Environment, culture, food and wine, from Castelfranco Veneto to Treviso. Delightfully clear, fresh river and spring water, graceful Venetian villas and tasty, crisp radicchio. Treviso Red Radicchio, with its early and late varieties, and Castelfranco Veneto Spotted Radicchio: a blend of culture and agriculture. The farmers who produce them realise that growing them in the soil is only the fi rst half of the process, and that the greatest skill lies in blanching them in water: an agricultural art characteristic of the culture and traditions of these rural areas. The radicchio fi elds are also a distinctive feature of the landscape. These “winter fl owers” gradually turn the countryside from green to a wine-red colour, as the red and white plants appear and disappear in the mist. The Treviso Red Radicchio and Castelfranco Spotted Radicchio Route is a journey through the fl avours and the landscape of the area, amid Venetian villas and nature trails. From a product so close to local traditions derives an equally close link with the local culture and food and wine: from simple, traditional recipes to food events featuring both Italian and international dishes. The local radicchio displays, organised by the Pro Loco tourist associations, allow local producers to compare notes and offer visitors the opportunity to enjoy the product in its own geographical and social setting. A small group of farmers has salvaged the “Radicio Verdon da Cortel”, a little green rural variety grown in Roncade that has become an increasingly popular niche product. Another sweet, aromatic product is the green and white Badoere asparagus, another vegetable grown under the particular conditions of a protected environment such as the Sile River Natural Park.The name of Treviso also features in another two important products typical of

the whole province: Casatella Trevigiana DOP (Protected Denomination of Origin) and Prosecco Treviso DOC (Controlled Denomination or Origin). The name of Casatella, a fresh, soft cheese made from milk from Treviso, derives from casada, a reference to the fact it was produced in the domestic environment by women. Prosecco, originally made from grapes grown on the hills of Conegliano and Valdobbiadene, is a DOC wine now produced all over the Treviso plain.

Spotted Radicchio were the fi rst vegetables in Italy to obtain IGP (Protected Geographical Indication) status, in 1996. The fame of Treviso

Radicchio dates back to the second half of the 19th century, and the fi rst exhibition of the variety was held in 1900, beneath the

historic Loggia dei Trecento, frequented by the city of Treviso’s prosperous business community. What makes the late-variety

Red Radicchio so unique is the process of blanching it in spring water to make it less bitter and more

crisp, thus strengthening the product’s cultural link with this “land of water”,

where the special blend of the climate, soil and the characteristics of the water work the miracle of creating a new shoot from a plant already ripe and harvested.Castelfranco Veneto Spotted

Radicchio, on the other hand, is creamy-white, almost golden in colour.

Also known as “the rose”, as a result of its graceful shape, the spotting on the plant

ranges from light violet through to bright purply red. Attractive to look at

and delicious to eat, the taste varies from sweet through to pleasantly bitter, and is guaranteed to satisfy the most demanding of palates.

The striking town walls and towers of Castelfranco Veneto, a fundamental stage on the “Architecture Route” that links up dozens of villas and art treasures in the province of Treviso, are refl ected in the waters of the Muson torrent, and enclose an ancient town well worth exploring on foot, featuring frescoed houses, statues, porticoes, little lanes and squares. In the Neoclassical cathedral, among paintings by famous artists from the Veneto, is the splendid altarpiece by Giorgione. Not far away lies the house the great artist was born in, and the elegant Teatro Accademico theatre. 7 km to the north, in Riese Pio X, is the house where Pope Pius X was born, with a museum dedicated to the saint. This is a stage along one of the spiritual routes in the Treviso area that join together a series of churches, sanctuaries and other sides connected with the memory of Popes Sarto and Luciani. Venetian Caterina Cornaro, queen of Cyprus, who held a salon of humanists there. To the north, the plain is broken up by the green Asolo hills. In Fanzolo di Vedelago is the striking Villa Emo, a jewel of the Renaissance, built in Neoclassical style by the architect Andrea Palladio. It was here that the Venetian patrician family Emo fi rst introduced maize, imported from America, the crop was used to make polenta, which became the main staple of the diet of the local country folk. In Istrana, Villa Lattes, built by Andrea Massari in 1715, boasts an unusual collection of automatons and musical boxes. After Istrana, just before Treviso is Paese, where you can see the oldest of the Venetian villas in the Treviso area: the 15th century Casa Quaglia, frescoed throughout. After Treviso (a veritable jewel with a fascinating history, the capital of

the Marca, known as a “joyful and amorous” area as early as the Middle Ages), in Lanzago di Silea, is Villa Azzoni Avogadro, built in the 16th century, and Villa Bianchini, a former convent that served as the headquarters of the 11th Army Corps during WWI.

