FRENCH ONIONSOUP
Salmon with Strawberry Salsa• 2 cups strawberries,
chopped• 1/2 cup white onion, finely
chopped• 1/4 cup cilantro, chopped• 1 jalapeño, finely
chopped
• 1 lime, juiced• Salt and pepper, to taste• 2 Tbsp balsamic vinegar• 1 Tbsp olive oil• 1 lb salmon, cut into 4
fillets
1. In a bowl, gently toss together strawberries, onion, cilantro, jalapeño, and lime juice. Season to taste with salt and pepper.
2. Preheat oven to 450°F. Line a baking sheet with parchment paper.
3. In a small bowl, mix together olive oil and balsamic vinegar. Brush salmon with mixture.
4. Place salmon on baking sheet skin side down. Bake about 8 minutes, or until cooked through, and flakes easily with a fork.
5. Top salmon with strawberry salsa.

Chard Bacon Pasta
• ½ lb linguine• 6 slices bacon, cut into
1-inch pieces• 1 red onion, sliced• 1 bunch chard, chop
stems and greens separately
• 3 cloves garlic, minced• ½ cup dry white wine• Pinch red pepper flakes• Salt and pepper, to taste• 2 Tbsp olive oil• ½ cup grated Parmesan
cheese
1. Cook linguine to al dente, following package instructions. Drain, reserve 1/2 cup pasta water.
2. Cook bacon in a Dutch oven over medium heat until it begins to crisp. Set aside to drain on paper towels. Drain off bacon fat from the skillet, reserving a tablespoon to cook vegetables.
3. Add onion and chard stems, cook until just soft, about 5 minutes. Add garlic, cook until fragrant, about a minute.
4. Deglaze pan with white wine, cook and stir until reduced by half.
5. Add chard greens, pasta water, salt, pepper, and red pepper flakes. Toss until the chard is wilted, about 4 minutes.
6. Add linguine, bacon, and olive oil to the pot, toss to coat. Sprinkle with Parmesan cheese.

No-Knead Rosemary Garlic Bread
• 1 head garlic• 1 tsp olive oil• 4 ½ cups unbleached white
flour • 1 pkg (2 ¼ tsp) active dry
yeast
• ½ Tbsp kosher salt• 3 sprigs fresh rosemary
leaves, finely chopped• 2 cups warm water (110°F)• 1 Tbsp black garlic honey• 3 Tbsp olive oil
1. Remove papery outer skins from garlic. Slice off top ¼, exposing cloves. Rub with 1 tsp olive oil. Wrap in foil and place in a shallow baking dish. Bake 40 minutes, or until tender. Remove from skins, mash.
2. Whisk together flour, yeast, salt, and rosemary in a large bowl.3. Stir in water, honey, and roasted garlic paste. Dough will be very
sticky, almost like a thick batter.4. Cover with plastic wrap or a towel. Allow to rise in a warm, draft
free place until doubled in size, about 90 minutes. 5. Drizzle 1 Tbsp oil into a 12-inch cast iron skillet. Rub oil on your
hands, and transfer the dough into the skillet. Cover with a clean kitchen towel, and allow to rise again, about 1 hour.
6. Preheat oven to 400°F. 7. Drizzle the remaining oil over the dough. Cut 2 or 3 scores into
the top with a sharp knife. Bake 40 minutes, or until golden. 8. Remove from skillet after baking or bread will become soggy.
Allow to cool on a rack at least an hour before slicing.

HomemadeChicken Dog Treats
• 1 cup chicken, cooked (or your dog's preferred meat)
• 1/2 cup rice, cooked• 3 Tbsp brown rice flour• 1 Tbsp parsley, minced• 1 egg
1. Preheat the oven to 350°F2. Finely mince cooked chicken. Mash rice. Mix
together meat, rice, brown rice flour, parsley, and egg in a medium bowl until well blended.
3. Spoon mixture into silicone molds. If you don't have molds, spoon them onto parchment and gently smoosh them down so they are 1/2-inch thick disks.
4. Bake for 20-30 minutes, or until tops are golden brown.
5. Allow to cool before removing from molds. Store in the fridge in an airtight container up to 7-10 days.
