When choosing a vintage wine, or one with a very unique aroma and flavour, then many of the more appreciating diners would prefer the opportunity to decant their wine selec-tion ahead of the meal, whether that be 15-20 minutes before consumption, or at least as the food is ordered. You’ve heard many an expert relay the merits of allowing the wine to breath, and of course for red wines, to reach room temperature of 12-18 degrees.
A decanter’s size and shape is important, since every wine expresses itself differently depending on the volume and form of the decanter. For certain white wines it is good to
remember the stopper prevents the evapora-tion of volatile aromas, and prevents the ero-sion of subtle and delicate flavours of older vintages.
It is also useful to pick a decanter that is easy for you to handle. The ergonomic shape and the recessed dome under the base of decanters like ‘Explore’ and ‘Open Up’ allow them to be gripped and tilted with the arm stretched out with ease. A steady pour can be achieved and the special treatment at the rim (Drop Control) prevents the last drop of wine being deposited on the table cloth.

Drop Control is used on the neck of ca-rafes to prevent drips and it makes wine service more accurate. Drop Control is totally unnoticeable and doesn’t change the quality of wines at all.

Gastro Vision delivered a vibrant and exciting backdrop for hotels to view the latest food and drink concepts, alongside new product innovation from the leading hotel and catering suppliers, including Arcoroc and Chef&Sommelier.
Chef&Sommelier and Arcoroc® spon-sored the Stage of Taste and hotels were able to see and taste imaginative cocktails prepared in the latest innova-tive glassware, including the fully tem-pered Disco Lounge from Arcoroc, and the stylish and elegant Vintage Cocktail from Chef&Sommelier.
Stage of Taste Presenters took the new Vintage Cocktail glass from Chef&Sommelie with new creamy rum based cocktails to the audience for their seal of approval. Hotel F&B Managers did the all important tasting and agreed it tasted great, but looked even better, and would look at home in the most sty-lish up-market bar!
Chef&Sommelier spon-sored the ‘Beef Lounge’ and provided the stunning new black Olea plates for Chef Michael Riedl to utilise for his vibrant pre-sentation. Gastro Vision
attendees were amazed with look and the taste. It certainly reminds eve-ryone that: ‘The first taste is with your eyes!’
