Time has flown as we head into September, and it has been around two

weeks since we re-opened our revamped 8th Floor facilities. I hope that our

Members are all enjoying a brand-new entertainment and dining experience,

and have had the chance to take in the inspiring harbour view accessible in

certain areas on the floor.

Diners have been treated to succulent steak and seafood dishes at our

new Dynasty Steak House, while Members have been eating to their heart’s

content at Dynasty Café which serves delicious local delicacies. Meanwhile,

Lobby Lounge has kept everyone relaxed during their leisure time amidst a

comfortable ambience.

In step with promoting a fit and healthy lifestyle, we have equipped our

new-look gym with state-of-the-art Technogym equipment that stores your

personal data, providing you with a more customised workout to help you

attain your fitness goals more efficiently and effectively.

In addition, three mahjong rooms are now available for Members to

enjoy their favourite game in the company of friends. Finally, you can also

find a multi-function room with karaoke equipment, as well as a game room

that is perfect for hours of entertainment for your children.

時光飛逝,隨著9月的來臨,我們會所八樓的設施現已重新投入服務差不多兩星

期,我希望會員盡情享受嶄新的娛樂設施和餐飲體驗的同時,亦能夠在絕佳位置

Lunch and dinner are served daily. On Sunday afternoons, we

offer a special “Sunday Brunch” featuring a wide variety of irresistible

appetisers, salads, selected seafood, foie gras, main courses and

homemade desserts.

In mid-August, we jointly hosted a talk on US beef and a Californian

wine tasting session with the US Meat Export Federation and Watson’s

Wine. Members who attended savoured prime grade beef and different

flavours of Californian wine. It was indeed a special experience for all!

For those who missed it, do not worry as we will stage a similar event on

Australian and Canadian beef in the near future. Stay tuned!

Dynasty Steak House Manager Allen LauWith valuable experience gained from different aspects of the restaurant

industry, Allen Lau is fully prepared to step into the role of Dynasty Steak

House Manager. Previously, Allen has worked with the Hyatt Group for

many years.

Allen has also worked with Michelin-starred chefs, and provided many

memorable culinary experiences to the guests. He and his dynamic team

have put in tremendous efforts towards the ultimate goal of being the best

steakhouse in town.

Executive Chef Leung Kar CheeSeasoned Western Executive Chef Leung Kar Chee brings a wealth of

culinary experience to his new role, highlighted by his tenure at The Steak

House and SPOON by Alain Ducasse at the InterContinental Hong Kong. The

Dynasty Steak House menu resonates Chef Leung’s passion for cooking and

fondness for sumptuous cuisine. In addition to steak and seafood, he has

also created popular slow cook dishes and hopes to provide members and

guests with a new perspective on relish.

In the lead-up to the restaurant’s launch, Chef Leung and his team

members have developed chemistry essential to creating culinary

masterpieces. This bodes well for diners who can expect nothing but a one-

of-a-kind dining experience at Dynasty Steak House.

Dynasty Steak House經理劉家威劉家威在餐飲業不同領域中俱有寶貴管理經

驗,在履任Dynasty Steak House經理一職前。他

曾在凱悅集團服務多年。

在過往工作中,他曾與不少米芝蓮星級大廚

合作,為客人締造不少難忘飲食體驗。家威和

他充滿活力的團隊,抱着共同目標把餐廳打造

為城中最佳扒房。

西餐行政總廚梁嘉志本 會 新 任 西 餐 行 政 總 廚 梁 嘉 志 擁 有 豐

富烹飪經驗,他曾於香港洲際酒店扒房

SPOON by Alain Ducasse任職。在他新編的

Dynasty Steak House菜單中,可以體會到梁師傅

Rainfall in July enabled the grapes to ripen better, while warm weather in mid-

August allowed the grapes to change their colour.

High time to indulge in these sumptuous crustaceans

Nobody says no to hairy crab! Did you know that the taste of this delicacy is

influenced by the different months of the hairy crab season and its gender?

According to Chinese tradition, pick the female crab in September for its

abundance of sumptuous crab roe. In October, select the male crab for its

succulent texture and crab roe that tastes even more delicious than the

female’s during this time.

