Rice pudding

INGREDIENTS

• 150 grams of rice (3 / 4 cup approx.)• 1 1 / 2 l iters of milk (1500cc.)• 1 cup sugar (200 grams) • 3 egg yolks • 1 teaspoon orange zest cinnamon to

taste.

PREPARATION

Place the rice with milk and leave to soak for 4 hours.Then incorporated into a half cup of sugar and bring to simmer for 12 minutes.

PREPARATION

Whisk the 3 egg yolks aside half a cup of sugar.Incorporate the hot mixture slowly to egg yolks and orange zest, cook two minutes more, stirring continuously.

PREPARATION

Place on a platter and when cool sprinkle with cinnamon.The rice should be cooked through and something thick and creamy.
