How to make 'Rainbow Unicorn' cupcakes 110g unsalted butter or margarine (at room temperature)2 eggs – beat them lightly so your cakes are nice and spongy110g caster sugar1 tsp pure vanilla extract110g self-raising flour1-2 tbsp milk 300g icing sugar2-3 tbsp waterA few drops of food colouring and lots of colourful sprinkles (we used unicorn confetti) Belle and Lily’s top tip: Instead of making icing yourself, you can buy ready-made vanilla frosting like we did!   1. Ask an adult to preheat the oven to 180°C. Put some paper cases in fairy cake tins. This recipe should make 24 small cakes or 12 large ones like ours!2. Mix the butter and caster sugar together in a bowl until creamy. Slowly beat in the eggs a bit at a time and then stir in the vanilla extract.3. Using a large metal spoon, fold in the flour. Add a little bit of milk until your cake mixture is soft and easily drops off the spoon. Half fill each paper case.4. Bake in the oven for 8-10 minutes (if small cakes) or 12-15 minutes (if large), or until the tops are golden-brown. You can test they're done by putting a knife into one of the cakes and checking it comes out clean. Let them cool for 10 minutes on a wire rack.5. If you'd like to make your own icing then sift the icing sugar into a bowl. Stir in some water and mix until it's smooth. Stir in the food colouring to create the colours of the rainbow for your cake toppings. 6. Spread the icing on your cake and add your sprinkles. Allow the icing to harden then ... tuck in and enjoy!

Decorate your cakes in any way you like - the more colourful the better we think! We really hope you have as much fun as we did.
