Tips for a stress-free ThanksgivingNORTH AMERICAN PRECIS SYNDICATE
Thanksgiving is the biggest food holiday of theear, but preparing the feast doesnt have to be stress-ul if you follow a few simple tips, says Sara Moulton, hef, cookbook author and TV host of Saras Week-ight Meals on PBS.
First, decide what kind and what size of turkeyoure going to buy, says Moulton. She recommends
uying 1 pound of bird per person, to allow for left-vers. If youre buying a frozen bird, note when to startefrosting it in the fridgeyoull need 24 hours for ev-ry 4 to 5 pounds, she says.
Prepare the gravy a day ahead, then marry it to therippings in roasting pan while the turkey is resting.ther essential dishes to prepare ahead are stufng,
ranberry sauce and mashed potatoes. Cook and ricehe potatoes, then refrigerate. On Thanksgiving, nukehem and add softened butter and warm milk. Anotherrick to make preparation go more smoothly is to createtimetable listing everything you are going to prepare
nd when and post it on the fridge, says Moulton.
Saras Make-Ahead Gravyserves 8Make about 12 cup gravy per person. Youll need
hat much gravy to pour over everything and have left-vers. For each cup of gravy, use 1 cup broth, 2 table-poons butter and 2 tablespoons our.
8 Tbsp. (1 stick) unsalted buttercup all-purpose our4 cups chicken or turkey broth, heated cup dry red or white wine reserved liquid from
urkey roasting drippings reserved liquid from turkeyesting platter
In medium saucepan over moderate low heat, meltutter. Whisk in our and cook, whisking, for 5 min-tes. Add broth in a stream, whisking to boil. Simmer
or 5 minutes. Let gravy cool, transfer to a bowl andover and chill overnight. Note: The gravy will be thickut youll be adding liquid and thinning it before serv-
ng.On Thanksgiving Day, platter your cooked turkey
nd cover it loosely with foil, pour drippings into a fat
separator and discard fat. Place bird roasting pan ontwo burners of the stovetop and use medium heat. Add
wine and reserved drippings, scraping up the brown bits on bottom of pan. Whisk in premade gravy andany juices from resting turkey; salt and pepper to taste, cooking until hot. Serve with bird.
Carving the bird: My last tip to avoid stress: Carvethe bird in the kitchen, not at the table and make sure
you have a very sharp knife or knives.ChefsChoice Carving Tips
According to ChefsChoice, knife sharpener man-ufacturers, sharp knives are not only safer, they willhelp you smoothly cut thin, even slices without shred-ding the meat.
The ChefsChoice M130 makes sharpening easy.
It professionally sharpens, steels and strops all brandsand types of knives. Precision guides eliminate guess-
work for sharp, durable edges. (Visit www.chefschoicecom or call 800-342-3255.)
After the turkey is cooked (meat thermometeshould read 180 when inserted in the thickest part o
bird), cool for 20 minutes. Cooling makes meat rmeand easier to slice. Remove and set aside the legs andlast joint of each wing. Make a long, deep (to the bone)horizontal base cut into the breast just above wing.
Slice down vertically through breast until you meethe original base cut. This will release perfect, eveslices.
Following these preparation and carving tips ca
help make your Thanksgiving a meal to remember.
HELPFUL IDEA: TV chef Sara Moulton, pictured here on set, recommends making side dishes in advancto reduce stress. (NAPSI Photo)

