PASO ROBLES Monterey’s cooler climate adds bright red fruit and light herbal tones as well as acidity. MONTEREY COUNTY Juicy aromas of dark fruit, mocha and spice meet with hints of vanilla. On the palate, black cherry, red raspberry and plum are followed by a long, smooth finish. SENSORY PROFILE Avalon CAB’s ripe fruit and clean acidity make it a versatile food partner. Enjoy a glass on its own or with your favorite foods like grilled burgers, pizza and rotisserie chicken. RECOMMENDED FOOD PAIRINGS VINTAGE California was blessed by a stellar vintage in 2015. Despite drought conditions and a very early harvest, quality is exceptional. A mild winter fostered an early bud break and bloom, however, unseasonably cold spring temperatures followed which resulted in smaller berries and grape clusters. The warm and dry summer days hastened ripening and growers began picking in late July with all grapes in by the end of September – a very compact harvest season! Cabernet Sauvignon shows firm tannins, dense black fruit character and deep color.