Which is more delicious? All Members are welcome to taste our carefully

selected seven taels crab imperial, and decide according to your preferences.

This month, feast on our exclusive hairy crab with exquisite dishes by

Executive Chef Vincent Wong including his signature Steamed Minced Pork

and Crab Roe Dumpling, as well as Scrambled Egg White with Crab Roe topped

with Chrysanthemum Petals.

Executive Chef Vincent Wong has created a variety of

tempting poultry dishes including the Deep-fried Chicken

Coated with Sesame, Deep-fried Deboned Chicken Stuffed

with Minced Shrimp and Almond Flakes, or the Deep-fried

Baby Duck.

A fusion of dishes herald the makeover of a Dynasty Club favourite

The former Café Royale has now opened its doors as the new Dynasty Café. Located

on the 8th floor, this newly renovated eatery offers the best mix of traditional Hong

Kong-style Western food and sumptuous cuisines from the East and West. Enjoy freshly

cooked congee and Canton-style fried noodles, prepared by our exceptional chef Kung

Tsan On. Signature dishes include hand-chopped meat ball congee, stewed brisket and

deep-fried foie gras dumplings. You can’t possibly say no to such tempting flavours!

When you think about Hong Kong-style Western cuisine like Swiss chicken wings,

Portuguese-style baked chicken with rice and baked pork chop with rice, the first place

that comes to mind is Tai Ping Koon Restaurant. Good news! At Dynasty Café, your food

is prepared by none other than a chef from the much-loved Hong Kong restaurant. Chef

Chan Kwong Ming brings with him 10 years of culinary experience, but has kept the

classic tastes of perennial favourites in the menu, such as Hainanese chicken rice and

tender curry beef brisket.

At Dynasty Café, you can look forward to a wide variety of food choices. It is the

Christmas packages

Our festive packages, specially prepared to celebrate the Yuletide season,

include a choice of buffet or set menus featuring traditional Christmas

dishes. Members can choose between a lunch package from $488 per person

inclusive of a two-hour beverage package, or alternatively, they can select

the dinner package from $638 per person that comes with a three-hour

beverage package.

To spread the good cheer even more, a host of complimentary extras

will be provided including fresh floral arrangements and party favours for

each banquet table. Each table reserved will also receive a free parking

voucher (two hours of free parking for lunch and three hours for dinner).

For reservations of 80 persons or more, we will provide a complementary

8’ X 15’ red backdrop with golden wording in English or Chinese.

Year End & Spring Dinner packages

Toast to a successful close to 2013 and herald the coming of spring in grand

style with our exquisite Year End and Spring Dinner packages that are certain

to bring out the best in both occasions. Select your favourite delicacies with

our tailor-made Chinese menus from $6,688 per table of 10 to 12 persons,

complete with three hours of unlimited serving of soft drinks, chilled orange

juice and house beer. Other privileges you can enjoy are complimentary

Chinese tea, fresh flower arrangements and a three-hour free parking

voucher for each banquet table, and an exclusive house wine offer of $108

Ingredients1 Grass carp head (approximately 1 catty 4 taels)

Scallion (10 - 12 pcs)

Garlic cloves (10 - 12 pcs)

Ginger (5 - 6 slices – thick)

Dried mandarin peel (1 pc)

Spring onion (2 pcs)

SeasoningsPart One Part Two

Salt (1/2 tsp) Shaoxing Yellow Wine (a dash)

Castor Sugar (1/2 tsp)

Chicken Powder (1/2 tsp)

Corn Starch (3 tbsp)

Dark Soy Sauce (1 tbsp)

Oil (2 tbsp)

Oyster Sauce (1 tbsp)

Method1. Chop the ginger into thick slices, then

into cubes.

2. Soak the dried mandarin peel until soft,

then mash into a paste.

3. Peel the scallion and garlic.

4. Finely chop the spring onions.

5. Wash the grass carp head and cut into

pieces. Wrap with a clean towel or

kitchen paper to absorb the water.

6. Combine seasonings from “Part One”

with the dried mandarin peel paste.

Leave it for 2 minutes.

