The beauty of Western Australia’s Great Southern wine region is matched by the

There’s something about the cooler weather that heralds the arrival of prime red wine

drinking - and Australian red wines are up there with the world’s finest. With our diverse wine regions, the style of reds on offer is extensive - from lighter, elegant red wines with primary fruit characters and soft tannins – to fuller, darker-coloured reds with intense, leathery tannins. The majority of red wines undergo ageing in oak barrels and the type of oak used can have a significant impact on the style, texture and taste of the finished wine. American oak tends to impart vanilla and coconut characters while French oak is characterised by more spicy notes such as clove or cinnamon. As a general rule-of-thumb, warmer wine regions produce rich, full-flavoured styles, often associated with Aussie reds. Lighter, delicate styles of red tend to come from more cool-climate regions. Cabernet sauvignon from Coonawarra and our own Margaret River are world-renowned – while merlot exhibits soft,

plum-like characters. Merlot from cooler regions such as Margaret River and Yarra Valley, take on more savoury characters. Shiraz, one of the first wine styles to arrive in Australia, is possibly our most diverse red wine – from elegant and pepper styles from cool climates such as Heathcote in Victoria – to the spicy styles of Coonawarra and Margaret River and again to the full-bodied, ripe-fruit wines from the Barossa. Fans of the delicate grape variety pinot noir will find the best Australian samples coming from the cool climate regions of Great Southern, Yarra Valley, Tasmania, Adelaide Hills and the Mornington Peninsula. Lovers of Italian reds, often touted as being extremely food-friendly wines, can look to the Australian examples of sangiovese and barbera for inspiration. Kingston Estate2008 Shiraz88/100Liquor Barons Wine PanelKingston is based in the Riverland and sources fruit widely across South Eastern Australia. This wine is a blend of cool area fruit from Mt Lofty and the Limestone Coast thus mitigating the hot weather 2008. The result is a well balanced medium bodied wine with attractive plum cake fruit, there is a little spice and some well integrated oak. Good value.

St Hallet2008 Gamekeeps Shiraz90/100Liquor Barons Wine PanelMild weather preceded a searing heat wave of 13 consecutive days above 35c which hit South Australia in March 2008. Luckily the fruit for this wine was picked fully ripe in the mild weather before the heat. The wine remains rich and ripe with very juicy fruit characters, oak influence is subtle and the finish is long and soft.

Wynn’s Coonawarra2007 Cabernet Shiraz Merlot90/100James Halliday’s 2010 Australian Wine CompanionCoonawarra is the home of some of Australia’s best red wines, (apart from the many made in WA!). The region’s distinctive flavours are beautifully expressed in this blend. Classic blackcurrant and plum fruit characters and supplemented by a touch of mint and subtle oak. Excellent current drinking.

Jim Barry2007 Cover Drive92/100Liquor Barons Wine PanelA blend of Clare Valley and Coonawarra fruit, of which the Coonawarra percentage comes from a vineyard planted on the old Penola cricket ground. A solid Cabernet with extra complexity of the fruit from the two regions. Clare gives the wine a rich density of chocolate fruit flavours, and Coonawarra adds tannins and a leafy touch to the finish.

Oyster Bay2008 Pinot Noir91/100Wine Spectator Yes Oyster Bay does produce wines other than their very successful Sauvignon Blanc. This Pinot has recently received excellent reviews in the US, including a Gold medal at the San Francisco International Wine Competition. The wine is an attractive balance of perfumed red currant and cherry fruit characters, with a little spice for complexity. Tannins are restrained and overall the wine has a soft velvety texture.

Leasingham2007 Bin 61 Shiraz88/100Liquor Barons Wine PanelA label with many vintages of history behind it and despite this historic Clare valley winery being sold the label remains and graces a powerful expression of Clare Valley Shiraz. The fully ripe Shiraz fruit has delivered a rich plum and mulberry flavoured wine. There is a touch of regional earthy chocolate flavours and fine tannins lead to the long and smooth finish. This will age well in the short to medium term.

Australian chardonnay, the most widely planted white

grape varietal in the country, is still a favourite among white wine drinkers. Chardonnay has its origins in France, being the principal white wine of the Burgundy region. Australian chardonnay of the 1970s and 1980s was typically made with an abundance of oak, giving the wine a rich, buttery character, quite popular in its day. Contemporary Australian chardonnay wine styles tend to be more restrained and display finesse, and some styles today are made ‘unoaked’. Of the white wines, winemakers tend to like creating chardonnay as there is more scope to adopt different winemaking techniques. Chardonnay is characterised by ripe, melon and peach fruit flavours with a hint of vanilla oak. Tropical fruit flavours can be found in the chardonnay from warmer regions, such as Murray Darling and Riverland, while

subtle citrus characters will be displayed in chardonnay from Tasmania, Adelaide Hills and Mornington Peninsula. Some of the country’s most elegant chardonnay comes from our own Margaret River, with its intense fruit flavours and acid structure, combined with barrel fermentation, creating wines of depth. Indeed, Margaret River enjoys an international reputation as producers of some of the country’s finest chardonnay. Possibly Australia’s most versatile white grape variety, the medium to full bodied wine is one of the most food-friendly white wines, pairing well with poultry, game, pork and creamy fish and pasta. Think fresh, cool climate chardonnay with oysters, prawns and scallops while barrel-fermented and warmer climate chardonnay goes with richer, white meat dishes, with the wine’s acidity cutting through any fat in the meal.

