on a good quality pair not just for fashion.

Improve your heart health: take advantage of summer’s slower

schedule by using your vacation time to unwind. Vacations have

multiple benefits: They can help lower your blood pressure, heart

rate, and stress hormones such as cortisol, which contributes

to a widening waist and an increased risk of heart disease. And

leave the smart phone alone!

Resist the urge to stay up later during long summer days. Instead

pay attention to good sleep hygiene by keeping the same bedtime

and wake-up schedule.

It’s also a good idea to avoid naps during the day unless you take

them every day at the same time, for the same amount of time.

Make sure you buy a good quality sun tan lotion to protect your

face and exposed skin from the harsh summer sun. Also consider

giving your entire body a treat with a mineral boosting or hydrating

The use of the word flip-flop is a modern term dating from

the 1960’s that describes what is probably the oldest form

of footwear still being worn (the term flip flap has been

used in various echoic senses since 1529). Flip flops have

been around for at least six thousand years. As a point of

comparison, primitive shoes are shown in rock paintings

dating from the late Paleolithic (Stone Age) period some

15,000 years ago. The oldest surviving examples were made

from papyrus leaves circa 1,500 B.C. Ancient Egyptian

sandals were made from papyrus and palm leaves; rawhide

was used by the Masai in Africa; wooden sandals were

made in India; rice straw was used in China and Japan; the

leaves of the sisal plant provided twine for sandals in South

America; and the indigenous populations of Mexico used the

yucca plant.

Styles too varied with the differing placement of the toe

strap, as subsequent civilizations preferred using different

toes. The Greeks for example made use of the big toe; the

Romans, the second toe; and the Mesapotanians, the third

toe. These distinctive, physical entities were recognised

and captured in Egyptian statues, and this was thought to

represent the celebration of other cultures.

Legend has it that courtesans in ancient Rome arranged the

nails on the soles of their thongs to spell out follow me in the

dust of the street.

Given their long history, flip flops up to now have changed

relatively little from ancient times. Their simplicity is key.

In the USA, the first flip flops started to appear after World

War II as soldiers brought Japanese zori back from the war,

often as souvenirs. The precursor to the modern flip flop

really began to catch on, however, when soldiers returned

from the Korean War in the 1950’s during the postwar 1950’s

boom. Soldiers wore these predecessors to what we now

think of as flip-flops, which were cheap rubber editions that

frequently caused blisters and were so poorly made that they

didn’t last long.

As the footwear entered into American popular culture, it

became redesigned and changed into the bright colours of

Fifties design. As “pop culture,” flip flops became defining

examples of an informal lifestyle and came to represent the

California lifestyle in general and surf culture in particular.

Flip flops have become part of the fashion landscape as

much as athletic shoes, jeans and t-shirts. Now, many wear

flip flops all the time, replacing their trainers. A large push

of the conversion of flip flops into everyday life came from

Havaianas, the major Brazilian producer. For over three

decades, Havaianas were $3 Brazilian flip-flops of synthetic

rubber that were the footwear of Sao Paulo peasants,

housekeepers, dockworkers and other poor people. Sales

took off after supermodels such as Kate Moss began wearing

them and then they began showing up on the red carpet.

Flip flops now are seen on the fashion world’s catwalks.

Manufactured in bright colours for $6 -$15 a pair or studded

with Swarovski crystals for $150.

Recently, there has been wide media attention in the US

about whether flip-flops constituted appropriate attire to

wear to the White House to meet the president. Twenty years

ago, such discussion would never have been considered.

Fashion has been the key market driver for footwear. Over

the past few years, footwear has become a major fashion

item – not just a complementary product to clothing. Colour,

patterns, fabrics and styles have become much more

adventurous and styles change more frequently.

These simple little strips of rubber have been around since we were all kids and are no longer

reserved for just tossing into the suitcase for your summer holidays. It has to be said, they

have become, quite annoyingly, ‘the’ most popular footwear of all time for male and female

wearers. But why did it take so long, they have been around for quite some time ...

‘Footsteps of Thesiger’ - my book detailing our 44 day/1600 km

journey by camel and foot across the Empty Quarter in the trail of

legendary 1940s explorer Sir Wilfred Thesiger, forwarded by Sir

Ranulph Fiennes - was officially launched in the UAE and is now

available in book stores across the country.

