Olive fruits are rarely consumed as fruits due to extreme bitterness hence
they are widely used f or oil production
During olive oil production - 80% of the olive fruit is discarded as waste
Olive waste are rich in polyphenols
Phenolic content in olive oil is 1-2% while remaining 45% to 53% phenols are
lost in oil mill waste
Major phenols includes hydroxytyrosol and Oleuropein , apart from thismore than 30 phenolic compounds are present in olive waste, which act as a
potent source of natural antioxidants
