Generalcharacteristics

Stabigum® is amicrofiltered and purified solution of gum arabic resulting fromthe specific processing of the acacia tree exudate (Destrogiro). Stabigum® isperfectly clear, straw-yellow in colour and it has a very low calcium content.Stabigum is "microfiltered" at 0.1 μm to ensure sterility but mainly becausethanks to thisnarrow filtration the filterability indexofwines isnot significantlyinfluenced,making it addable even before the last filtration. Stabigum® plays aroleofprotectivecolloid(arabinogalactantypeIIpolysaccharideassociatedwithaglycoprotein) since it is characterizedbyanexceptionalanticoagulantprotectivepower, in particular towards polyphenolic substances even at low molecularweightandtowardsproteinsubstancesofbothwhiteandredwinesforageing.

Addedtowines,Stabigum®avoidsturbidityanddepositsofcolloidaltype,makingsurethatwinespreservealltheirclarity,opposingtoalterationsduetotheferricandcoppercasse;Stabigum®also improvesthesoftnessandthevelvetyofbothwhiteandredwines.

Insynergywiththemetatartaricacid,Stabigum®helpstopreventphenomenaoftartaricinstability.

Instructionsforuse

Stabigum® must be added to the wine before or after the last filtration ormicrofiltration that leads to bottling. Do not carry out clarification after theadditionofStabigum®.