For those in the UAE, there will be a number of public events

upcoming, and the documentary film of the expedition has been

purchased by Discovery Channel scheduled to be broadcast

worldwide in May.

tHe environMent

As an initiative of the school’s Eco Club, Liwa International

School, and in coordination with Abela Supermarket (Al Ain

Branch) has launched an eco campaign aiming at saving

energy through:

- Reducing the use of plastic bags in supermarkets

- Replacing plastic bags by used cardboard boxes

The above procedure will in the long run help save energy

and preserve the environment because recycling cardboard

uses less energy than making new cardboard, resulting in

less energy and fossil fuels being burned and less pollution

in the atmosphere.

The first stage of the campaign started on Friday the 8th

of March, 2013, and continued through Thursday the 14th.

Twelve groups of students (with 4 or 5 students per group)

took turns in visiting Abela Supermarket and approaching

the customers to encourage them to have their groceries

placed in recycled cardboard boxes rather than packed

into plastic bags.

The students did a fantastic job at raising

the customers’ environmental awareness

and convincing them to help save the

environment. They gave out informative

leaflets and explained the harm that

plastic bags have on the environment.

Now even when the students are not

in the supermarket, many customers

are opting for recycled boxes or

eco-friendly bags, which is an

accomplishment indeed.

Summer coolershealth boosting, fizzy and full of flavour

Check out the frozen fruit and fresh produce in Abela to make your summer coolers!

Fruity, sweet, tart and sparkling, here are some cool sippers

for summer. Some recipes have existed for many years, in fact

it was at the 1904 World’s Fair that Iced Tea became popular,

and Vendors in Paris - the “Compagnie de Limonadiers”

were selling lemonade on the streets in the 1600s from tanks

carried on their backs. Fortunately you can now make these

refreshers right in your own kitchen ... don’t be afraid of

experimenting with flavours in the quantities you prefer!

CRANBERRY AND GINGER TEA PUNCH

Cranberries are rich in antioxidants and phytochemicals,

substances thought to help promote a healthy immune

and cardiovascular system. For over 2000 years Chinese

medicine has recommended the use of ginger to help cure

and prevent several health problems. It is known to promote

energy circulation in the body while positively increasing the

body’s metabolic rate.

INGREDIENTS

[ginger, cranberry juice, lemon juice, sparkling water]

Boil filtered water and ginger and leave to steep for 2 hrs.

Strain and then add the cranberry and lemon juices, topping

up with sparkling water over ice. Add sugar syrup to taste.

LYCHEE AND MINT FIzz

Through the high content vitamin C content of the lychee

fruit, the fruit benefits those suffering from colds, fevers

and sore throats. Lychee also helps the body to digest food

properly for the best nutrition and an added boost of health

INGREDIENTS

[lychees, brown sugar, fresh mint leaves, crushed ice,

sparkling water]

Share mint leaves, lychee and sugar between four glasses.

Using a muddling stick or the end of a rolling pin, gently

pound the mixture until coarsely crushed. Add more fresh

mint leaves and top with crushed ice and sparkling water.

POMEGRANATE LIMEADE

Pomegranate aril juice provides about 16% of an adult’s daily

vitamin C (per 100ml), and is a good source of vitamin B5,

potassium and natural phenols. They are high in fibre too,

however, it is entirely contained in the edible seeds which

also supply unsaturated oils. Discard these and you forfeit

nutritional benefits conveyed by the seed fibre, oils and

micronutrients.

INGREDIENTS

[pomegranate juice, fresh lime juice, fresh mint leaves,

crushed ice, sparkling water]

In a large punch bowl, combine the pomegranate juice, water

and lime juice. Pour over crushed ice and garnish each glass

with a sprinkle of pomegranate arils and a mint leaf.

ICED LEMON GREEN TEA

Surely no one is a stranger to the claims of green tea

nowadays ... with its potential to fight cancer, heart disease,

lower cholesterol, burn fat, prevent diabetes and stroke, and

even stave off dementia.

INGREDIENTS

[green tea, brown sugar, fresh lemon, crushed ice, water]

Brew the tea (1 bag per glass) and in a large jug place sugar

to taste and add water. Stir until the sugar is dissolved. Pour

tea into mixture and stir. Serve over ice with a sprig of mint.

For a tangy alternative, add fresh lemon juice.

There’s usually a couple of activities that spring to mind when you mention

Holland’s historic capital city of Amsterdam. But if you can drag yourself

away from the coffee shops and ignore its infamous ‘party town’ image,

you will discover a city bursting art, life and creativity of a different kind.

