A CONNECTION WITHTHE HISTORY AND TERRITORY The brand logo is inspired by the ancient Roman coin found in the nearbyarchaeological site of Claterna.This ancient city thrived throughout the hay-day of the Roman empire’s splendour. During the first century BC, Claterna was an economic and productive centre for the surrounding area, densely populated and driving the region’s expansion.
The iconic coin has two famous facesrepresented: Ottaviano on the front, and Caesar on the reverse.

Archeologic excavations of the historic Claterna site uncovered a beautiful mosaic of black and white geometric designs. These black and white bi-chromatic mosaics first appeared
during the Adrian era (the first half of the 2nd Century AD) and were used for both decorative and functional purposes. They were frequently found in less luxurious homes,
combining simplicity and economy in myriad design variations.
Monocultivar from Ghiacciola variety This oil is made from a single olive
varietal typical of Romagna. It possesses an herbaceous nose, with a
palate that begins sweet and finishes with a strongly spicy and persistent flavour.
The tasting experience ends withpleasantly balanced aromas.

Varignana welcomes the return of the ancient olive groves, utilizing the traditional cultivation methods that have made the olive tree an emblematic cultural symbol of this territory.
Reserve BlendThis olive oil is made with typical olive
varietals from Emilia Romagna: Ghiacciola, Nostrana, Pendolino and Correggiolo.
At the bottling moment, the oil is primarily yellow in colour with intense green tones. On the nose, it has a roundly fruity andpersistent scent complemented by fine
vegetal aromas. The taste is fresh and evokes flavours of aromatic herbs, green apple and almonds; it expresses a well balanced mix

exclusively contain fruit, with theaddition of only a small percentage
of organic (biologico) sugar extracted from grapes. These healthy products
are produced through artisanalprocesses that pay extreme attentionto quality control, from raw material

The result of this collaboration is asuperlative selection of artisanal honeys
with exclusive characteristics. The wide variety of unique tastes represents the strong gastronomic wealth of the region. A long
and renowned tradition of local beekeeping in the region surrounding Palazzo di Varignana, is
continued today in the manufacturing of these craft products. Given the unrivalled tradition of local beekeeping it is perhaps unsurprising that
the National Honey Observatory is established in this territory. This organization supports the
honey industry on the local and national level,and organizes public and private
institutions to encourage and promote honey craftsmanship. These efforts have led to thecreation of prominent industry guides and
competitions of great renown that continue toencourage honey production of the highest quality.

The hexagonal tiles were made from clay, and were most likely part of the flooring, in the rooms of Roman domus and villae. In northern Italy there are numerous brick floors of this type:in Bologna, Modena, Imola, Galeata, Ravenna, Faenza,Reggio Emilia, the findings of ancient floors are frequent.

Rosemary honeyThe production of rosemary honey can only occur in very exceptional circumstances in Italy as the bees are not yet strong enough when the rosemary bloom occurs in March. Thus today, it is a rarity. This product represents a unique exemplar of the ancient tradition of Italian rosemary honey production that dates back to Roman times, when the product was produced in large quantities to sweeten wine. With its fantasticcombination of flavour and heritage,this is truly an example of Italiangastronomic heritage of the finest quality.

The wine selection of Palazzo di Varignana is a selection of local
wines inspired by the history of a land of gently rolling hills, in the
eastern outskirts of Bologna. In this area, on the border between Emilia
and Romagna, wine production is an ancient tradition. Within this region
there exists the Enoteca Regionale Emilia Romagna, an association that
has been in place since 1970 topromote and improve the regional wine production, located inside a
Sforza Castle of Dozza, a small, hilly and romantic medieval village.

Made from white Istrian stone tiles, black tiles from Pisoia and stone walls of various colors, Claterna’s polychromatic mosaic is a uniquely refined expression of the ancient design typology. The mosaics are a striking testimony to the splendour achieved in the
city during the Augustan era. Five small multi-coloured birds (Cutrettola motacilla flava), are visible above and below the volutes.
Pignoletto vines have been present in the Bologna area for a very long time. In the I Century A.D. Pliny the Old mentions a wine called “Pinum Laetum”, although the first documents that specifically highlight it date back to the mid XVI century.This spumante is produced through a very particular vinification method that im-bues the wine with unique scents and aromas.

This red wine is produced from a blend of Sangiovese and Merlot grape variet-als. The soft elegance of Merlot provides the perfect complement to the strength of the mature Sangiovese. Aging in oak barrels for a minimum of 12 months creates wonderful balance in this San-giovese-Merlot. It is characterized by an enveloping palate and persistent finish.

Traditional de-stemming and pressing techniques are utilized under precise conditions.Primary fermentation begins using selected yeasts over about 10 days in carefully controlled temperatures.Aging occurs after a soft pressingof the must and the completion ofthe fermentation process. Aged in oak barrels for 24 months.Bottle aged for an additional 5 months. This traditional and authentic Sangiovese Superiore Riserva, is redolent of ripe fruits with vigor, combining a fresh palate with robust, yet refined, tannins.
