BCSS Foundation Hosts Annual Legacy Dinner
The Boone County Senior Services Foundation hosted its5th Annual Legacy Dinner on
April 29th at the Sugar Creek ArtCenter in Thorntown. The theme
was Paint Your Legacy andattendees enjoyed theopportunity to learn more aboutthe Foundations efforts andgoals. The evening featured asilent auction with art piecescreated by local supporters, adelicious meal catered byCountry Garden Catering,testimonials from Gary Lampher,Beth Casselman and Margaret
Beesley and a program byprofessional speaker Lynn Shaw.
The mission of the BCSSFoundation is to build apermanent endowment from giftsand bequests so that BCSSI cancontinue serving seniors in BooneCounty. For more informationcontact 765-482-5220 or 317-873-8939.

Grilled Pineapple
1/4 cup maple syrup3 Tbsp. butter melted 1 fresh pineapple2 Tbsp. macadamia nuts
Coat grill rack with nonstick cooking spray before startingthe grill. Combine syrup and butter; set aside. Quarter
the pineapple lengthwise, leaving top attached. Grill,uncovered, over medium heat for 5 minutes. Turn; brushwith maple butter. Grill 5-7 minutes longer or until heated through;brush with maple butter and sprinkle with nuts. Makes 4 servings.
Garden Herb Chicken
2 cups fresh parsley1 clove garlic1 tsp. (each) fresh thyme leaves
and lemon zest in foodprocessor
1/2 cup Italian dressing4 small. skinless, chicken
breasts halves
Mix all ingredients until blended. Pour over chickenbreast halves in shallow dish; turn to coat both sidesRefrigerate 30 minutes. Heat grill to medium heat.Remove chicken from marinade and grill 5-7 minutes on each sideor until done (165F). Makes 4 servings.

Garden Spaghetti
8 oz. dried spaghetti2 cups small broccoli florets2 cups fresh or frozen corn
kernels1 cup chopped carrots2 Roma tomatoes, chopped
2 Tbsp. snipped fresh oregano or basil1 tsp. finely shredded lemon peel2 Tbsp. lemon juice2-3 Tbsp. olive oil1 recipe Fresh Tomato Sauce or
your favorite pastaCook spaghetti. Add broccoli, corn and carrots the last 3minutes of pasta cooking time. Drain. Return pasta mixtureto pan. Toss in tomatoes, oregano, lemon peel, lemon juiceand enough olive oil to lightly coat ingredients.
Makes 6 servings.
Sweet Potato Fries1 lb. sweet potatoes or carrots2 tsp. olive oil1/2 cup white whole wheat flour
or all purpose flour 1/4 tsp. salt2 eggs, lightly beaten
2 Tbsp. water 1 cup fine dry bread crumbs1/2 cup grated Parmesan Cheese1 Tbsp. olive oil
Preheat oven 400F. Lightly brush pan with olive oil. Peelvegetables and cut into narrow 3-4 inch wedges. Toss vegetableswith oil. Place vegetables on pan. Roast for 10 minutes. Removefrom oven. While vegetables are cooling, in one shallow bowl mixtogether the flour and salt. In second dish, combine eggs and water.In third dish combine bread crumbs and Parmesan cheese. Dip the
cooled vegetables in the flour mix, then the egg mix, the breadcrumbs, coating evenly. Arrange on pan. Roast for 15 minutes or until brown and crispy. Serve warm. Makes 6 servings.