Amsterdam is the largest city and capital of the Netherlands (not

Holland. Interestingly, Holland is the name given to two provinces of

the Netherlands, Noord and zuid Holland, which are Western coastal

provinces. These were once the two most powerful provinces of

the nation, as it is from here that the Netherlands projected her

naval might. It is also probably for this reason that everyone calls

it “Holland”, however, The Netherlands is the real name for the

country, which is derived from the Dutch name: Nederland).

Amsterdam’s name is derived from Amstelredamme, indicative of

the city’s origin: a dam in the river Amstel. Settled as a small fishing

village in the late 12th century, Amsterdam became one of the most

important ports in the world during the Dutch Golden Age, a result

of its innovative developments in trade.

During that time, the city was the leading centre for finance and

diamonds. In the 19th and 20th centuries, the city expanded, and

many new neighbourhoods and suburbs were formed.

As cities go, Amsterdam has to be one of the most diverse in its

ethnic composition ... with a population of over 800,000 inhabitants

the city consists of 49.5% people with Dutch ancestry and a

staggering 50.5% people of foreign origin. The signs of which

are visible throughout the city’s architecture, markets and in the

amazing variety of food on offer. There really is never a dull moment

in Amsterdam with something for everyone - guaranteed. Whether

you want to party or explore the historical sights, take in some of the

world’s most renowned masterpieces or learn all you could possibly

want to know about cheese, the city is packed full of things to see,

taste and experience - even if you only have 72 hours to do it in.

The newly renovated Rijksmuseum is an experience not to be missed

Bikes bikes are everywhere, but

beware!

possibly the way to end your life - quite quickly. Amsterdammers go

everywhere on their bikes, at speed. So when you step off a pavement

or walk in what looks like a pathway (but is actually a dedicated cycling

lane), keep you ears peeled for the rapidly approaching tinkle of bells and

ninja cyclists whooshing up behind you, swerving expertly around the

unwary. A few close calls with several of these speeding demons and

you will take my advice and join them on your own two wheels. With all

the bike rental shops around, it’s easy to gear up and take a spin, and

once you are used to the giant wheels of the iconic ‘oma bike’ (literally

translated as grandma bike) and backwards braking you are well on

your way to scaring the living daylights out of everyone too. Revenge is

sweet, just don’t ride too slowly, the locals have no patience for dawdling

tourists on foot or on a bike!

If cycling is not your thing, you can always take a tour of the canals in

a long glass-roofed boat. With its canals and its massive harbour, this

city reclaimed from the sea offers countless opportunities to drift along

its winding canals. The captain expertly negotiating the waterways and

small bridges, turning on a sixpence to just about fit through some of

the smaller archways beneath camera toting tourists jumping out of the

way of a crazy cyclist no doubt. At least here you can find some peace

away from the crowds and dinging bicycle bells, just choose the one

that suits your budget and occasion. There is a mind-boggling array of

cruises to choose from - from all you can eat and drink, gourmet dining,

live band, open-air, closed roof, night time ... the list goes on. You can

even create your own sightseeing tour with hop on and hop off boats like

the Canal Bus. The stops are located near museums, shopping districts

and tourist attractions. Just buy your tickets online and off you go. For

the environmentalists you should seek out the Canal Company, the

first passenger cruise company in the world to receive a “Green Key”,

the official international eco-label for sustainable and Corporate Social

Responsibility. The “Eco Pier” at Damrak opposite Central Station is the

starting point of clean, zero emission canal cruises.

Whatever transport you choose there is nothing like exploring on foot.

You can take a guided group tour if you fancy someone explaining the

sights and if you enjoy being shepherded by a flag being waved on a

stick but if like me you prefer to deviate from the tourist traps and leave

things to chance you might discover much more than Amsterdam’s

obvious landmarks.

the market

Intensely coloured tulips brighten the greyest of

wintery skies

Like coming across old bridges with curious rows of padlocks adorning

the chains. Apparently these dangling lines of “Love locks” are engraved

with names and left by couples as a symbol of their love.

The real advantage of strolling your own path though has to be coming

across countless markets - junk, art and produce - or following the waft

of something delicious-smelling down a narrow alley.

