Black Angus Reserves

Penfolds has been producing an impressive array of wines since 1844 and indisputably led the development of Australian fine wine into the mod-ern era. The introduction of Penfolds Grange in 1951 forever changed the landscape of Australian fine wine. Since then a series of standout wines, both white and red, have been released under the Penfolds masthead. Sauvignon Blanc is a high quality white grape whose spiritual home is France, and more specifically the Loire Valley, where it produces crisp, acidic wines with green and citrus fruit flavours, and a hallmark streak of minerality in the best examples. In more recent years, the variety has been adopted by New Zealand as their signature white variety, showing concentrated gooseberry, citrus and stone fruit flavours. New Zealand Sauvignon, especially that from the Marlborough region, has become an 'instant classic' and is a must on all good wine lists and home cellars. The variety has also come to prominence in Chile and South Africa and is also a key ingredient in many of the great sweet wines of the world.

Chardonnay is arguably the best known and most versatile white grape variety in the wine world. Its traditional homeland is that of Burgundy, where it is responsible for such names as Chablis, Meursault and Puligny-Montrachet to name but a few, but it has also found success in almost every wine-producing region the world over - partly due to its versatility, used as it is as a varietal wine, in blends and as a key ingredient of many sparkling wines. The vine itself produces relatively high-yields and is very hardy. Wines made from chardonnay tend to have high acidity and ripe apple and citrus flavours and offer value at every price point. It lends itself well to oak treatment, and the best examples of high-quality Chardonnay can age and develop over many years.

Pinot Grigio (known in French as Pinot Gris) is an immensely popular white grape variety commonly grown in Italy (Veneto, Lombardy, Alto-Adige and Emilia-Romagna) and in France's Alsace region. High quality examples of this variety display depth of colour (it is a mutation of the Pinot Noir grape and can easily be mistaken as such in the vineyard) and gently perfumed characteristics, while at the lower end of the scale it has been a phenomenal success in producing dry, refreshing and easy-drinking, approachable wines.

This is one of the noblest, and currently, most en vogue red wine grapes whose traditional home is the northern half of France's Rhone Valley. Here, it is used to produce fine, long lived red wines such as Hermitage, Crozes-Hermitage, Cote-Rotie and Hermitage. Shiraz has also enjoyed great success in the New World, most famously in Australia which has made the variety its own - boasting several famous examples perhaps the most notable of which is the iconic Penfold's Grange. It has flourished elsewhere in the wine-producing world too, including South America, Cali-fornia and South Africa. Some estimates place Shiraz as the world's fifth most-planted red grape variety.

Cabernet Sauvignon is a black grape variety which produces red wines of high quality in many wine-producing regions world-wide. Its hallmark characteristics are black fruit flavours, particularly blackcurrant, and often a menthol or eucalyptus secondary note. It is a hardy grape able to grow in both hot and cooler climates alike. Cabernet Sauvignon's traditional home is Bordeaux in South-West France, where it is commonly blended with Merlot and Cabernet Franc to produce what is known as a 'Bordeaux Blend'. Such blends are increasingly popular in other parts of the wine-making world such as South Africa, Australia and South America. It is also found as a varietal wine, particularly in New World regions such as Coonawarra in Australia or Napa Valley, California.

Red Wine

Pinot Noir is the grape variety used in all quality red wines from Burgundy, and as a varietal wine in several parts of the New World, most notably New Zealand, California and Chile. It is also one of the three grape varieties commonly used in the production of Champagne and other traditional method sparkling wines of the world, either as a 100% blancs de noirs or (more commonly) as part of the traditional Champagne blend. Pinot Noir is somewhat temperamental and, unlike Cabernet Sauvignon, can only flourish in certain conditions and when afforded the utmost care on the part of vine-grower and wine-maker alike. Relatively, thin-skinned, the grapes produce red wines of lower tannins, lighter colour and great charm and delicacy which evolve comparatively quickly, although the very best examples are slow to fade.

Merlot is a red grape variety, famous for its use in the great wines of Pomerol and St-Emilion on Bordeaux's right bank and now of immense popu-larity the world over, competing with Cabernet Sauvignon as the most planted black grape. It is used both as a single varietal where it produces wines of a fruit-driven nature, with soft and ripe black fruit flavours and gentle tannins, or as part of the traditional Bordeaux blend where it part-ners with Cabernets Sauvignon and Franc to produce wines in the style of the Bordelaise - in such blends it plays the role of bringing softness of fruit to the sometimes austere and lean Cabernets. Outside of France, it is grown in all wine-producing countries, but is most well known in Chile, Australia and California.

Rose can be either sweet or dry. Rose wines are made from the same grapes as red wine. Colour and taste will depend upon the exact grapes used. France and Spain are known for producing dry rose wine, while American rose wine is sweet. Tempranillo is one of the most popular Spanish red wines and is made from Tempranillo grapes, a very aromatic black grape, which are grown in most of the wine regions in Spain including Ribera Del Duero, Penedés and Rioja. This wine has a very robust and dry flavor and a very deep red color. Because of its strong flavor, this wine goes best with strong foods such as red meats.

Malbec is Argentina’s flagship variety, and the country has the largest Malbec acreage in the world. This variety originally comes from south west France, where it is called Cot and features a hard tannic style. Due to its intense colour and dark hues, wines obtained from the variety were once called “the black wine of “Cahors”. These wines consolidated their prestige in the middle ages and gained full recognition in modern times.

