On Christmas Day, I gotup early and put the bird inthe oven. The night before Ihad soaked my shuck beansand placed them in the re-frigerator, so they went onthe stove at about the sametime as my bird disappearedinto the oven. I included aham hock in the beans forflavor. After the turkey hadcooked for about threehours, it was time for thedressing and corn puddingto replace the turkey in theoven.

Oh, how wonderful thekitchen smells at times likethese! The aroma remindedme of our little house inRockcastle County so manyyears ago. The only dish thatwas missing that really mat-tered to me was mymother’s dumplings. Beenever did write down thatrecipe for me, and I regret itterribly. Maybe I need towatch Eva make her dump-lings next Thanksgiving soI will be able to cook myown, because hers are al-most identical to Bee’s.

It was comical to watchKathy and I devour thatChristmas dinner. She com-mented later, “I bet I havegained six pounds today!”Even though the meal wasscrumptious, our “celebra-tion” was somewhat lackingsince the family was notgathered around the table asthey were when I was asmall boy.

A few days later, I de-cided to use another ofBee’s recipes and make herwonderful turkey hash. Incase you like that dish, hereis her recipe.4 large potatoes finelychopped2 cups of chopped onions4 cups of chopped turkeySalt and pepper to tasteSimmer until the mixture ismushy

In the meantime, theblack-handled Barlow wassmoldering in the rightfront pocket of my jeans.

I pulled it out when I gothome and it opened smoothas silk. Both Blades—asrusted as they were—but theback springs were solid andfull of life.

I found a can of WD-40and some steel wool andbefore you know what wasgoing on, I had a real pocketknife for the first time inmany years.

I am so blessed to havethe heritage of holidaymeals to remember andeven the recipes to preparethose memorable feasts. Iam grateful that MommieKatie and Bee took the timeto teach me a few tricks inorder to cook my own smallversion of the family’sChristmas dinner.
