19-31: CUCINA ITALIANA: Discover how a German – Italian aficionado can help you master the methods forcooking shrimp – as well as a traditional Italian dish – to perfection. Not only will we make (and eat) a tender, succulent, Shrimp Scampi entrée, you will also learn to make a delicious Zuppa Toscana (traditional soup of Italy’s Tuscany Region) from a patient teacher! Please join us as Jim demonstrates some basic cooking methods you’ll be able to reproduce with pleasure and ease in your kitchen to the delight of yourself and others! Limit of 10 participants. 19-32: PRESSURE COOKER COOKIN’: Admit it: many of us have scary memories of our mother’shissing pressure cooker. Today’s models are a far cry from those used in earlier days and aremaking a comeback because of the health benefits and because they reduce cooking times by up to70%. Instructor Jessica Krawczak shares her expertise, techniques, and tips for cooking great,healthy and tasty meals using a pressure cooker. Limit of 12 participants.

19-33: SEAFOOD COOKING FOR THE HOLIDAYS: Instructor Jessica Krawczak shares how simple and satisfyingcooking seafood at home can be. Jess shares tips for taking advantage of what’s available at the market, then walks you through in steps for preparing perfectly grilled shrimp, as well as Shrimp Scampi, and a delicious hot crab dip with toasted baguette. Learn great techniques for enhancing flavor—from cooking seafood for a crowd, to cooking an elegant holiday seafood dinner for two. She will highlight using marinades, glazes, and the right spices for each class of seafood. Limit of 10 participants.

19-34: CHRISTMAS PIEROGI EXTRAVAGANZA: Join Kamila in this Christmas tradition sharedwith family & friends. In this ‘hands-on’ class, you'll learn the tricks and techniques for preparing avariety of pierogi and the pure pleasure of making them (and eating them) from scratch. Surpriseyour relatives, your friends and yourself with a fresh take on the Polish tradition. We’ll make and dineon three types of these traditional dumplings, such as cheese and potato; mushroom and sauerkraut;and fish. Limit of 8 so register early! 19-35: GOT GAME? – VENISON INSPIRATIONS: If your freezer’s got game, but your recipe inspiration is as frozenas your meat, join this fun, food-filled, informative evening for great new wild game cooking ideas. Venison is tender, juicy, and delicious when properly prepared and its nutrition surpasses many other meats. Join Janet & Gerald Lucas, owners of Lucas Catering as they demonstrate delicious recipes for venison that ensure results with which you’ll be pleased and proud. PASTRY CLASSES 19-36: BREAD BAKING 101: If you've dreamed of making fresh-baked bread but don't know where to begin, join us

in this hands-on class as instructor Cindy Lucas and her assistant Kerrie Kamyszek guide you through the process for making great bread from scratch. Learn how to mix dough, proper kneading techniques and other essential steps such as proofing, shaping, and baking. Once you have a handle on the basics, you'll look forward to treating family and friends to loaves of beautiful home-baked bread. Learn fundamental skills for a lifetime of great bread baking. 19-37: NO BAKE DULCE DE LECHE-STYLE POLISH CHRISTMAS CAKE!: For those who don’tknow what Dulce de Leche is, you’ve been missing out a special and tasty dessert that is enjoyedin many different countries, including South America and Europe. Dulce de Leche means SweetMilk Jam. Join instructor Kamila Mazurek in this hands-on class as you learn the technique ofmaking this tasty, no bake Christmas cake named after the most famous Polish fudge candy,"Krowki". This scrumptious dessert uses mascarpone cheese, Polish-style fudge, and other yummyingredients. What a great idea for adding a new dessert to the holiday table! Students will makeand take their own no bake cake to chill at home. Please bring a chef's knife and apron. Limit of just 8 students!

HEALTH & WELLNESS 19-40: REFLEXOLOGY: Join Instructor Yvonne Robinson, a Massage Therapist of 18 years and graduate of IMI

(Irene Myomassology Institute). Yvonne is the Owner of Essential Therapies in Hillman, MI. Reflexology is a therapy based on the principle that there are specific areas of innervation in hands and feet that correspond to muscle groups or organs. In this system, nerve endings in extremities provide a "map" of the body. Through application of pressure on areas of hands or feet, reflexology is said to promote relaxation of tension, improvement of circulation, and support of function in the related area of the body. In this class, we’ll learn about the home treatment technique and how it can help you.

19-41: SEEING COMEDY IN LIFE TO AVOID ANXIETY, DEPRESSION AND ANGER: “Getting acomedic view of your situation gives you spiritual distance,” Joseph Campbell. This class exploresthe idea that negative emotions are not the result of external circumstances, but how we choose toperceive a situation. Everyone has a sense of humor; it may be either very acute or need work.Learn about the irrational thoughts we all engage that make us miserable. Instructor Joe Garant,LPC, is a licensed counselor. He is currently the Rehabilitation Coordinator and Employee Assistance Counselor atNEMROC in Alpena. Joe will present a PowerPoint that is both informative and entertaining.

19-42: HAND-CRAFTED SOAP – THE NATURAL WAY!:Join Instructor Kira Bixel, co-owner and operator of Bixel Family Farm, Cold process soap-making is one technique used in making custom soaps from scratch. This demonstration class offers the basics, so you can leave with enough information to try soap making at home. Learn step-by-step how to make a batch of cold process soap. During class you will learn safety tips and practices, how to properly handle sodium hydroxide (the basic chemical process of soap), how to customize with color, scents and additives, options for molds and what to do after

your soap saponifies. Each student will take home two bars of seasonally scented soap. Limit of 10 students.