In Western Australia ‘legendary winemaker’ means Jack Mann who worked 51 vintages at Houghton

from 1922 until his retirement in 1972. His impact, especially on the state’s largest producer and the Swan Valley was profound. His family’s influence on the West’s food and wine history has been similarly far-reaching and significant.

Jack’s older son, Dorham, was a key figure in the early development of the Great Southern through his work as a viticulturist for the Department of Agriculture. He was long-term winemaker at Sandalford (including during the early days of Margaret River) and now, with his daughter, Anthea, has a small family vineyard, winery and cellar door in the Swan Valley specialising in sparkling cabernet sauvignon, a family tradition of

long standing. Jack Mann’s other son, Tony, has a vineyard in the Swan: and his son, Rob, is making superb wines in his role as chief winemaker at Cape Mentelle. Jack’s daughter, Corin Lamont started her family winery in 1978 and made wine in partnership with her father until his death in 1989.

Corin’s daughters, Kate and Fiona, opened the winery restaurant – Lamont’s in the Swan Valley in 1989 and, in different guises, it has served the winery (and the Swan Valley) well ever since. The winery was expanded and modernised by Fiona’s then husband, Mark Warren, during the 1990s and it came to be regarded as one of the Swan Valley’s finest. For the first time, Lamont’s looked outside the Swan Valley to source fruit.

The legacy of Jack Mann lives on and Houghton were happy to allocate his family some prized riesling fruit from their mature Justin’s vineyard at Frankland River. Lamont’s Frankland River Riesling is an intense minerally style with weight, power and finesse.

The driving force behind the expansion of Lamont since this time has been Kate Lamont, whose energy, drive, appetite for hard work, attention to detail, and business acumen, has taken the business to a new level.

Although she trained as a winemaker Kate made her mark, at least initially, as a cook and manager. Her books about food – Family, Food and Friends, A Year in the Kitchen, and Celebrating - have extended her influence and helped promote her ideas about fresh

produce and cooking. In recent times, especially, she has promoted Lamont’s wines through countless informal talks in restaurants and wine cellars about the interplay between wine and food. Her beautifully photographed latest book, Kate Lamont: Wine & Food documents her views on this topic in a lively, relaxed manner.

Lamont’s in East Perth opened in 2000 with a stylishly comfortable fit-out, excellent acoustics and relaxed views over the tranquil Claisebrook Inlet targeting a more up-market crowd, albeit with no compromise on the food. Lamont Margaret River came the following year, resting lakeside next to the classy Gunyulgup Galleries. Over time, the way the restaurant operates has changed to fit in with local demands – but not the style of food.

Digby Leddin, who worked with Mark Warren, took over as winemaker when the latter moved on. He has maintained quality and expanded the portfolio, in particular, taking advantage of the Lamont presence in Margaret River. From the region, there is the 2009 Lamont’s Semillon Sauvignon Blanc (clean and fresh with pristine ripe tropical flavours); and the 2007 Cabernet Sauvignon (stylish, impeccably structured, blackcurranty and silky smooth). There’s also a delightful 2008 Lamont’s Black Monster made from malbec sourced from Donnybrook (bold, robust and alcoholic yet bewilderingly approachable, even delicious).

The Swan Valley is still the Lamont’s heartland and that’s reflected in the wine portfolio. There’s a bright 2008 sparkling that is part of Jack Mann’s heritage; a verdelho which runs out far too quickly (aromatic, tangy guava and passionfruit flavours); the quartet blend of chenin blanc, verdelho, semillon and chardonnay (2009 is fresh, fruity, vibrant and uncomplicated); one of the Swan’s best shiraz (2007 is succulent, with ripe, vanilla bean, licorice, plum flavours, velvety texture and pleasing approachability).

Jack Mann’s widow, Angela, lives on in their house at the entrance to the Houghton winery in the Swan Valley. On those occasions that she reminisces, there is no doubt a quiet smile when she reflects on her family’s achievements.

Whiskeys from the United States represent some of the world’s most popular brands.

Their range of whiskey includes bourbon whiskey (at least 51 per cent corn/maize) with Jim Beam and Wild Turkey as the leading examples, with Woodford Reserve and Maker’s Mark offering a premium style. There is also rye whiskey (at least 51 per cent rye), wheat whiskey (51 per cent wheat); rye malt whiskey (51 per cent malted rye) and corn whiskey (80 per cent corn/maize). All of these whiskies must be no more than 80 per cent alcohol by volume. And then of course, there is Tennessee whiskey

(Jack Daniel’s being the leader in this category). Where Tennessee whiskey differs to bourbon whiskey is that it is filtered through sugar maple charcoal, producing a cleaner spirit. Since 1941, the US government has recognised Tennessee whiskey as its own distinct style. Canadian Club whisky, often referred to as ‘CC’ was originally formed in 1858 by Hiram Walker in Detroit, Michigan. However, the distillery was relocated to Ontario, the southernmost city of Canada, when it became evident to Walker that prohibition was gaining momentum in the US, from the 1850s onward.
