TROUBLESHOOTING PROBLEMS
Please read the following beforecalling the service center.
1. The stand mixer may becomewarm during use. Under heavyloads with extended mixing timeperiods, you may not be able tocomfortably touch the top of thestand mixer. This is normal.
2. The stand mixer may emit apungent odor, especially whennew. This is common withelectric motors.
3. If the fiat beater hits the bowl,stop the stand mixer. See "Beaterto Bowl Clearance" section.
If your stand mixer shouldmalfunction or fail to operate,
please check the following:
- Is the stand mixer plugged in7
- Turn the stand mixer off for10-15 seconds, then turn it backon. If the mixer still does not start,allow it to cool for 30 minutesbefore turning it back on.
If the problem is not due toone of the above items, seethe KitchenAid _ stand mixerWarranty. Do not return thestand mixer to the retailer - theydo not provide service.

1. Before use, make sure theflat beater, wire whip, or thePowerKnead _'' Spiral DoughHook is properly attachedand the bowl is raised into
mixing position.2. Plug the stand mixer into a
grounded 3-prong outlet.3. Slowly slide the speed control
lever forward to begin mixing.Gradually increase the speed toavoid splashing ingredients.
4. To stop mixing, slide thespeed control lever to theOFF/Oposition.

NOTE: The bowl and beater are
designed to provide thorough mixingwithout frequent scraping. Scrapingthe bowl once or twice during mixingis usually sufficient. Turn off thestand mixer before scraping. Do notscrape the bowl while the standmixer is operating.
Commerdal Style MotorProtection
If the stand mixer becomesoverheated due to heavy use, themotor will automatically shut off toavoid damage. If this occurs:
1. Slide the speed control lever tothe OFF/Oposition. This resetsthe mixer.
2. Allow the mixer to cool forseveral minutes.
3. Resume mixing by sliding thespeed control lever to thedesired speed.

BEATERTO BOWL CLEARANCE
Your stand mixer is adjusted at thefactory so the flat beater just clearsthe bottom of the bowl. If, forany reason, the flat beater hits thebottom of the bowl, or is too faraway from the bowl, you can correctthe clearance easily.NOTE: Adjustments should be madeonly with the flat beater in place.

Converting Your Recipefor the Mixer
The following mixing instructionscan help guide you in convertingyour own favorite recipes andmixing methods for use with yourKitchenAid _'stand mixer.
The "quick mix" method (sometimesreferred to as the "dump" method)is ideal for simple cake recipes. Thismethod calls for combining dryingredients with most or all-liquidingredients in one step.
More elaborate cake recipes shouldbe prepared using the traditionalcake mixing method commonlyreferred to as the "creaming"method. With this method, sugarand shortening, butter, or margarineare thoroughly mixed (creamed)before other ingredients are added.
For all cakes, mixing times may varybecause your KitchenAid®stand mixermixes faster than most other mixers.In general, mixing a cake with aKitchenAid _'stand mixer will takeabout half the time recommended inmost cake recipes.
To help determine the ideal mixingtime, observe the batter or doughand mix only until it has the desiredappearance described in your recipe,such as "smooth and creamy." Toselect the best mixing speed for thejob, use the Speed Control Guide.
Adding Ingredients
Always add ingredients as close tothe side of the bowl as possible, notdirectly into the moving beater. ThePouring Shield* can simplify addingingredients. If the ingredients in thebottom of bowl are not thoroughlymixed, then the beater-to-bowlclearance must be adjusted. See"Beater to Bowl Clearance" section.
Cake Mixes
When preparing packaged cakemixes, use Speed 2 for low speed,Speed 4 for medium speed, andSpeed 6 for high speed. For the bestresults, mix for the time stated onthe package directions.
Adding Nuts, Raisins, orCandied Fruits
Follow individual recipes forguidelines on including theseingredients. In general, solid materialsshould be folded into the mix duringthe last few seconds of mixing onthe STIRSpeed. The batter shouldbe thick enough to keep the fruit ornuts from sinking to the bottom ofthe pan during baking. Sticky fruitsshould be dusted with flour forbetter distribution in the batter.
Liquid Mixtures
Mixtures containing large amountsof liquid ingredients should be mixedat lower speeds to avoid splashing.Increase the speed only after themixture has thickened.

