WHAT A GREAT HOLIDAY EASTER IS. I do hope everyone had some time to relax over the weekend. The weather was pretty reasonable so getting out and about seemed the thing to do.Lots of chocolate and weight gain came out of the weekend, I’m trying to motivate myself to get back on the horse and exercise, thing is I just really like eating and being lazy lol.Great to see the local craft shows & markets on this weekend, there should be some great things on show and good deals on offer.Holidays are in full swing but if you want something to do check out some of the activities available to keep you or your children entertained.Have an enjoyable short week for those who are lucky and enjoy the weekend and lovely sunshine.See you all “Around Town”

Rock n Roll fever has well and truly hit Invercargill over the Easter weekend with the National Junior Championship rocking the Velodrome. Over a hundred entrants from all over New Zealand came and dazzled the spectators with their routines. Yes, even in the year 2012, Rock ‘N’ Roll is a prominent part of many Invercargill residents. You’d be thinking Chuck Berry, Little Richard, Buddy Holly and off course, the King Elvis Presley – just for the ‘older’ generation right? Not quite so. I recently met and, I must admit, was immediately

awestruck by a bunch of youngsters who were twirling and rock ‘n’ rolling like you see in the old movies.

The whole concept of Rock n Roll dancing has always held me in complete awe, I was born with two left feet, can’t dance to safe myself so when I walked into the Invercargill based Rock n Roll club a few weeks ago to meet some of the young dancers practicing for the Nationals I was to say the least – blown away. I stood in the middle of the room with camera ready just watching with mouth open (completely forgetting to take photos). These ‘couples’ were amazing to watch go through their steps – and I don’t just mean ‘couples’ in the traditional sense either, as dancers can be part of ‘triplets’ (two females with one male). Invercargill’s Quinn Robins (11), Kaitlyn Calvert-Shandley (11) and Hannah Fitzgerald (11) were such a ‘triplet’ whom I watched and they subsequently won the Junior Triplets over the weekend.

In addition to the Triplets, the Nationals also had dancers compete in traditional couple’s rock ‘n’ roll; there was a ‘mini theatre’ club showcase, top team and a cheerleading section. To read our awestruck moment a few weeks ago check out:http://iluvinvers.co.nz/rock-n-roll-is-here-to-stay/

INGREDIENTS4 medium sized red onions finely sliced¼ cup raw sugar¼ cup red wine vinegar4 tbsp whole grain mustard½ cup beef stockMETHOD1. In a large frying pan place the sliced onions, raw

sugar and beef stock. Simmer over a moderate heat for 30-40 minutes or until the liquid has evaporated and the onions are caramelized to a golden brown. Now stir in the vinegar and the mustard and continue cooking for another 3-4 minutes.

To blanch the beans- Place a pan of water on

the stove and bring to the boil. Salt and place the cut up asparagus spears into the boiling

water. Allow to remain in the water for 2 minutes and remove. Now immediately refresh in a bowl of ice water. Once cool allow to drain.

2. To roast the tomatoes – remove the core and slice the tomato in half, place in a baking dish and sprinkle with the chopped basil leaves sea salt and freshly ground black pepper. Drizzle with a little olive oil and place in an oven at 180° for 15 minutes. Remove and allow to cool.

3. For the prawns – bring a suitable sized pot of water to the boil. Add a teaspoon of mustard powder and season with sea salt and freshly ground black pepper. Place the prawns into the water and leave for 30 seconds. Remove and refresh immediately in iced water. Once cool drain and pat dry with paper towels.

Place in a pre-heated oven at 180° cooking until the pastry is golden brown. Remove the paper and weights and return to the oven for 2 more minutes. Remove and allow to cool.

To assemble the tart place 1 tbsp onion marmalade on the base of the cooked flan case. Now arrange the cooked prawns, basil leaves, roasted tomatoes, blanched asparagus on top of the onion. Place on the BBQ flat plate and cover for 4 minutes. Now top with the mesculin greens. Drizzle with a little avocado oil and it’s already to serve.
