Gins

Gin has become a refined spirit with an increasing reputation amongst bartenders and professionals. Gin is made by infusing a grain alcohol with ‘botanicals’ such as juniper, citrus peels and various other flavourings then re-distilling by various means. Vodkas

Vodka is perhaps the most simple of spirits, made for hundred of years throughout Eastern Europe. Vodka may be made from any source of starch, though it is most commonly made from wheat or rye - which is malted then left to ferment. The ferment is then run through a still several times to a higher and higher strength of alcohol, evaporating all impurities until it reaches a sufficient purity. It is then filtered and watered down to around 40% alcohol, ready to be mixed with anything and everything.

Rums

Even though the Caribbean is undoubtedly the spiritual and cultural home of rum, the category has no appellation and can therefore be made anywhere that sugar cane is grown. Molasses- the fermentable by product of sugar production is believed to have been first discovered by slaves who worked the cane fields of the Caribbean soon after Columbus brought the first cuttings of the grass to Hispaniola, present day Haiti in the late 15th Century.

The Whisky CollectionHighlandsThe Highlands is geographically the largest whisky region in Scotland. North Highland whiskies are influenced by the coast, soil and tend to be light bodied with a rich and sweet spice. Central, Southern and Eastern Highlands can be often quite diverse. They are generally light bodied, fruity with a dryer finish but not as sweet as the malts found on Speyside.

Speyside

Speyside malts are typically the sweetest of all single malt whiskies. The huge selection can generally be broken down into two categories. The heavy, rich sherry and the more complex light floral flavoured. Speyside Malts are essentially sweet whiskies, although some can have a little peaty character with just a slight hint of smoke.

Lowland

These tend to be light in body with soft grassy notes, some sweet fruit and a lovely maltiness. They make nice aperitif whiskies which can be an easy introduction to the novice malt drinker, or for those wanting a complex, soft but ethereal malt.

Irish

From just across the water comes a completely different dram all together. The Irish were responsible for one of the liquor industry’s greatest breakthroughs. Continuous istillation. This meant that a spirit could be produced faster in higher volumes and with greater purity than its counter parts to the east. The result is a lighter, malty, smooth and at times honeyed spirit.

Islay

The island of Islay is usually associated with peaty single malt whiskies. These whiskies are considered to be the strongest flavoured of all single malts, known to be dry, smoky and bursting with flavour. The character of Islay malt whiskies are very often described as being very medicinal, costal and with a dry finish - sometimes with quite a bite.

Islands

Island Malts are produced on the islands around the Scottish Mainland. Though most Island whiskies are salted by the sea, some are sweet and herbal. Due to the location of the Islands distilleries their whiskies tend to have a costal feel to them. They are slightly more peaty in character than most Highland Malts, but not to the extent of Islay malts. The peatiness is generally softer and sweeter than their stronger cousins on Islay.

Japan

Japanese whiskies are crafted in the Scottish style. They lie between Lowland and Speyside in style. Delicate and perfumed with honeyed sweetness. They are described as being smooth with light sherry and floral notes, sometimes they have been peated for a smokey Islay style.

Bourbon/Whiskey

Bourbon takes its name from Bourbon County, Kentucky. 51% of the grain used in making the whisky must be corn and must be aged for a minimum of two years in new charred oak barrels and nothing can be added to the bottling except spring water. Rye Whisky is by law made from mash of at least 51% rye. Other ingredients of the mash are usually corn and malted barley.

Blends are made exactly as the name suggests. They are a blend of lighter, grain whiskies and any number of different single malts to form a satisfying and invidual whole that is more easily enjoyed by a wider demographic.
