e Crown Jewel of the Darioush estate, Darius II is hand-selected from several barrel lots that possess an exquisite beauty and purity of character from this property.
DARIOUSH DISTINCTIONConsistent with prior vintages, the 2004 Darius II Cabernet Sauvignon
was personally selected from less than 2 acres of fruit grown from the
oldest vines located on our Estate Vineyards. With a plush, velvety
mouthfeel, layered dark fruit and nely integrated tannins—the
nished wine has tremendous polish.
TASTING NOTESEarthy aromas of black true and espresso bean open into a avor
mystique of layered blackberry, dark chocolate and spice. An opulent
mouthfeel of black cherry, plum and currant is embraced by hints of
cedar, cinnamon and clove. A harmonious, regal nish is supported by
soft, nely-knit tannins.
VINIFICATION
~ Meticulous attention to detail in vineyard and minimal
cellar handling
~ Hand-harvested into small 28 lb. baskets
~ Hand-sorted twice, before and after de-stemming
~ Fermentation includes cold soaking for 4 days, with gentle
pump-overs and extended maceration for optimal extraction
and tannin development
~ Barrel lots were racked 2-3 times per year for clarity
