The Lunchtime favourite recipe this week is Pineapple Upside Down pudding ingredients 4 table spoons of golden syrup (warmed) A tin of Pineapple rings (N.B. substitute with pear halves if you prefer) Glace cherries (optional) 4 oz caster sugar, 4 oz soft margarine, 2 eggs (beaten) 6 oz self raising flour Method 1. Grease a round cake tin, and pour in the warmed golden syrup so it covers the base. 2. Add the pineapple rings around the base of the tin, into the syrup (4 should do it, or 5 if can squeeze one more in middle)

Saturday 17th September

Lunchtime favourites came from the home of adoption counsellor, Anne Bone.

Maria Felix Vas went to her home in Leyland, and talked to her about her life and work. Anne runs “U-in-Mind”, a counselling service for parents and families of adopted (and fostered) children.

The Lunchtime favourite recipe this week is Pineapple Upside Down pudding

ingredients4 table spoons of golden syrup (warmed)A tin of Pineapple rings (N.B. substitute with pear halves if you prefer)Glace cherries (optional)4 oz caster sugar, 4 oz soft margarine,2 eggs (beaten)6 oz self raising flour

Method1. Grease a round cake tin, and pour in the warmed golden syrup so it covers the base.2. Add the pineapple rings around the base of the tin, into the syrup (4 should do it, or 5 if can squeeze one more in middle)3. Add a cherry to centre of each pineapple ring.4. Make up cake mixture (cream sugar and margarine, mix in beaten eggs, then the flour)5. Spoon cake mixture into cake tin, over the syrup and pineapple base.6. Cook for 45-50 min, in pre-heated oven gas mark 4 (180C)7. When ready, take out and carefully turn cake tin upside down on to plate.8. Eat either warm as a pudding (yummy!) or cooled as a cake.
