Angel Food CakeThis recipe will make 2-3 small
cakes
O In a medium sized bowl beat 3 egg whites, 3/8 tsp cream of tartar, and a pinch of saltO Beat until you reach the foamy stage
O If you get any yolk in the bowl, you will not reach stiff peaks and your cake will be ruined
OSlowly add ¼ c and 2 T of sugar to the bowlOContinue beating until you reach stiff peak stage
OBeat in ¼ tsp and 1/8 tsp of vanilla and 1/8 tsp of almond extract
Fold in the flourO Sprinkle ¼ c of cake flour over the
egg mixture
O Fold in until the flour disappears
Pour mixture into moldO Make sure your molds are labeled!O Pour mixture into 2 moldsO Cut through mixture with a knife to
break up air bubbles
O Bake 25- 30 minutes
Cool your cakeO Invert cake to cool it.