Grenache is one of the most widely planted red wine grape varieties in the world. It ripens late, so it needs hot, dry conditions such as those found in Spain, south of France and California’s San Joaquin Valley. It is generally spicy, berry-flavored and soft on the palate with relatively high alcohol content. Usually blended with other varieties such as Syrah, Carignan, Tempranillo and Cinsault. In Australia it is typically blended in “GSM” Grena-che, Syrah and Mourvedre.

Zinfandel is the same grape as Croatian grape variety Crljenak Kaštenaski. Its heritage dates as far as the Roman Empire in 32 BC. Primitivo is actually a clonal relative– very similar to Zinfandel. Zinfandel has high acidity which is often described as tasting “Spicy”. Berry flavors are domi-nant, from strawberry to blackberry bramble, depending on the ripeness.

Sangiovese has been popularly used in Chianti region for several centuries. The name of the grape has been derived from an Italian word meaning “blood of Jove”.Barolo wines are made from Nebbiolo grapes, and is produced solely in Italy, preferably in extremely sunny, hilly terrain. Considered the “wine of kings and the king of wines, Barolo is meant for experienced connoisseurs, as many wine

tasting beginners have a hard time understanding the appeal. Barolo wines often have intense strawberry or black cherry flavour with subtle hints of tobacco or tar. A wine cannot be accurately classified as Barolo unless it has been aged for at least three years, two of which must be in wood.

Sherry is a fortified from a small region of Spain, made from the Muscat, Palomino, and Pedro Ximenez grapes. This wine is made in the early stag-es like most other types. Once it has fermented, however, it is fortified with brandy. At this point, some Sherry has more yeast added and some does not. It is similar in some ways to other fortified wines, such as Port in comparison to Port, however, Sherry is quite a bit less alcoholic Sherry may come in a variety of different styles, each with its own benefits and drawbacks. Oloroso is a type that is around 17.5% alcohol too high in alcohol content to allow the growth of any yeast that is extremely dark and full of flavour. Amontillado usually has around 15% alcohol, and has flor yeast added after the initial fermentation. Amontillado is a lighter wine than Oloroso. Fino is a type that is quite dry in texture, and the lightest of all varieties. Sweet Sherry is one of these drier Sherry wines with a sweet wine such as Muscat added to it.

The word is an English shortening of Genever, the Dutch word of juniper. The origins of Gin are rather murky. In the late 1580s, a juniper-flavored spirit of some sort was found in Holland by British troops who were fighting against the Spanish in the Dutch War of Independence, they grateful-ly drank it to give them what they soon came to call “Dutch courage” in battle. Tequila is a strong liquor from Mexico, distilled from fermented mash of an pure blue agave plant. After Spanish Conquistadores in the early days of colonial Mexico ran their supplies of Spanish brandy dry, they decided to take a leaf out of the book of the resident Mexicans - descendants of the Aztecs - who were making a drink called ‘Octli’ from a local succulent growing in the arid conditions. After a little practice, and much refine-ment, they produced a spirit that would later be known as tequila.

North American whiskey are all grain spirits that have been produced from a mash bill that usually mixes together corn, rye, wheat, barley and other grains in different proportions, and the generally aged for an extended period in wooden barrels. The barrels may be new or used, and charred or uncharred on the inside, depending on the type of whiskey being made. Bourbon comes a country in eastern Kentucky, which in turn was named for the Bourbon kings of France who had aided the American rebels in the Revolutionary War. The local whiskey, made primarily from corn, soon gained reputation for being particularly smooth because the local distillers aged their products in charred oak casks. The adoption of the “sour mash” grain conversion technique served to further distinguish Bourbon from other whiskey style.

The word brandy comes from the Dutch word brandewijn (“Burnt Wine”), Brandy, in its broadest definition, is a spirit made from fruit juice or fruit pulp and skin. Grape Brandy distilled from fermented grape juice or crushed but not pressed grape pulp and skin. The spirit is aged in wooden casks (usually oak) which colors it, mellows palate and adds additional aromas and flavors…” All Cognac is brandy, but not all brandy is Cog-nac. This is because Cognac is a brandy that comes from a specific place – the Cognac region immediately north of the famous French wine-growing region of Bordeaux. Just as sparkling wine that comes from Champagne is the only sparkling wine allowed to call itself Champagne, only brandy from the Cognac region can be called Cognac. The grapes used for the production of Cognac are mainly Ugni Blanc (aka Trebbiano in Italy), with Colombard and Folle Blanche playing supporting roles. These grapes are suitable for distillation because they produce low alcohol, high acid base wines.

Sake or saké ("sah-keh")is an alcoholic beverage of Japanese origin that is made from fermented rice. Sake is sometimes called "rice wine" but the brewing process is more akin to beer, converting starch to sugar for the fermentation process, by using Aspergillus oryzae. In the Japanese lan-guage, the word "sake" (酒, "liquor", also pronounced shu) generally refers to any alcoholic drink, while the beverage called "sake" in English is usually termed nihonshu (日本酒, "Japanese liquor"). Under Japanese liquor laws, sake is labelled with the word "seishu" (清酒, "clear liquor"), a synonym less commonly used colloquially.
