Cooks Bananas Foster On the Grill

Bananas Foster
• Although Chef Chris Brown cooks Bananas Foster on his grill in Tulsa, Oklahoma, the recipe was created in New Orleans. And it’s popular in Key West.
• So . . . Once again, we do our best to party like we’re on the Gulf Coast!

Ingredients
½ cup butter
4 Bananas, cut into aprox. ½ inch chunks
1 tsp. cinnamon
¾ cup brown sugar
½ cup light Rum
½ cup cream
½ gallon vanilla Ice Cream

It all starts with butter . . .
½ Cup Butter

Melt it in a saucepan on Medium heat.

Add four bananas to the melted butter . . .

Next, add 1 tsp. cinnamon

½ cup brown sugar is added to the bananas next.

Continue to simmer until they just start to brown a little

Now comes the fun part! Fire.
Pour ½ cup light run into the banana mix.

Carefully tilt the pan so just a little of the butter/rum liquid spills into the fire—just enough to coax the fire into the pan with the bananas.

Continue to flame the bananas, burning off the alcohol, but retaining the flavor. You may wish to add a little more run if your fire dies out too quickly.

Last, but not least, add ½ cup cream to your buttery, rummy bananas and cook just long enough to heat it back up.

Spoon the hot banana mixture over vanilla ice cream. Serve immediately to your totally awed guests.

Key West Version
Even through Bananas Foster was invented in New Orleans, Key West has its own version.
The famous Blue Heaven Restaurant has it’s own recipe. It serves one of the best breakfasts on the island and has a chicken graveyard on the premises, Jimmy Buffet has been known to show up unannounced and play from the WaterTower Stage.
They’ve changed the recipe a little. They use spiced rum and serve it over a slide of banana bread, topped with homemade vanilla bean ice cream. Yum!

BLUE HEAVEN RECIPE• 1 TB butter, • 1/4 cup brown sugar • 2 pinches cinnamon
Place ingredients above in a sauté pan and heat on high.When the butter is partially melted, add the following ingredients:
• 1 whole banana - split lengthwise then cross wise (4 pieces) • 1 1/2 TB orange juice
Heat until butter and sugar are melted and sauce is bubbling -
Slowly add 1/2 to 3/4 ounce of Spiced Rum, then carefully tilt pan so the rum ignites
Pour over a slice of banana bread and top with a large scoop of vanilla ice cream.
