Akami (Back & tail sections) (A) Red meat, leanest meat of the fish found in the back section ‘top loin’, popular for its vibrant red colour.
Chu – Toro (Middle Belly) (B) ‘medium fat’ found in the middle belly section of the fish, light pink in colour, soft delicate texture.
O – Toro (Belly) (C) The most valued part of the belly demonstrating the heaviest marbling similar to wagyu steak. Only found in the belly section of the fish, soft delicate melt in the mouth flavour and texture.

Catching and farming
Mori Tuna are handled with the highest care and respect with as little handling as possible, reducing the stress in the fish, allowing our customers to get the most value from the flesh.
Caught in the Great Australian Bight before being very slowly towed back to the pristine waters of Port Lincoln, Mori Tuna are then farmed in large sea cages where they are fed their natural diet to enhance their taste and value.
Harvesting
Mori Tuna are harvested using the Japanese iki jime method, the most humane and respectful way to kill the fish, which also preserves the quality. Mori Seafood’s processing facility is ideally located at the water’s edge where the harvest vessels berth. Mori Tuna are harvested, processed and dispatched on the same day.
Processing
Mori Tuna are handled with ‘best practice’ care and respect in Mori Seafoods very strict hygienic export processing rooms. Products produced range from whole fish to smaller user friendly vacuum ‘chef packs’ packed for convenience
and ready for use. These chef pack portions have minimal exposure to oxygen with specially designed packaging maintaining freshness for longer lasting value and shelf life.
Sustainability
Mori Tuna is certified sustainable with Friend of the Sea. Australia has the most sustainably managed Southern Bluefin Tuna species in the world. The commission for the Conservation of Southern Bluefin Tuna (CCSBT) determines the Southern Bluefin Tuna quota globally. In Australia these quotas are further monitored by the Australian Fisheries Management Authority.
