Bacon and Spinach Omelette Time: 5-10 Minutes INGREDIENTS 2 Eggs or Egg Substitute 2 Pieces of bacon 1 Cup of Fresh Spinach Salt and Pepper to taste DIRECTIONS 1. Cut bacon into 1cm squares, and brown 2. Place on paper towel to drain oil if too oily for taste 3. Add spinach to non stick pan and sauté using heated butter/oil 4. Whisk eggs together and then whisk sautéed spinach into the mix 5. Pour into the non stick pan and add bacon 6. When bottom of eggs are firm (check by turning a corner) flip on half on top of other for classic omelette. 7. Cook to taste 8. Serve with salt, pepper Notes *Use frozen spinach if no fresh available. Squeeze all moisture out before cooking * Piazza bacon bits from the deli can be used but will be higher in fat content * Use rind-less bacon for lower fat option *More than one cup of spinach is fine as it cooks down to a much smaller amount * Onion, garlic, bell peppers can all be added for extra flavour

  • Bacon and Spinach Omelette

    Time: 5-10 Minutes

    INGREDIENTS

    2 Eggs or Egg Substitute

    2 Pieces of bacon

    1 Cup of Fresh Spinach

    Salt and Pepper to taste

    DIRECTIONS

    1. Cut bacon into 1cm squares, and brown
