1. INTRODUCTION 1.1 Purpose This report has been prepared to satisfy Condition 5.2.1 of the Department of Environment Regulation (DER) Licence L7643/1999/8 (“the Licence”) commencing on 28 July 2014 (Appendix 1) and expiring on 27 July 2029. Pursuant to the general conditions the Licence requires an Annual Environmental Report within 28 days after the end of the annual period. The annual period is defined in the licence as the inclusive period from 1 July until 30 June. This report provides a summary of the information listed in table 5.2.1 and 3.1.3 of the Licence including winery throughput data, monitoring of emissions to land and the contaminant loading to land data for Flying Fish Cove Pty Ltd (the “Winery”) for the reporting period 1 July 2017 to 30 June 2018. 1.2 Compliance Report Information provided in the report includes an assessment of compliance with the monitoring and reporting requirements of the Licence and an Annual Audit Compliance Report in the form required by Table 5.2.1. In accordance with section 5.2.2(b) of the Licence an assessment of the information contained within the report against previous monitoring results and Licence limits has been undertaken.

2. OPERATIONS OVERVIEW - INCLUDING MAINTENANCE AND COMPLAINTS

2.1 Regional Location The Winery regional location is presented in Figure 1. 2.2 Maintenance 2.2.1 Treated Wastewater and Marc Maintenance during the reporting year included: i) Desludging of the collection point of winery wastewater for transfer to the

treatment area to facilitate operation of the submersible pump, ii) Desludging of the wastewater treatment settling tanks to reduce nutrient levels in

the treatment dam and to promote efficiency of the system, iii) Desludging and high pressure washing of the rotary screen filter to remove sludge

and ensure efficient screening of effluent, iv) Removal of marc from the Winery marc stand after vintage by Aaron Winfield for

stock feed and Wildberry Farm for the purpose of offsite composting to eliminate the production of leachate, reduce the nutrient load on the treatment system, reduce odours and reduce the build-up of vinegar flies,

v) Removal and maintenance of the main submersible pump. vi) Cleaning and inspection by a plumbing contractor of all pipe work from the main

collection point to the rotary screen to improve the submersible pump’s operation. vii) Installation of an additional floating aeration unit to increase the dissolved oxygen

in the treatment dam and eliminate odours. viii) Installation of a new digital flow meter monitoring irrigation outflows. 2.3 Production Volumes and Staging Crushing commenced on 20 February 2018 and continued through until 17 April 2018. During this time a total of: i) 2017 tonnes of grapes were crushed, consisting of 1267 tonnes of white and 750 tonnes of red grapes. ii) As a result, approximately 760,000 l of finished white and 450,000 l of finished red wine will be produced on site or a total of 1210,000 l. A description of the tasks carried out during the various stages of the Winery production (2017/2018) is provided in Table 1.

2.4 Raw Materials Raw materials used included bentonite, pearlite, citric and tartaric acids, caustic soda and oak chips. The volumes of raw materials used are indicated in Table 2.

2.5 Wastewater Pre-Treatment, Treatment System All components of the systems were operational during the reporting year. 2.6 Waste Streams Wastewater The volume of wastewater produced by the Winery is given in Section 3.1. Sampling to determine the effluent quality at the different stages of winery production is addressed in Section 3.2. Disposal continues to be via irrigation to a 2.1ha area consisting of a mixed species plantation of Eucalyptus, Melaleuca and olive trees (see Figure 3). The irrigation areas continue to produce excellent growth and remain in good health with a high growth rate of all species. Marc A total of approximately 500 tonnes of marc was produced between February and April. The marc was removed from the press and placed in covered plastic bins prior to transfer by forklift to the marc stand facility. Aaron Winfield and Wildberry Farm removed the marc using a loader and tipping truck at the completion of vintage for the purpose of stock feed and offsite composting will be used in establishing a new planting in the Wildberry vineyard. Pearlite The Winery uses floatation for the purpose of settling most white juices. This processing technique significantly reduces the use of pearlite in the Winery for filtration. During the reporting period the Winery used 1600 kg of Pearlite for RDV and earth filtration. The floatation process reduces the amount of electricity required for processing because there is no need to must chill prior to floating or warm juices prior to fermentation. In general, the process has a lot less impact on the environment.

