Stephen Ross Winery – Pinot Noir and Chardonnay

Dark, deep magenta in color. Bing cherry pie/compote, cassis, black tea, bittersweet chocolate,

cardamom. This is an exquisitely clean expression of Pinot Noir fruit in its purest form. Structured and

youthful on the palate, medium body with nice berry tannins. Lingering structured, textural finish with

lasting flavors of cherry or plum. One of our best efforts from Stone Corral Vineyard.

Pale honey straw color. Apple and freshly baked tarte tatin, hazelnut, spicy oak vanilla aroma. Full body,

elegant textures, sandalwood and lemon drop flavors, good energy on the palate, lively acidity on the

Tablas Creek Vineyard – 2016 Espirit de Tablas and Espirit Blanc and Tasting

Experience for Six Individuals

Tablas Creek is a pioneer of California’s Rhone movement. Founded in 1989, it is the culmination of a

friendship between two of the international wine community’s leading families dating back to 1967: the

Perrin family of Chateau de beaucastel and the Haas family of Vineyard Brands. After a four-year search,

the partners chose Paso Robles, California, for its many similarities to the southern Rhone, and began

the lengthy process of importing vine cuttings, building a grapevine nursery, and creating an estate

vineyard from scratch.

The Tablas Creek Vineyard 2016 Esprit de Tablas is a blend of four estate-grown varietals, propagated

from budwood cuttings from the Château de Beaucastel estate. The wine is based on the dark red fruit,

earth, spice and mid-palate richness of Mourvèdre, with additions of Grenachefor forward fruit,

approachability and lushness, Syrah for mineral, aromatics, and back-palate tannins, and Counoise for

brambly spice and acidity.

The Tablas Creek Vineyard 2016 Esprit de Tablas Blanc is a blend of three estate-grown varietals,

propagated from budwood cuttings from the Château de Beaucastel estate. Roussanne provides the

core richness, minerality, and flavors of honey and spice, while Grenache Blanc adds green apple and

anise flavors, a lush mouthfeel and bright acids. Picpoul Blanc completes the blend, adding a saline

minerality and tropical notes.

Way out along the Adelaida Road stands a little red farmhouse, home to Tolo Cellars. Josh Gibson,

proprietor and winemaker, offers a sumptuous array of wines including Zinfandel, Cabernet Sauvignon,

Tempranillo, Barbera, and exotic Rhone Blends all sourced from vineyards tucked away in the rustic hills,

where once frolicked the pioneers of the Adelaide Township.

This historically adventures area, marked by rugged terrain, offers ideal hillside conditions for vines

bearing hardy and distinctive wine grapes.

Josh's goals in winemaking is to allow these vineyards, each with its own "flora and fauna" to express

themselves in a glorious harmony. Thus, all his wines are fermented on native yeast, allowing the robust

and wild flavors of the vines to exude in the wines. The results are libations of uncommon depth and

mysterious character - much like the surrounding hillsides.

Josh opened his tasting room in 2005, though he was well-versed in the Far Out lifestyle long before

that. As assistant winemaker at Le Cuvier for several years, Josh learned the tricks of crafting high quality

wines in small lots, limiting production to just around 1,200 cases.
