Please support Elaine Ramsey’s Cancer fundraiser at Crooble this weekend, should be a great family day with plenty to entertain us. As always, a huge bouquet to the organisers of the ANZAC services around our community, the numbers keep growing every year and the services were beautifully put together again this year. Oh, and I cant go without wishing us some wet stuff.. � Don't forget on the 11th June The Croppa Creek Classic will be held on the oval and surrounds. This event will showcase historical machinery and equipment that helped shape the agricultural scene that we know today. If you are interested in helping us out by perhaps putting on display some of the "old" homewares that you might have in the cupboard or out in the shed that might be of interest please feel free in bringing that along. Also if you want to hold a store of some sort in the community hall you can do that as well. Stallholders will be charged $15 stall fee. Bring along those homemade jams, pickles, cakes, jewelery etc and see what you

Grant applications now open

The NSW Department of Family and Community Services (FACS) funds Carers NSW to provide grants of $250 to carer support groups and organisations, to plan events and activities for carers during National Carers Week which runs from Sunday 16 - Saturday 22 October 2016. Organising an event is a wonderful way to give family and friend carers a much needed break from the responsibilities of their caring role and to acknowledge the contribution they make to the community. Many

events attract new members to carer support groups and are a great way of reaching out to hidden carers in your area. Grant applications are open until 5.00pm on Monday 4 July 2016. You can apply online or email [email protected] to request a printed copy of the application form. You will be notified of the outcome of your application by Friday 12 August 2016. If you are applying for a grant on behalf of a carer support group/organisation that does NOT have an ABN,

you are required to submit a Statement by a supplier formand a Donation Application form with your grant application, these forms are available on the Carers NSW website. Please send your completed forms [email protected] or PO Box 785, North Sydney NSW 2059 by 5.00pm on Monday 4 July 2016.

RECIPE OF THE

MONTH Lemon Ricotta Cheesecake

Ingredients

•1-1/2 cups crushed vanilla wafers (about 45

wafers)

•1/4 cup butter, melted

•1 teaspoon grated lemon zest

•2 pounds fresh, whole-milk ricotta cheese

•2/3 cup white sugar

•1/3 cup all-purpose flour

•6 eggs

•1/4 tspn ground cinnamon

•2 tspns grated lemon zest

•2 tspns vanilla extract

•1/8 teaspoon salt

Preparation

1.In a small bowl, combine wafer crumbs, butter

and lemon peel. Press onto the bottom of a

greased 9 1/2-in. springform pan. Bake at 325∞ F

for 12-14 minutes or until lightly browned. Cool.

2.Meanwhile, in a large mixing bowl, stir ricotta

with a rubber spatula until it reaches an extremely

smooth consistency. Add the sugar and flour into

the ricotta, mixing thoroughly.

3.Stir in the eggs 1 at a time. Next add in the

vanilla, cinnamon, lemon zest, and salt. Mix well.

Pour batter into crust.

4.Bake in the center of the oven for about 75 to

90 minutes at 300∞ F, un�l the cake is a light

golden color. When it's ready, the center should

be fairly firm, and the point of a sharp knife

inserted in the center will come out clean.

5.Cool cake on a wire rack. Cover, and chill till

serving time.
