From 1860until the mid-19th cen-tury, it was not unusualfor farm housewives tobake at least onebatch of biscuits everyday. Until sharp-edgecutters were invented,they used tin orwooden circles toshape their dough.
We have al-ways been impressedby the different waysAmericans have eatenbiscuits. Our idea of aperfect breakfast is ahot biscuit with sweetbutter and jam. Whenbig breakfasts werepopular, biscuits wereserved with more sub-stantial toppings.
In the South,biscuits were smoth-ered with red-eyegravy and in the North,with creamed chippedbeef.
For later in theday, there’s nothingbetter you can do with
baking pow-der biscuitsthan dousethem with
fresh strawberry sauceand whipped cream,and turn them intoshortcakes.
The main thingto remember in makinghomemade biscuits isthat you need a “goodbiscuit hand.” Mix theingredients lightly, andnever over-mix.
Too much mix-ing and handling andyou’ll end up with ahockey puck ratherthan a flakey, fluffy,crumbly biscuit.
Whole Wheat Buttermilk BiscuitsWhole-wheat flourgives these biscuits adelicious nutty flavor.Patting and folding thedough makes the bis-cuits flaky, too.
2 cups whole-wheat flour, divided
2 t baking pow-der
1/4 t bakingsoda
1/2 t salt 6 T cold butter,
cut into small pieces 3/4 cup,
plus 2 T, buttermilk,plus more if needed
1. Pre-heatoven to450F.
2. Com-bine 1 3/4 cups flour,baking powder, bakingsoda and salt in amedium bowl; whisktogether. Add butter,toss with your fingersto coat with flour, andrapidly pinch and fluffbutter into flour withyour fingertips to makesmall flakes. Workquickly to keep butterfirm.
3. Add butter-milk; stir well with afork until dough gath-ers into one largelump. Drizzle in addi-tional droplets of but-termilk if necessary.
4. Scrapedough onto a flat sur-face sprinkled with re-maining 1/4 cup flour. Roll dough to coat withflour, then pat out toabout 1/2-inch-thickand fold it in thirds.Repeat the patting andfolding. Pat dough intoa thickness of 1 inch.Dip a 2-inch round cut-
ter into flour and stampout biscuits, coatingthe cutter with flour be-fore each stamping.Place biscuits on aheavy ungreased bak-ing sheet about 1 inchapart.
5. Bake 10 to12 minutes, until bis-cuits are goldenbrown. Makes 12 bis-cuits.

through. But by then,she had her heart seton adding a felinecompanion to herfamily, so she begansearching onPetfinder.
When shespotted Simon, herheart went out to him,even though the staffwas very clear abouthis problems. Theyalso said he neededsomeone who couldhelp him regain his
faith in people.“I instantly
equated him withall of the foster chil-dren I worked withas a social workerwho weren’t show-ing their best sidesat their fosterhomes becausethey were scared
and sad,” Brito says.“I made up my mindright there that Simonwas the cat for me.”
The first meet-
ing wasn’t particularlyauspicious. “He bitthe shelter worker andthen jumped back inhis cage when I triedto hold him,” shesays. “Talk about firstimpressions!”
But she took aleap of faith, “and nowI can’t imagine my lifewithout him. Wemade it through his lit-ter box issues, andtwo and a half yearslater I couldn't be hap-pier and I hope hefeels the same … Heis really just a softy atheart,” Brito says.
She hopes herstory encourages oth-ers to look beyond thefirst impression. “Givethese animals achance,” she says.“They are scared andsad and just wantsomeone to lovethem.” That’s whatSimon says, too.

Marooned inspace after the de-struction of their craft,two American astro-nauts suddenly findthemselves on a newmission of survival.
That’s a simpleenough premise, but“Gravity” turns its intosomething at oncemonumental and sub-lime, slicing to thecore of our basic fearsand primal issuesabout death anddying, isolation, aban-donment and spiritual
longing, and the gen-eral cosmic inhospital-ity and indifferencethat greets humanswhenever we ventureoutside the comfortzone of the earthlyplace we call home.
It’s also one ofthe most technicallydazzling spectacles toever grace the screen,an eye-popping, digi-tal/live-action marvelthat makes thesenses reel with newlevels of sophistica-tion in its ground-breaking specialeffects that leavesmost other films looklike they’re lagginglight years behind.
As it begins,we meet veteran as-tronaut Matt Kowalski(George Clooney) andhis space shuttle’smedical engineerRyan Stone (SandraBullock), a newcomeron her first mission. Ina breathtaking, 15-minute sequence dur-ing which the camera
never breaks away,we see Dr. Stoneworking outside thedocked shuttle on theHubble telescope, andKowalski whiskingaround leisurely withhis jetpack, when they
receive some alarm-ing news: A shower ofshrapnel from a deto-nated Soviet satelliteis speeding directly atthem.
But the warn-ing comes too late:The cloud of spacejunk, catapulted bycentrifugal force as itorbits the Earth, plowsinto the shuttle, ren-dering it useless---andsending Dr. Stone fly-ing out into the inky,star-flecked black-ness, adrift, detachedand alone.
And that’s justthe beginning!
Suffice it tosay, as Bullock’s char-acter does at onepoint, it’s “one hell ofa ride.”
Back in 2006,
Cuaròn made criticsgiddy with the trackingshots he used in “Chil-dren of Men,” agrungy futuristic fablethat became knownfor a couple oflengthy, carefully exe-
cuted segmentsin which the cam-era stayed withthe action andcharacters, with-out cutting away,for several long,protracted mo-ments.
Those shotswere über-cool,but they’re noth-ing comparedwith what the di-rector pulls off
here, in which hiscamera goes places,and does things, thatare nothing short ofjaw-dropping.
You’ll not onlyfeel like you’re floatingin space, you’ll feel
like you’re inside San-dra Bullock’s spacehelmet. (In one amaz-ing slow zoom, thecamera “takes youalong” as it seems tomagically penetratethe glass of her visorfrom the outside, turnaround, and beginlooking out---all asshe’s turning headover heels, weight-less.)
This is one ofBullock’s best per-formances, without adoubt; reserve her aseat down front nowat this year’s Oscars.
It’s one of themost dazzling-lookingfilms you’ll ever havethe opportunity to see,especially if you see itin 3-D, or better yet, in3-D and IMAX---be-lieve every bit of thehype. It’s a masterfulachievement of tech-nique and craftsman-
ship, creating whathas to be the most re-alistic “in space” expe-rience ever for anymotion picture.
And its finalscene is a brilliant cin-ematic brushstroke ofpure movie poetry thatblends heaven andEarth, rebirth and re-newal, past, presentand future, and apoignant reminder ofthe Newtonian univer-sal constant fromwhich the film takesits title.
