Rajasthani Cuisine

Laal Maans

Laal maas (typically a very hot and rich garlic dish) is

a meat curry from Rajasthan. It is a mutton/lamb

curry prepared in a sauce of curd and hot spices

such as red chilies.

Govind Gatta

Govind Gatta is a typical dish from Rajasthan. It is

gram flour, stuffed fried dumpling preparation in a

rich tomato onion gravy and served with hot

chapattis.

Kaleji ka Raita

A dish that was unanimously loved by all non-

vegetarians. Kaleji Ka Raita is an assortment of

chopped pieces of smoked goat liver mixed with

thick curd, cumin powder and salt.

Khargosh ki Mokal

Khargosh ki Mokal - a dry rabbit curry. It is slow cooked

with whole spices, the meat is then picked off the bone

and cooked into an onion and tomato based curry;

flavored with cumin, coriander, cardamon and garam

Lehsun ki Kheer

The Lehsun ki Kheer is an integral part of The

Rajasthani cuisine. The skills of a chef is put to real test

when he prepares kheer with garlic. The trick of this

kheer lies in alum water in which garlic is washed

several times, to remove its pungent taste and odour.
