American-Style Enchiladas

Ingredients

2 pounds skinless, boneless chicken10 ¾ oz. cream of chicken1 ¼ cup sour cream¼ tsp. chili powder1 tbsp. butter1 Package taco seasoning mix1 bunch green onions, chopped1 cup water1 tsp. lemon juice½ tsp. onion powder½ tsp. garlic powder

flour tortillas3 cups Cheddar

cheese10 oz. enchilada sauce

Boil chicken for about 10 minutes until white.

Shred chicken by placing two forks back to back and pulling meat apart.

Combine cream of chicken, sour cream and chili powder in a saucepan. Bring to a simmer, turn off heat, cover and set aside.

Heat butter in a skillet. Stir in shredded chicken, taco seasoning, half the green onions and water…

…simmer for 10 minutes…

…add lime juice, onion powder and garlic powder, simmer 10 more minutes.

Pre-heat oven to 350˚

Stir 1 cup of soup mixture into chicken mixture.

Spread remaining mixture on the bottom of baking dish.

Fill each tortilla with chicken mixture, sprinkle with cheddar.

Fold tortilla and place in baking dish, seem down.

Pour enchilada sauce over tortillas.

Sprinkle with remaining cheese and green onions.
