Guide to food waste reduction
Symbols adopted to identify each action
Food waste is a barrier to "ending hunger, achieving food security and
improving nutrition, and promoting sustainable agriculture," according to
the seventeen objectives of the 2030 Agenda for Sustainable
Development of the United Nations.
Most of the food wasted is a result of problems of recovery in the post-
harvest, transport, storage, pre-preparation and handling phases of food.
Goal: Develop a guide to reduce food waste.
The guide will be directed for the following sectors:
• Residential; • Catering, restaurants and cafes;
• School canteens and bars;
• Armed forces.
Action 1 – Guide to food
waste reduction
Goal: To test the guide's ability to reduce the amount of food waste, 15 local
actors will be selected and they will implement the guide on their spaces
(pilot projects).
The partners are asked to: sfgsgsfg
- Inform the Municipality with statistical data for measurement purposes;
- Authorize the access to their facilities for quantification and characterization of
food waste (eatable food remains) / waste (non-eatable food waste);
- Implementation of guide measures;
- Collaboration in process monitoring;
- Give access to their facilities, to the project team, with the purpose of obtaining
results and evaluation of the action.
The guide will have measures of different levels of application. All the person or
enthities who want to use them will be in charge to take, select and implement
the measure they select.
The measures to be considered include:
- how to prepare meals,
- how to prepare the trip to the supermarket / market
- where to deliver the leftovers,
among others.

- To improve food management and avoid waste;
- Help all those with needs;
- Reduce cost with waste management;

The guide will be available on the websites of UrbanWINS
and Leiria Municipality.
Action 2 - Regulation for the
promotion of sustainable events
Goal: Develop a draft regulation to reduce the environmental impact of events held
or supported by the municipality of Leiria.
The objective will be to test the regulation at those events, so that it can be
improved later, resulting in a proposal for a regulation to be approved by the
municipality.
The target sectors of the regulation should be: waste, resources, water and
sanitation, energy, noise, transport and logistics, air pollution and climate change,
procurement of goods and suppliers, and others.
The target events will be those held in Mercado de Santana (a Cultural Centre at
Leiria - pilot space), being chosen those that are held more than once in the time
elapsed of the project. If it isn’t possible, it will be the project with the same theme or format.
This action will focus only on waste.

Action 3 – Training for catering
and commercial establishments
Goal: To provide traders with training/information about best practices,
and the values of waste management.
The action aims to give hotels, restaurants, cafes, and retail, to implement
measures of prevention, reduction and separation at the source of urban
waste.
Some zones / streets of Leiria will be chosen to be the pilot of the action.
The partners are asked to:
- Inform the Municipality with statistical data for measurement purposes;
- Authorize the access to their facilities for quantification and
characterization of waste generated;
- Good reception of training actions;
- Good practices for sorting and depositing their waste according to the
training received;
- Dissemination of good practices learned.

This action allows:
- To Increase the separation / recycling rates of packaging waste;
- To improve the Urban cleaning of Leiria;
- To improve the image of the sector / traders;
- To contribute to the reduction of deposition of recoverable waste on
landfilling;
- Environmental, economical and social benefits.
