Turn a classic on it’s head and fall in love with this healthy burger alternative. Ingredients Beetroot patties 400g beetroot, grated 4 spring onions, finely sliced 2 garlic cloves, minced handful fresh mint, chopped 1 lemon, zest + juice 3 Tbsp flour 1 egg 100g feta, crumbled 3 Tbsp olive oil 4 burger buns 3 carrots, grated ½ iceberg lettuce 4 Tbsp mayonnaise 1 avocado, sliced Directions 1.Grate beetroot (wear gloves) and then squeeze out as much excess liquid as you can. 2. Combine drained beetroot with spring onions, garlic, mint, lemon zest, half the lemon juice, 2 tablespoon of flour and egg. Mix well and season. Lastly stir in the feta. 3.Form into patties and coat with remaining 1 tablespoon of flour. 4.Heat a frying pan over medium-high heat with olive oil and fry the patties for 4-5 minutes on each side until crisp and cooked through. Serve burgers in warmed buns smeared with mayo and topped with lettuce, grated carrot and avocado. YIELD: 4 servings TOTAL TIME: 20min LEVEL: easy

Beetroot BurgersBright red and juicy to boot, these family freindly veggie burgers are sure to be a hit. Turn a classic on it’s head and fall in love with this healthy burger alternative.

IngredientsBeetroot patties 400g beetroot, grated4 spring onions, finely sliced2 garlic cloves, mincedhandful fresh mint, chopped1 lemon, zest + juice3 Tbsp flour1 egg100g feta, crumbled3 Tbsp olive oil

4 burger buns 3 carrots, grated ½ iceberg lettuce4 Tbsp mayonnaise1 avocado, sliced
