tomato salsaHomemade salsa is simple to make and much fresher and tastier than jars of salsa you can buy at the store!
Up to 1 tsp jalapeño, minced
1 1/2 lb tomatoes (preferably plum, paste, or roma)
3 Tbsp fresh cilantro, chopped
1/3 cup onion, chopped
1 tsp garlic, minced
1 tsp white vinegar
Salt to taste

yields 10 servings, serving size about 1/4 cup

1. Core and dice tomatoes.
2. Combine all ingredients in a large bowl and let sit in the refrigerator or at room temperature for at least 30 minutes before serving.
notes Fresh jalapeños can vary widely in heat. The spiciness comes from the seeds and the white part the seeds cling to inside the pepper. Use more or less jalapeño to adjust the spice level.
If using salsa as part of a reimbursable meal, make sure to serve with another 1/2 cup of vegetables.
