blow of not only almost losing Valentino but Michelle also coming face to face with death.

First, Valentino was diagnosed with the cancer that had grown into a large tumour in the nerve tissue around his neck. When an operation to remove it was deemed too dangerous, doctors endeavoured to shrink the tumour through chemotherapy.

“The first four bouts of treatment failed,” recalls Jean-Christophe. “It was heartbreaking. He was only a baby and the only way he could communicate was through his tears.”

‘A DARK TIME’While the devoted dad looked after their eldest sons, Michelle, 42, never left Valentino’s side at Addenbrooke’s Hospital in Cambridge. Then she developed a life-threatening condition, too. On 22 February – Jean-Christophe’s 56th birthday – she was rushed to hospital with deep vein thrombosis. If the blood clot had reached her heart or brain, she would have died.

“It was a very dark time,” recalls Jean-Christophe. “I had to try and stay calm and be there for her and the boys.

“I realise now that the trauma we went through changed me. I had everything I’d ever wanted – a beautiful ‘wife’, a daughter and three sons – then faced losing two people I loved most.

“The agony and uncertainty drained me; I lost my spark. Even after they recovered, I kept asking myself, ‘What if the result had been different?’

“But then I see my boys playing together and Valentino growing stronger, and I take each day at a time. I don’t take anything for granted.”

The chef, who found fame on shows including Culinary Genius and Hell’s Kitchen and runs his Novelli cookery academy from their Hertfordshire home, put his career on hold during this dark period.

But after Michelle made a recovery, and two more courses of chemotherapy succeeded in shrinking Valentino’s tumour, the family flew to their home in Austria to celebrate a very special landmark: Valentino’s first birthday.

Happily, he’s now in remission and, with his feeding tube removed, there’s no holding him back. “He’s on the cusp of walking,” says Michelle. “He pushes his trundle so he can pad

around and loves to shout with his brothers. When he sees them, his face lights up. They adore him and their chatter sends him into fits of giggles.

“He’s trying to talk but is coming out with funny baby babble that’s so sweet. He’s a determined little soul and such a strong character. I wouldn’t be

surprised if he takes his first steps on Christmas Day.”

Beaming with pride, Jean-Christophe says: “He tries to climb the stairs and kicks a football around with his brothers. When they’re at school, he’s with us at home and tells us what to do. He’s growing stronger every day. Remembering how awful it was when he never smiled during his treatment, his laughter is the best sound in the world.”

Life has taken an upward turn for Jean-Christophe’s business, too. The award-winning chef has opened a new cookery academy at The Corran Resort & Spa in south-west Wales, where our shoot takes place.

Surrounded by beautiful countryside and coastline, it’s an idyllic area. “We all adore it here,” he says. “I fell in love with Wales.

I adore being near the ocean. It has fresh produce from the sea and the land, which I plan to use in my academy. The boys can run around and make a noise in the wide open spaces.”

It will be a white Christmas for the family, who will spend the festive break at their home in snowy Austria.

They have plenty to look forward to in the New Year, too. As well as opening his first restaurant in Northern Ireland – Novelli at City Quays at the Marriott Hotel in Belfast – in April, the chef will finally walk down the aisle with Michelle.

“We’ve been too busy to organise a wedding,” says Michelle. “But now Valentino is becoming more robust every day, it’s given us the incentive to make it happen.

“Seeing him as a little pageboy alongside his brothers will be so sweet. With him in our lives, we thank our lucky stars every day.” H
