and Hong Kong, where he says the lights of the harbor at night “are breathtaking.” Sights like these are just one reason Ibbotson’s favorite hobby is photography.
Probably the most unusual thing that has happened to him, he says, occurred when he was working for P&O’s SS Canberra. The ship was used as a troop/hospital ship during Britain’s dispute with Argentina over the Falkland Islands. “That was something you don’t expect to do when working for a cruise line.”

Imagine having to design for a luxury
hotel that changes its location daily,
where the decor must be dramatic
as well as soothing, exciting as well
as elegant, and sophisticated as well
as comfortable.
No problem, says Teresa Anderson,
Vice President of Interior Design for
Princess Cruises.®
Anderson, a native of Peru, is
passionate about her work overseeing
the design elements of Princess®
ships. “A cruise ship is essentially a
fl oating hotel,” she explains, “so its
interiors must meet the needs and
expectations of passengers in any
modern luxury hotel.”
Anderson has extensive design
experience, joining Princess in 1994
after overseeing interior design for
Crown Princess® and Regal Princess®
while at H. Chambers Co, a Baltimore
design and planning firm. Since she
joined Princess, she and a team of 15
– including junior designers, graphic
designers, architects and drafting
personnel – have been responsible
for the design and decor of twenty
ships in the Princess line.
It’s a huge job and one she loves
for its wide-ranging diversity and
challenges. She’s involved in nearly
every aspect of creating a ship’s
environment, from the smallest
aesthetic detail “to visiting the ship
yards where the ships are built.”
Creating the ideal decor “is a
complex balancing act,” she says.
She has to keep in mind not only
sound design principles, but also
“ever-changing technology, the core
values of Princess, and passenger
perceptions and feedback.” One of
the biggest challenges she faces
in designing for a cruise ship is
scale and space. “I have to take into
consideration traffic flow patterns
and even the dimensions of furniture
within each area.”

Atrium Reception
Sapphire Princess,® one of the ships
currently undergoing renovations, will
emerge from a three-week long drydock
on Feb. 4, 2012.
The seven-year-old cruise ship, which
can carry more than 2,670 passengers,
was built in Japan and christened in
2004 in Seattle.
Sapphire Princess passengers sailing
to Alaska, Hawaii, Mexico and along
the California Coast next year will enjoy
a host of new venues made popular
on other ships, as well as upgraded
staterooms that include fl at-screen TVs.
Some of the ship’s new features will
include a spacious Piazza-style Atrium
complete with Vines wine bar and
International Café; the signature Movies
Under the Stars;® the Sanctuary retreat,
a blissful haven just for adults; Alfredo’s
Pizzeria with Italian stone pizza oven;
and a Digital Photo Lounge.

She favors soothing colors to create
a relaxing environment “Iike soft
beige, shades of blue, and gold
intermingled with more energizing
and stronger shades for public
areas.” In staterooms, “I add contrast
through the use of fabrics, artwork
and upholstery.”
Anderson even takes into
consideration the latest technological
advances to help improve the decor.
“The smaller, indirect LED lights have
allowed me to replace large, unwieldy
fi xtures with smaller, energy-saving ones.”
The one development that has
surprised her since she began
working for Princess: The influence
on passengers of television home
makeover shows.
“These have certainly raised the
level of passenger awareness for
both design issues in general and
consequently perception of the
effects and ambience created by the
materials used.”
Passenger compliments please her,
she admits, but she adds that it ’s
all part of the Princess philosophy.
“We are always very conscious of
our passengers’ wishes and the
qualities of our ships that they
appreciate and identify with.”

Sabatini’s, known for its signature pastas and authentic Italian favorites, is introducing an exciting new menu and new dining format fleetwide.
The popular Italian restaurant has changed its dining experience from family-style to a la carte, based on passenger feedback. This will allow passengers the opportunity to enjoy the new menu’s bold and sophisticated flavors, yet still have ample time to participate in the evening’s onboard entertainment and activities.
The changes represent Sabatini’s commitment to keeping its menu fresh and current, particularly for our frequent passengers who have grown to depend on us for exceptional contemporary cuisine.
The new menu features both traditional Italian dishes, as well as non-Italian favorites given an updated, Italian twist. There is a delectable selection of authentic secondi courses, and
some new nibbles to munch on as you decide what to order: Butter-fried focaccia grissini, rosemary fl atbread with prosciutto and marinated olives are now served with every meal.
The new menu items include duck with fava beans, pancetta and mostarda di Cremona; baked striped bass in herbed salt crust; crisp buttermilk soft shell crab over baby arugula with smoked tomato vinaigrette; penne pasta with braised ossobucco meat sauce, and spaghetti with seafood in a creamy tomato sauce.

Spaghetti allo Scoglio
Yield: 6 Servings Ingredients:1 each Green zucchini - medium size1 each Yellow zucchini - medium size1 each Eggplants, partially peeled,4 oz Porcini mushrooms in oil, halved12 each Cherry tomatoes halved12 each Garlic cloves peeled and roasted
Herbed Olive Oil Ingredients:1 cup Extra virgin olive oil1 tsp Thyme1 tsp Marjoram1 tsp Basil1 tsp Mint2 each Garlic cloves2 cups Balsamic vinegar, reduced to 1/10Salt and pepper
Garnish:12 each Chives sprigs6 each Basil leaves
Method of Preparation:
• For the herbed oil, crush the garlic cloves and combine with the chopped herbs and olive oil. Allow to infuse for 24 hours, and then remove the garlic cloves.
• For the vegetables, slice the eggplant, yellow and green zucchini lengthwise and sprinkle the eggplant with a little salt and marinate for one hour.
• Place the Balsamic vinegar in pan and let it simmer until the volume has reduced to one tenth. Cool and set aside.
• Preheat the grill to 375oF and lightly oil, grill the vegetables and tomatoes to a light golden brown (only one charred marking per side, no cross marking as it will in the dish being too dark)
• Lay the grilled vegetables fl at on a tray, brush with the herbed oil and season to taste.
• Set in the refrigerator to marinate overnight.
• Just before serving, mix the balsamic vinegar reduction with the herbed oil and brush the vegetables, mushrooms and tomatoes.
• Garnish with the baguette croutons, parmesan shavings, basil leaves and chives sprigs.