7. Heat the clay pot until very hot, then add

2 tablespoons of oil. Add the scallion,

garlic and ginger cubes, then place the

grass carp head pieces on top. Cover with

the lid.

8. Cook for 4 minutes on high fire, then

reduce to small fire for 5 minutes. Open

the lid, add the spring onions and cover

the lid again. Pour the yellow wine on the

cover and your dish is ready to be served!材料 大魚頭1個 約1斤4両

做法1. 薑先切成厚片,再切成粗粒。

2. 陳皮浸水變軟後,剁成幼蓉。

3. 乾葱和蒜子原粒去衣。

4. 青葱切成葱花。

5. 把大魚頭洗淨,切件,用乾淨毛巾或廚房紙

巾吸乾水份。

6. 加入調味料備份一及陳皮蓉拌勻,醃2分

鐘。

7. 燒紅砂煲,生油2湯匙放入砂煲,爆香乾

葱、蒜子和薑粒後,在上面排放魚頭,蓋上

煲蓋。

8. 先大火煮4分鐘,然後轉至小火煮5分鐘,揭

起煲蓋放下葱,再蓋回煲蓋後,把花雕酒灑

往煲蓋上即成。

Chinese Executive Chef Vincent Wong and Dim Sum Cook Ng Sing Yee held a fascinating

cooking demonstration on pan-seared minced pork dumplings on 20 July. Following

the demonstration, Members made their own dumplings that tasted just as good as our

master chefs.

Christian Bouvet, Domaine Jacques Prieur’s Ambassador, graced our

wine dinner on 21 June. He spent time with our Members who sampled

the finest wines, taking their time to appreciate the bodies and textures

of the different selections. Everyone agreed it was a very enjoyable

experience.

The Wither Hills & Wild Mushroom Wine Dinner held on 12 July was

an unforgettable night for our Members. They enjoyed two different

themes including Wither Hills wine from New Zealand, which was paired

with a feast of wild mushroom dishes from Yunnan. The Club extends

its gratitude to Ms Sally William, wine maker of Wither Hills, and

Ms Winnie Wong Sze Man from J’s Garden Wild Mushrooms, for

co-hosting this excellent dinner for us.

Following weeks of inclement weather, we unfortunately had to cancel an outing in June. On 12 July, the weather was hot but the

golfers found the wind helped them sail through the game. Everybody had an enjoyable day and look forward to the next game.

Embark on one of the most unique and fascinating expeditions you

will experience on board the Sampo, the renowned tourist Arctic

icebreaker. Built in 1960, the ship spans 75 metres in length with a

displacement of 3,540 tonnes. It can break through ice up to 8 metres

thick and has been a favourite of tourists for over 40 years.

Sampo will drive tourists through the icy waters in Kemi, Finland

of the northern Gulf between December to April. During the four-hour

expedition, visitors can witness the spectacle of the icebreaker struggle

against nature’s ice-covered waters. The base of the icebreaker forms

a circle cutter design bearing a weight of 5,000 tonnes that enables it

to break through 2-metre thick layers of ice. Tourists can also visit the

icebreaker turbine room to learn more about the powerful engine’s

operations with the ship’s captain.

The climax of the journey is ice drifting, wherein participants wear

special warm rubber waterproof clothing covering the entire body,

then jump into the newly broken ice-covered waters. As a special treat,

Sampo will award certificates to participants to commemorate this

unforgettable experience.

踏上全球著名的觀光破冰船「三寶號」(Sampo),展開一場最獨特與引人入

勝的探險之旅。「三寶號」建於1960年,船長75米,排水量3,540噸。它可

以突破厚達八米深的冰層,在過去40多年來一直備受遊客青睞。

「三寶號」將於12月到4月期間,承載遊客穿越冰冷水域,暢遊芬蘭北

部海灣凱米。在四小時的探險旅程中,遊客可親眼目睹破冰船與自然界冰封

水域搏鬥的奇景。破冰船的底部設有負重5,000噸的圓刀設計,使它能夠突

破兩米厚的冰層。遊客還可以參觀破冰船渦輪機室,與船長了解更多有關這

強大引擎的運作。

旅程的高潮是冰上漂流,參加者會穿著覆蓋全身的特製防水保暖橡皮