Towards the end of the year, the Marca Trevigiana area yields a vegetable that is both decorative and delicious: radicchio. These “winter fl owers”, a joy to both the eye and the palate that turn the fi elds a pleasant shade of red, are divided into two varieties; Treviso Red and Castelfranco Spotted. In addition to the famous “Treviso Red Radicchio and Castelfranco Spotted Radicchio Route”, the two towns offer a series of alternative routes to explore, one of which is dedicated to water. Treviso is famous for its canals and for the crystal clear waters of the Sile and the Cagnan rivers, and is an ideal departure point for exploring the area of the springs, either on foot or by bike. After Canizzano, once known as “the village of the mills” on the Sile, Quinto is home to the Mulino di Cervara Nature Oasis, an island formed by the Sile and the Piovega rivers. This exceptionally beautiful marshy area is the gateway to the Regional Natural Park of the Sile, one of the most important rivers in Europe that spring from pools of water on the plain after running underground for a very long way. The village of Casacorba lies at the heart of the splendid landscape and wildlife area of the Sile springs, which can be explored on foot, on horseback or by bike. Finally, in Cavasagra di Vedelago you can see the elegant Villa Corner della Regina.

From Treviso to Marocco, a village in the municipality of Mogliano Veneto at the gates of the province of Venice, on a voyage of discovery through some of the most beautiful villas where the Venetian noble families came to holiday, lauded in the works of 18th century writers such as Carlo Goldoni and Gasparo Gozzi. In order to reach their villas-farms, the patricians took a gondola from Venice to the mainland and travelled up the Terraglio road on carts drawn by oxen. The mediaeval name Terraglio derives from the terrapieno, or embankment, of a canal between Treviso and Mestre that was never completed. For visitors able to blot out the busy traffi c and the recent buildings and concentrate on the country landscape, the 15 km has many attractions to offer, including around twenty centuries-old dwellings that bear the names of their owners, with gardens surrounded by moats and ancient trees. At the gates of Treviso, in San Trovaso, is the 17th century Villa Albrizzi Franchetti, where the Greek-Venetian countess Isabella Teotochi Albrizzi, known for the passionate love story that bound her to the hot-blooded poet (“Foscolo mio”, she wrote in her letters,

Oh how sweet it would be to see you again…), once welcomed artists and writers such as Pindemonte, Monti and Canova. Before Preganziol, you can see the large Villa Palazzi-Taverna and the charming villa known as “La Colombina”. From Preganziol, a 7 km road on the left leads to Casale sul Sile, a quiet little village where you can admire the Carraresi Tower. Back on the Terraglio, other fi ne villas fl ank the stretch of road between Preganziol and Mogliano. Mogliano Veneto, a little residential town once based on agriculture, boasts a central square built in the 1920s by the name of Piazza dei Caduti. In the surrounding area are the ruins of a Benedictine abbey built in 997, as well as a number of villas and old mills such as the Valerio mill on the River Zero. In Zerman, there is an 18-hole golf club at Villa Condulmèr (formerly Tornielli), an 18th century residence surrounded by parkland that today has been turned into an elegant hotel and restaurant.

Duck with Treviso Red Radicchio served in a fan pattern

Ingredients for 10 people:10 heads of Treviso Red Radicchio,1.2 kg of duck breast, 2 dl of extra-virgin olive oil, 1 dl of balsamic vinegar, sage, rosemary, salt, pepper, 1 dl of white wine.

Heat the oil in a pan along with the herbs. Add the duck breasts and cook for 3 minutes on each side. Bathe with the balsamic vinegar and the wine and remove from the heat.Cut the meat into slices lengthways and place the slices in a fan pattern on a serving dish. Season with salt and pepper. Wash the radicchio carefully. Immerge each head of radicchio into boiling white wine vinegar for a few seconds – this is to ensure the vegetable keeps its attractive bright red colour. Drain the radicchio carefully and leave it to warm in the cooking juices of the duck breast, then arrange the heads in a fan pattern in the opposite direction to the slices of duck. Add the remaining sauce to each plate. The dish should be served warm, to bring out to the full the fl avour of the meat and the aroma of the slightly bitter radicchio.