19-43: SELF-MASSAGE TECHNIQUES and QI GONG: Fascia is throughout the body and it isdesigned to connect and protect. This connective tissue influences how we move, feel and heal. QiGong is an ancient art that combines meditation, breath awareness and gentle movement. In this classwe will explore self-massage techniques as a compliment to gentle ranges of motion. This class isideal for anyone who desires freedom from pain, improved function, and enhanced well-being.Instructor Desiree Nowaczyk is a Licensed Physical Therapist Assistant, Certified Stress Management Coach, HolisticWellness Coach, and Personal Trainer. ARTS & CRAFTS 19-44: PERSONALIZED BASKET WEAVING –for BEGINNERS: Instructor Diane Kamyszek has been making

baskets for decades and teaching for 20 years. Diane is an energetic, fun, and enthusiastic instructor who enjoys sharing her skill and love of this decorative, useful craft. In one pleasant evening, with the instructor’s assistance and hands-on guidance, you’ll create a lovely hand-crafted round basket with an 8" wood base using flat reed and embellished with curls (similar to photo). Learn new skills and techniques which can be used for the autumn season or any

classes, workshops upon request, custom work, and stained-glass repairs. Owner Tina Montgomery has been creating stained glass art for over 20 years. Join team members Alexis Werda and Lynn Beaudoin as they guide you in a hands-on class teaching proper techniques on how to create your own personalized snowman encased in a 6” ring (similar to the photo shown). This class is perfect for beginners. NOTE: This is a two-night session class requiring attendance to both sessions and is limited to 10 students. Students to enter using side door in alley. *Age Limit 15 years or older.

Join Shelia as hereasy-going yet detailed instruction guides you in creating mittens in a 2-needle knitting method. 19-47: SUNFLOWER WOOD PALLET PAINTING BOARDS: Tathia (Tasha) Lockhart is an Artist & Owner of MyFront Porch Décor by Tathia. At this fun hands-on class, students will learn techniques for creating a colorful, personally-painted art piece of Sunflowers! Tathia will guide you through all the steps to create your own personalized wood pallet art and you can use our stencils to make any design, famous quote, shape, or any creative part that awakens in you! We custom cut the pallet wood and stain it so that it’s all ready, and all supplies and artist instruction is included in the cost of the class. Deadline to register is Monday, October 28.

19-48: FAIRY GARDEN: Enchant your local fairies,children, and the inner-fairy in you! With Doug’s expert, hands-on guidance you’ll create your personalized, charming Fall Fairy Garden to take home. This can be a starter garden to which you add as you desire. Choose from three (3) items: door, fairy and a

miscellaneous item. Enjoy a delightful evening with our favorite gardening expert and designer, Doug Pratt, with discussion, laughter, enchanting new friends and possibly some magical ones, too! Age limit 10 and older. Any additional fairy garden items are available for purchase.

PHOTOGRAPY 19-53: LIGHT PAINTING PHOTOGRAPHY: Join Tom Sherrill-Mix, a professional photographer in “Light Painting

Photography, an imaging technique that uses a moving light source to add light to an under-illuminated subject while taking a long-exposure photograph. The light painting techniques involve opening your camera’s shutter. It has to be long enough for you to ‘paint’ in the dark with a light source. A scene or object can be brought to life by painting with a beam of light! In this 3 session class students will learn to create amazing images with light painting; making light trails, highlighting parts of your image, crazy spiral effects Join Tom as he teaches techniques which doesn’t require a lot of equipment! Students will

need to bring: camera (with manual settings), cable release, tripod and a flashlight.

ING Instructor/facilitator Dawn Stone is the Dean of Workforce Development of TAACCCT Grant at Alpena Community College and has been writing and managing grants for nearly 20 years. Stone has overseen nearly three million dollars from State and Federal sources. She received her BA from Michigan State University.

19-54: GRANT WRITING 101: Writing Winning Grants: Develop the skills to executesuccessful grant applications for any organization. This series will provide comprehensiveinformation about the granting process and address critical aspects of writing a fundableproposal. Learn to demonstrate strength and viability of your organization and how to give acompelling description of the situation your project will address. Understand essential components of grant proposals andhow to match a granters’ interests. The series is offered in ACC’s popular “Lunch Bites” for convenient, timely, valuableinformation and includes lunch.

19-55: SURVIVAL SKILLS FOR HUNTERS OR ANY OUTDOORSMAN: Join Bill Camp, a survival expert and NavyVeteran with years of experience. Bill is a freelance instructor and has taught classes in Kentucky. Join Bill and his assistant Lynda as they demonstrate survival skills. This class is designed specifically for building emergency shelters and how to start a fire without matches. This class is great for hunters or anyone interested in learning more about survival tips and techniques. Age limit of 15 years and older. Class seating is limited to 10.

Using soft wool, we’ll needle-felt a snuggly snowman, complete with adorable face and decorative hat and scarf. You’ll have a unique, personalized snowman which makes for a great holiday gift. While making your snowman and enjoying this fun class, you’ll learn the creative art of needle-felting, which can be used for many other beautiful projects. Instructor Shelia Robbins of Spruce Shadows Farms Yarn Shoppe, provides hands-on instruction in this limited class of 15.