EGG WHITES
Placeroom temperature egg whites in a clean, dry bowl. Attach the bowl andwire whip. To avoid splashing, gradually turn to designated speed and whip tothe desired stage. Seechart below.
WHIPPING CREAMPour cold whipping cream into a chilled bowl. Attach the bowl and wirewhip. To avoid splashing, gradually turn to designated speed and whip todesired stage. See chart below:

The attachmentpower shaft and hub socket are of a square design, to eliminate any possibilityof slipping during the transfer of power to the attachment. 4. Insert the attachment shafthousing into attachment hub.Make sure attachment powershaft fits into square attachmenthub socket. It may be necessaryto rotate attachment back andforth. When the attachment is inproper position, the pin on theattachment will fit into the notchon the hub rim.
5. Tighten the attachment knobby turning it clockwise until theattachment is completely securedto the stand mixer.
Removing Attachments
1. Make sure the speed controllever is set to the OFF/0 position.

3. Loosen the attachment knobby turning it counterclockwise.Rotate the attachment back andforth slightly while pulling it out.

yeast in warm water.1. Placeall dry ingredients including
yeast into bowl, except last 1 to2 cups (235 to 475 mL) flour.
2. Attach bowl and dough hook.Raise mixer bowl. Turn to Speed2 and mix about 15 seconds, oruntil ingredients are combined.
3. Continuing on Speed 2, graduallyadd liquid ingredients to flourmixture and mix 1 to 2 minutes
longer. See Illustration A.NOTE: If liquid ingredients are addedtoo quickly, they will form a poolaround the dough hook and slowdown mixing process.4. Continuing on Speed 2, gently

Both methods work equally wellfor bread preparation. However,the "Rapid Mix" method may be abit faster and easier for new breadbakers. It is slightly more temperaturetolerant because the yeast is mixedwith dry ingredients rather than withwarm liquid.
BREAD MAKING TIPSMaking bread with a mixer is quite different from making bread by hand.Therefore, it will take some practice before you are completely comfortablewith the new process. For your convenience, we offer these tips to help youbecome accustomed to bread making the KitchenAid '_brand way.
• Start out with an easy recipe, like containing the dough can beBasic White Bread until you arefamiliar with using the doughhook.
• ALWAYS use the dough hook tomix and knead yeast doughs.
• Use Speed 2 to mix or knead yeastdoughs. Use of any other speedcreates high potential for standmixer failure.
• Do not use recipes calling for morethan 14 cups (3.4 L)all-purposeflour or 8 cups (1.9 L) whole-wheatflour when making dough with a6 qt (5.7 L)mixer.
• Do not use recipescalling for morethan 12 cups (3 L)all-purpose flouror 6 cups (1.5 L)whole-wheat flourwhen making dough with a 5 qt(4.73 L) mixer.
• Use a candy or other kitchenthermometer to assure that liquidsare at temperature specifiedin the recipe. Liquids at highertemperature can kill yeast, whileliquids at lower temperatures willretard yeast growth.
• Warm all ingredients to roomtemperature to insure proper risingof dough. If yeast is to be dissolvedin bowl, always warm bowl first byrinsing with warm water to avoidcooling of liquids.
• Allow bread to rise in a warm
place, 80% to 85% (26°C to 29°C),free from draft, unless otherwisespecified in recipe.
• Here are some alternative risingmethods to use: (1) The bowl
placed on a wire rack over a panof hot water. (2) The bowl canbe placed on the top rack of anunheated oven; put a pan of hotwater on the rack below. (3) Turnthe oven to 400°F (200°C) for1 minute; then turn it off; placethe bowl on the center rack of theoven and close the door.
Cover bowl with waxed paper, ifdesired. Always cover with towel toretain warmth in the bowl and to
keep drafts away from the dough.
Recipe rising times may vary dueto temperature and humidity inyour kitchen. Dough has doubledin bulk when indentation remainsafter tips of fingers are pressedlightly and quickly into dough.
Most bread recipes give a rangefor the amount of flour to be used.Enough flour has been addedwhen the dough starts to cleansides of bowl. If dough is sticky orhumidity is high, slowly add moreflour, about _/2cup (120 mL)at a time but do not exceedrecommended flour capacity.Knead after each addition until
flour is completely worked intodough. If too much flour is added,a dry loaf will result.
When done, yeast breads and rollsshould be deep golden brown incolor. Other tests for doneness of
breads are: Bread pulls away fromthe sides of pan, and tappingon the top of the loaf producesa hollow sound. Turn loaves androlls onto racks immediately afterbaking to avoid sogginess.
SHAPING A LOAF
Divide dough in half. On lightlyfloured surface, roll each halfinto a rectangle, approximately9x 14"(22.5 x35 cm). A rolling pinwill smooth dough and remove gasbubbles.
Starting at a short end, roll doughtightly. Pinch dough to seal seam.
