What You NeedSPONGE CAKE4 lg eggs2 c sugar1 c whole milk1/2 tsp vanilla extract1/2 stick unsalted butter2 c self rising flourGANACHE ICING1 c heavy cream8 oz semi-sweet baking chocolate, choppedPASTRY CREAM4 egg yolks1/4 c cornstarch3/4 c sugar2 c whole milk (divided use)1 tsp vanilla extract2 tbsp unsalted butter, room temp
Direction• Preheat oven to 350° and line your
cupcake tins.• CAKE: Beat 4 eggs in a bowl, gradually
adding sugar until well-blended (4-5 min); add vanilla extract and blend well, then add the flour.
• Heat one cup of milk with 1/2 stick of butter until butter melts. Add mixture to the batter; mix well.
• Use 1/4 measuring cup to scoop batter into tins. Bake for 11-12 min or until golden brown. Cool completely.
• GANACHE: Bring heavy cream to a

boil, then pour it over the chocolate.• Stir until combined, then chill in fridge
for 20-30 min, or until it thickens slightly into a ganache.
• PASTRY CREAM: While ganache is cooling, combine cornstarch and 3/4 cup sugar; whisk in 1/2 cup milk.
• In a separate bowl, lightly beat 4 egg yolks. Using a wooden spoon, stir eggs into sugar mixture until completely smooth.
• In a sauce pan, heat remaining 1 ½ cups milk. Bring to a simmer (do not boil) and remove the pan from the heat.
• To temper the egg mixture, gradually add about 1/3 of the milk mixture to it at a time, whisking constantly.
• Return the mixture to saucepan and cook over low-medium heat, whisking until it comes to a boil (about 5 min). Whisk should leave a trail in the pastry cream.
• Remove from heat when consistency is soft and creamy. Add vanilla extract and remaining butter; stir until well-blended.
• Cover pastry cream with plastic wrap and refrigerate until cool (about 15 min).
• ASSEMBLE: Cut a circle out of cupcake tops; set aside. Scoop out a small amount of the cupcake center and fill with pastry cream. Replace cupcake tops. Spread the ganache icing over cupcake and enjoy!