WE MUST NEVER FORGET!!
Korean War AccountingThe Korean War accounting effort remains a high priority for the U.S. government. DPMO aggressively pursues opportunities to gain access to actual loss sites within North Korea and South Korea.Joint Field Activities (JFAs) conducted between 1996 and 2005 yielded over 220 sets of remains that are currently being processed for identification at JPAC in Hawaii.
World War IIWorld War II ended on August 15, 1945 . More than 400,000 of the 16 million Americans who served in the war died. At the end of the war, the U.S. Govern-ment was unable to recover, identify, and bury approximately 79,000 as known persons. They include those buried with honor as unknowns, those lost atsea, and those missing in action. That number also includes the 1,100 sailors entombed in the USS Arizona Memorial in Pearl Harbor. Today, more than74,000 Americans remain unaccounted-for from WW II.
Cold WarIn addition to the thousands of service members who fought communist forces during hot wars such as Korea and Vietnam, many risked -- and some lost-- their lives while collecting vital intelligence on military forces of the Soviet Bloc, the Peoples Republic of China, and North Korea during peacetime.
Vietnam WarThe U.S. government continues to account for Americans missing in Southeast Asia from the Vietnam War.Since late 1973, the remains of over 700 Americans killed in that war have been returned and identified. Many have been buried with full military honors in accordance with the wishes of surviving family members. Efforts continue to recover nearly 1,800 Americans whoremain unaccounted-for from the conflict .
1991 Persian Gulf WarForty-nine Americans were listed as POW/MIAs during Operation Desert Storm. DoD has accounted for all 49, thelast being U.S. Navy Captain Michael Scott Speicher, whose remains were located in Iraq, and who was identified andreturned to his family in August 2009. Regretably, two naval aviators accounted-for as KIA-BNR are at-sea losses andwill likely never be recovered.
Recently Accounted-ForThe names listed here are U.S. military servicemembers who were once missing and are now accounted-for. Additional information may be seen by visiting the respective Vietnam, Korean War and WWIIdatabases on this site.

1st Sgt. George H. Humphrey, U.S. Marine Corps, 6th Marine Regiment, lost Sept. 15, 1918, during the first U.S.-led offensive of World War I, under the command of Gen. John J. Pershing, nearSt. Mihiel, France. His remains were identified on March 2, 2010.

Joint Pain and Food SensitivitiesThis is the un-edited story of one womans journey with food allergies and arthritis. She wrote because she wants some help with
bone spurs.
Fifteen years ago, I had pain from neck to toe. Was diagnosed with osteoarthritis and told that I could feel encouraged becaus e ofthe great advancements in joint replacements. I told the rheumatologist that I was hopeful it wouldnt get to that, and she predictedthat I would be in a wheelchair in ten years if I wasnt willing to consider joint replacements.
I went on a 7-day Sonnes fast and cleanse and all pain disappeared. I added foods back very carefully and over time (and a couplemore fasts) discovered what gave me pain: wheat, dairy, carrots, lemons, soy, and safflower oil. Since then I have controlled my dietand have taken glucosamine sulfate, and chondroitin sulfate. No joint replacements yet.
I took up bike riding last year, work as a school counselor in a large two-story building and am up and down stairs all day with nodifficulty. So, I think my food avoidance has worked well for me.
I did suffer a recurrence of symptoms some years back and after weeks of puzzlement, and distortions to my finger joints, I discoveredthat stearic acid in tablets and capsules is a problem for me.
When the attack of thumb arthritis h it a few months ago, I had not changed anything, or so I thought for th ree weeks of pain. Finally,in desperation, it occurred to me that one of my supplements could have changed. When I went through them, reading every label, Idiscovered that the Carlson people had added safflower oil to the vitamin D I had taken for years. I immediately stopped taking it andthe pain subsided within a day. Soon after, I ate one of Pamelas Ginger Cookies (Pamelas products had been a trusted friend for years)and I experienced thumb pain. Read the label to find safflower oil. Same experience with Trader Joes Black Bean Enchiladas, Food for
Lifes China Black Rice Bread, and virtually all the baked goods from the gluten-free bakery I have frequented for six years. The way I seeit, I could tolerate small amounts of that wretched oil, but when I ingested a dose everyday, my immune system reacted.
However, right after discovering the oil in my Vit. D, I purchased a roasted chicken from my local market sothat I could have easy meals during a busy week at school. Thumb pain all week. Stopped eating the chickenand pain subsided. I asked them if they used safflower oil on their roasted chickens and they said no. I didntbelieve them. Last week, feeling a cold coming on, I put together a pot of