There are several things you must try as you amble along, one is a paper

cone of Vlaamse Friet or Patat as they call them in Dutch. Fresh cut

fried potatoes, not your frozen ones from FEBO, are topped with huge

dollops of Dutch mayonnaise (the difference between Hellman’s and this

stuff is obvious as soon as you taste its creamy smooth richness), curry

or peanut sauce and diced onions. My mouth is watering at the thought

and just like me your hands will be smothered in the condiments as you

delve to the bottom of the cone for the very last morsel with a fork too

short to reach it. For the ultimate healthy meal, try the frikandel speciaal

with curry ketchup, mayo and onions slathered on a frikandel sausage,

and order a side of patat to dip in the leftover sauce.

Next up, try to find a street café, you will usually find some wonderful ones

with terraces around the markets and churches. Look for the Appelgebak

with slagroom chalked up on the board and the longest queue, as the

Dutch love this pie and will squeeze into the smallest spaces to eat it.

Order a koffie and a piece of this heavenly pie and you will soon find out

why. It resembles the taste and texture of a shortbread crust, is packed

high with baked sliced apple and spiced with cinnamon and brown sugar

with a swirl of fresh cream on the side. Lekker!

You will have guessed by now that any visit to Amsterdam has to

be prepared for by losing 3 kilos prior to departure as you will no

doubt be putting them on when you are there. Which leads me nicely

into another popular sweet snack, poffertjes. The aroma of these little

discs of hot fluffy pancake cooking at the market stall will have you

following it like the Bisto kid. These are best described as miniature

pancakes but they are much more than that. They are a traditional

Dutch batter treat made with yeast and buckwheat flour and unlike

other pancakes, they have a light, spongy texture and are served with

powdered sugar and butter, and sometimes syrup. Eat them with your

plastic fork from the cardboard tray just like a local as you look for

your next treat. But watch out for the powdered sugar blowing up in

your face on a windy day, it’s a dead giveaway!

More typically, Dutch snacks you must try whilst in Amsterdam are

kroketten and bitterballen. These deep-fried breaded rolls are filled

with creamy meat ragout and eaten with a quick dunk in mustard or

sandwiched between a fresh white roll with a squidge of mustard on

top. Beware your fingers, lips and sensitive skin though. They have a

nasty habit of staying fiercely hot even after you think it’s safe to bite

or prod your finger into one - a long story, but suffice to say I learned

my lesson the hard way.

The Dutch love their fish and love or hate the idea, nieuwe haring

should be tried before you decide it’s not for you. This is the Dutch

version of sashimi and is a staple in many Dutch people’s diet.

Around for many centuries this is a very traditional food in the

Netherlands and found at most food markets. Typically served with

chopped onions and pickles, it can be eaten with or without bread.

Strictly speaking, herring should only be called Hollandse nieuwe

if caught between May and July. The fish should also be prepared

according to the Dutch tradition where the freshly caught fish are

gutted onboard the fishing boats, leaving the pancreas in the fish.

The pancreatic enzymes perform much of the preservation of the

haring, so that the brine they are kept in needs less salt.

Dutch herring are traditionally eaten by holding the fish by the tail

and dunking it into your mouth with your head thrown back but

if that doesn’t sound appealing, it can also be eaten in bite size

pieces or on a sandwich called broodje haring.

If you visit during winter, stamppot might just be the epitome of

Dutch cuisine. Hearty, nutritious, and tasty but not exactly what one

would call haute cuisine, stamppot boerenkool (kale and mashed

potatoes) is arguably the most popular version of this filling meal

and is served with smoked sausage (rookworst). If you’re not lucky

enough to know a local who can cook you this tasty meal in their

kitchen, you can try it at several places around Amsterdam like

IJscuypje - ice-cream shop in summer and stamppot cafe in winter

- genius. And if you just want the sausage, go to department store

HEMA, and ask for a hot half sausage on a white roll with a squeeze

of mustard. Just to die for, I promise you.

Food plays a huge part of any visit to Amsterdam, well it does for

me but if you are not looking to gain as many kilos as I did, then you

can take in all the usual sites like the Amsterdam Stock Exchange,

the oldest one in the world, take in a concert, visit the Rijksmuseum

(bookings essential!!), the Van Gogh Museum, Stedelijk Museum,

Hermitage Amsterdam, Anne Frank House, Amsterdam Museum,

explore Chinatown or sit on a terrace a watch the very busy world

of Amsterdam pass you by ... phew, the list is endless but there will

never be a dull moment. And always something to eat.
