Pre-ConventionWorkshop andSan Diego WineTasting ExperiencePre-Convention Workshop and San Diego Wine Tasting Experience

WEDNESDAY – JULY 12, 2006 from 9:00 AM – 4:00 PM

The pre-convention workshop, “Creative Flavor Solutions for Injecting andTumbling,” will be held at the San Diego Wine & Culinary Center. Theirauthentic wine cellar atmosphere and beautifully appointed demonstrationkitchen in a central downtown location just steps from the Convention Center,the Gaslamp Quarter and Petco Park, make the San Diego Wine & CulinaryCenter the only stop for wine and food discovery. You will learn techniquesfor adding value to your current meat products, how to add new products toyour current line, while maximizing the productivity of your processingfacility by using your injector and/or tumbler.

At this workshop, Jay Hall, Excalibur Seasoning Co. Ltd., Pekin, IL, and DougRock, Koch Equipment LLC, Kansas City, MO, will inject turkey, beef and porkto make products such as Texas style briskets, corned beef and pastrami.Additionally, they will tumble boneless skinless chicken breast, pork andbeef cuts, and some fish or seafood products.

Your instructors will also lead a discussion on the difference betweensoluble seasonings for injection and marinades for tumbling as well as whysome muscles must be injected instead of tumbled only.

Lastly, learn the difference in muscle structures and palatability, why avacuum is used in tumbling, why phosphates are used, and how to utilizeother non-meat ingredients.

After you’ve worked up a great appetite, step out onto the patio and enjoya pig roast luncheon, compliments of AAMP member and CaliforniaAssociation of Meat Processors’ (CAMP) Immediate Past President, Mr.Jacob Kappeler, T & H Prime Meats and Sausage, Inc., San Marcos, CA.Served along with the main entrée, these side accompaniments; Rigatoniwith Marinara Sauce, mixed green salad and rolls.

American Cured Meat Championship (ACMC) Awards Watch the grins and the tears as the American Cured MeatChampions are crowned and presented with their awards, andthe Cured Meats Hall of Fame Doors open to another deservingmeat processor.

AAMP Business MeetingA few words from AAMP’s Executive Committee, an overview ofelections, and most importantly, a critical report on the state ofthe small plant operator in the meat and poultry industry.Awards are presented at this session for the Stephen F. KrutScholarship, the Accomplishment Award, winner of the BestMultiple Booth and Best Single Booth, and AAMP’s mostprestigious award, the Achievement Award.

Plant Tour – “Show & Tell”Sit back and see firsthand the many applications this operatorhas to share that made his business a successful one. John EddWampler, President of Family Brands International (FBI), will betaking you on a seated tour including slides and video clips.Family Brands produces a full line of ready-to-eat meatproducts including hams, franks, bologna, chili, barbecue, andribs. FBI also produces some products that are not ready-to-eat products, such as bacon and bone-in hams. They markettheir products under several of their own brand names andmany private labels.

John Edd will additionally tour you through Wampler’s FarmSausage Company, which produces hot-boned whole hogsausage products including rolls, patties, links, and dinnersausages (brats, Italian, etc.). Wampler’s also has a newsausage gravy as well as sausage biscuits. Their primary brandis Wampler’s Farm, but they also pack several private labelbrands for both food service and retail.

Everything You Wanted To Know About MeatProcessingFrom proper use of casings to a better understanding ofthermal processing. This is an audience participation event. Thebetter the questions, the better the session! USING THE METROPOLITAN TRANSIT SYSTEMOften called San Diego’s “moving landmark,” the Trolley is also a funway to get around, whether traveling to the International Border, orheading to Centre City’s shopping and historic attractions. A trolley stopis at Fashion Valley which is located directly in back of the Town &Country. Fares can run from $1.25 - $3.00 depending on the amountof time your trip entails.
