FABIO KRAICZYK
Fabio has been working as a Head Chef for over20 years; presenting his personal chef skills in both
private group dinning and large barbecue group events. Now he is in Asia showing how to prepare a
Gourmet Barbecue Experience.
Fabio has always worked in the meat business, starting as a butcher until he opened his own
company in 2000. His passion has always been cooking and mainly with barbecues. He began to
work as a Personal Barbecue Chef in Brazil in 1993. He started in this area just for fun, but before long his
clients were mostly artists and celebrities.
In late 2008, Fabio decided to work full time in what he really loves, and he came to Singapore to share his
rich experience and love of cooking.

Constant Cooking Temperature

The oven door remains cool, not exceeding 60°C during cycle. The oven door cannot be opened while pyrolytic cleaning is in progress. It will remain locked until the temperature has returned to an acceptable level.
C ATA LY T I C C L E A N I N GThe catalytic panels on the oven walls will capture the fats and grease during this oxidation cleaning process where the oven is heated to 200°C. Use a damp sponge to remove food residues on the panels after oven has cooled down.
D I A M O N D C L E A NAn exclusive technology that uses steam to soften the dirt and allows cleaning of the oven without requiring detergents. At the end of the cycle, stains are softened and can be removed easily with a damp cloth.

FAST PREHEATING

For steaks, kebabs and sausages, cooking vegetables au gratin. When grilling meat, position the drip tray at the bottom to collect the juices and add 500ml of water.Eg.Fish fillets, sausages, toasted bread, skewers.

Aids sweet/savoury dough to rise effectively. To maintain the quality of proving, do not activate the function if the oven is still hot following a cooking cycle.
RISING
The function cooks all kinds of dishes quickly and gently. It can also be used to reheat food that has already been cooked or stored in the refrigerator.
CONVENIENCE
For cooking large joints of meat >2.5kg. Turn the meat over during cooking to ensure that both sides brown evenly. Also, bast the joint every so often to prevent it from drying out excessively.
MAXI COOKING
This function selects the optimum temperature and mode for 5 types of frozen convenience food; lasagne, pizza, strudel, french fries and bread. Select “Custom” to set the temperature for other food.
FROZEN FOOD
For cooking meat/fish gently, keeping them tender and succulent. Sear meat on a pan first to seal in the natural juices. Cooking times range from 2-5hrs for fish, and from 4-7hrs for meat.
SLOW COOKING
For cooking stuffed joints and fillets meats on a single shelf. Gentle, intermittent air circulation prevents food from drying out. To reduce energy consumption, lights will be switched off and oven door should not be opened till completion.Eg.Stuffed roasting joints, meat cuts

A single appliance combines traditional cooking with steam which guarantees even cooking with perfect crispiness on the outside while maintaining its moisture on the inside.

Boil the Lasagna Sheets. Throw into a bowl of cold water. Drain and leave aside.
MINCED BEEF SAUCE: In a frying pan, heat up the Olive oil. Fry the Onion and Garlic until golden and mix the Minced Beef and Salt. When Beef is cooked, mix the Tomato Sauce and cook for 3mins before leaving to rest.
CREAM SAUCE: In a pot with medium fire, melt the Butter, mix the Flour and cook for 1min before adding the Milk and mix until thickens. To finalize, mix the Cooking Cream and cook for another minute before removing from fire. Rest sauce.
Cover the bottom of a glass tray with the Minced Beef sauce; cover the sauce with the Lasagna Sheet, one layer with Mozzarella, one layer with Ham and one layer with Cream Sauce. Repeat the layers until ingredients finish. Finish with Parmesan Cheese and bake in oven with convection at 220° C for 20 mins.

Crush the Digestives in the blender until it becomes a flour like texture. Melt the Butter and mix with the crushed Digestives. Fill the mix into a baking pan (with removable bottom). Flatten to smooth with a spoon or hands and bake in preheated oven with convection at 180° C for 15mins.
CREAM CHEESE : Boil or microwave the Bananas with skin to soften. In a food processor or blender, mix the Cream Cheese, Banana (without Skin), Honey and Eggs until homogeneous. Put the cream inside the baking pan and back to the oven at 180° C for 25mins.
SALTED CARAMEL TOPPING: In a frying pan with medium fire, melt the Sugar until caramelized. Once Sugar turns a caramel colour, lower the fire and mix the Butter until it melts. Add in Whipped cream and mix well. Pour over cake.
