Thip Khao: Keeping it Spicy and Fresh By Michael Higgins, CNCA The goal of “Dining with Your Classic Concierge” is to review and showcase the best DC-Metro area restaurants. Many establishments we visit do not make it to print because they fail to highlight the extraordinary level of first-rate local eateries. For that reason, we have avoided making mention of several area Asian restaurants. Then we discovered Khip Thao, a restaurant which offers diners a Laotian culinary ex-perience at its fresh and well-seasoned best. Situated in the heart of the bustling Columbia Heights area, this comfortable, eatery of-fers the best of Laos’ rich culture, without the cost of a plane ticket. Conveniently located just a few blocks from the Columbia Heights metro station, this incredible Asian bistro is a worthwhile stop after an afternoon of shopping. It’s wonderful for a quiet dinner with friends, or an after work Happy Hour. Quiet and somewhat austere with simple lines and a clean, modern décor, Khip Thao offers comfortable seating and an am-ple bar area. Bar seating is a bit “tiki” in styling with a 2015 edge. Happy Hour is their best kept secret and a terrific way to tease the palette. Their menu is varied, low in price and high in quality. The service in both the bar area and main dining room is worthy of a five star restaurant. The staff makes a point of greeting all patrons warmly and following up at every turn in a relaxed, unobtrusive manner. Soon after taking a seat at the bar, a server presented two signature complimentary dishes; pork crackling with an incredible dipping sauce and a basket of steamed sticky rice — a rousing start! The Happy Hour menu selection is plentiful, and varied with something for every dietary restriction. Most dishes (small plates) are sharable for two. Everything is so tempting you’ll want to try them all and with most in the $5.00 range, we highly recommend that option! Even the most seemingly mundane offerings (tofu, skewered pork, for example) allow the customer to experience bold flavors from a wonderful and innovative angle. The drink menu is very impressive variety of Asian beers and spirits. The secret to Khip Thao’s culinary success is their phenomenal ability to grill, and season virtually any type of dish. Perfect-ly matched dipping sauces, provide a compliment which transitions the experience from wonderful to spectacular. Chicken hearts, are transformed from a chewy nibble to a grilled, skewered, beef like delight. Grilled octopus, magnificently present-ed, with pickled papaya and a spicy fish sauce is succulent, perfectly seasoned and expertly balanced in taste and texture. The honey chicken wings are crisp, with the right amount of sweet, salty, and heat to create a balancing act of Olympic proportions. A must try available in the main dining room is Naem Khao, a salad which is made up of crunchy fried rice balls, lemon grass and coconut. Bits of ham and pungent cilantro is piled on to lettuce leaf; a side dish for some, a main course for many, a delight for all. The variety and quality of the overall menu is matched by few. For lighter fare their starters, salads and soups are ideal, offering customers the option of going vegetarian, or adding various meats, poultry, or seafood to the dishes. The large plate options (plenty to share) are presented with such finesse, it’s hard to avoid ordering them all. Food from Laos can be extremely intense and the staff will accommodate the degree of heat. As a general rule “Medium—Laos Spicy” is the equivalent to “Very Spicy Thai.” Phet E’Lee (Lao Hot) is unlike any degree of spice you’ve every experienced. So do be prepared! We concluded the meal with Bua loy — chunks of rice cake and taro root bathed in warm coconut milk. This slightly sweet dessert is a delight in terms of texture, and creaminess. One part dessert. Two parts pure comfort. All parts—delicious! Do experience Thip Khao. Not only will you pleased, you’ll become a livelong patron!