Some juices were settled the traditional way with chilling and the bottoms were filtered through the rotary drum vacuum filter (RDV) to ensure that solids were removed from the juice before fermentation. The Winery continues to use Pearlite instead of Diatomaceous Earth as the filter medium. Pearlite is a safer product than Diatomaceous Earth and the waste solids which are essentially rock dust were placed on the marc pad for composting. The Winery uses Pearlite exclusively for earth filtration of all wine when preparing for bottling. Further the Winery has cap-ex approval to purchase a cross flow filter as an alternative to other filtration methods which uses no filter media and is less impactful to the environment. Oak Logs and Staves Approximately 700 kg of oak logs and staves were integrated into the wine production system during the reporting period. Oak alternative usage is now predominately oak staves compared to chips used in previous periods because of the perceived quality benefits. After use the staves were re-used by a local restaurant for cooking. Sludges from the wastewater treatment system Suspended solids in the Winery wastewater settle and collect at the base of the collection, settling and aeration tanks and in the treatment dam creating a layer of lees or sludge. Despite using several settling tanks sludge ultimately builds up in the treatment dam and settling tanks and must eventually be removed from the system to ensure optimal operation. All of the main collection and settling tanks were de-sludged prior to the vintage period by a licenced contractor Sandgroper Contracting and the sludge was disposed of at a licenced facility outside of the region.

2.7 Complaints The Winery received no complaints during the reporting period. Many visitors to the Winery during this period observed that there was very little odour on site which was due to the extra aeration employed on the treatment dam. Further, marc was removed as it accumulated which also reduce the presence of odours.

3. MONITORING RESULTS AND CALCULATION OF CONTAMINANT LOADS

3.1 Volumes of Water Used and Wastewater Discharged The volume of water used for the Winery operations during the reporting year was approximately 2800 kl. Monthly wastewater volume readings were recorded during the reporting period. A total of 3066 kl of wastewater was discharged to irrigation during the reporting period (see Appendix 2). The volume of wastewater discharged during respective months of wine production has been calculated and the results shown in Table 3. 3.2 Quality of Wastewater Six wastewater samples were collected to satisfy Licence requirements. Winery production activities at the time of water sampling are shown in Table 1. Winechek, a NATA accredited business, measured the relevant parameters for each of the six samples. Results of the monitoring program are shown in Table 4. Laboratory Certificates are provided in Appendix 3. 3.3 Contaminant Loads in the Treated Wastewater Monitoring data from Tables 3 and 4 have been used to calculate the mass loadings of contaminants in the treated wastewater. Calculations were done using Microsoft Excel. Results of the calculations are shown in Table 5. Mass loads of Total Nitrogen, Total Phosphorus, Total Suspended Solids and BOD are calculated in kg per day. These values are then used to calculate the mass loads of each contaminate for each month. Monthly loads are then added to obtain a total mass (kg) for the year. These figures are then used to calculate the total contaminate loads for the reporting year in Table 6 below.

6. CONCLUSION The Company is pleased with the operation of the wastewater pre-treatment and treatment system during the reporting year. All parameters of emissions to land were below or equal to licence limits and outflows to the irrigation areas were well managed. Mass loadings were higher than in the previous reporting period. However, this can be attributed to the first sampling date measurements in November. Due to the Winery being at processing capacity in the previous period the treatment system had a relatively high load of nutrients contained in the system. At this stage an additional aerator was

employed as well as annual desludging of the system. Subsequent measurements showed a significant improvement with total nitrogen, phosphorus and BOD halving from the previous reading and the treatment system operated with very good numbers over the vintage period. The additional aerator has delivered excellent control of odours during the peak inflow period and the Company has a high degree of confidence that this can be achieved every year going forward. The high level of maintenance maintained on the system continues to ensure efficient operation and a lack of breakdowns or failures. This is a satisfying result given that the Company experienced another year of high demand for its services. Despite the high demand the wastewater system did not exceed limits and wastewater was managed very efficiently. It is anticipated that the Company’s future budgets will result in wine production volumes to be at licence capacity in the short term provided grape yields remain within historical averages. To some extent the agricultural nature of the Company’s business makes it difficult to accurately predict the total processing tonnage prior to the commencement of processing. However, the Company uses employs comprehensive budgets to ensure it maintains within its Licence limits. As referred to in section 2.2.1 extensive maintenance works were carried out on the wastewater treatment system. Desludging of collection points is an expensive but crucial treatment to reduce loading on the system. The Winery also continues to fine tune its processing procedures to ensure the least possible loading on the environment. All white gross lees, bentonite lees and red gross lees are directed to the marc pad for composting material rather than processed through the waste water treatment system. Further the floatation system of clarifying white juices continues to significantly reduce the amount of white solids produced onsite. The Winery is pleased that the average BOD levels were lower than last year at 1380 mg/l which was lower than the average for the previous two periods (1500 and 2345 mg/l). This was achieved by operating two aerators for longer periods. During the next reporting period the Company will be trialling a product called Biosol, which other wineries have reported as having a beneficial effect on reducing mass loading in the system with respect to BOD. It also reported as very effective in reducing odour production and enhancing the settling of sludge. In general, the Company is pleased to report that monitoring of emissions to land showed that all parameters did not exceed Licence limits. The Company believes that the treatment system is working well and is confident that it will continue to operate within the Licence requirements.
