Unless the Lord builds the house, those who build it labor in vain. Unless the Lord watches over the city, the watchman stays a wake in vain.

In Scripture, we find numerous references to a watcher mounting the city walls to watch over the city. His job was to sound the alarm of danger from outside the city walls, as well as from inside. He was situated on a spot from which he could monitor the approaches to the town. If a threat appeared, he would sound a warning and the town would shut its gates and prepare for battle.

The watcher stood vigil over the daily life of the city. He could see much of the activity in the streets and markets. He knew the people, their work, their habits and their lifestyles. In the third chapter of Ezekiel, God uses the term “Watchman” as someone who is to warn the People of God against a coming destruction unless they change their ways.

The City of Memphis is blessed to have Watchmen from the mold of Ezekiel on almost every street corner. The preachers and rabbis of our city speak to their congregations weekly with a call to love God and love what God loves. This call is personal; it is a call to each of us to understand the ways of God, which leads to the caring for the less fortunate among us. It’s this individual calling lived out sacrificially for the benefits of others that effects change in the lives of others as we collectively join with each other to love and care for the less fortunate of our city.

This past week, a surprise dinner was held at Bridges to honor one of Memphis’ Watchmen. Ken Bennett, who 28 years ago with a personal calling to love the less fortunate of Memphis, hit the streets of the Foote and Cleaborn Homes communities with nothing more than a basketball and the desire to make a difference in the lives of the street kids of this at-risk community. He became the Watchman of this community and has led a generation of children to a

better life. His personal calling motivated others to join him and Streets Ministries was born. Now, 28 years later, it is one of our city’s most dynamic ministries to at-risk children.

Streets now operates out of two 35,000 sq. ft. facilities that offer computer labs, video game rooms, gymnasiums, recreation rooms, meeting rooms and lounges. The facilities gives the children of Streets a safe, nurturing environment to spend their school day afternoons. In the summertime, those who are not participating in the numerous camping opportunities provided by Streets have a place to go that keeps them from the troubles of their community. The education and spiritual growth being offered through the love of Streets continues to change lives while it offers volunteers the opportunity to love their God and the city He has placed them by loving the young people of Memphis.

Ken Bennett has recently stepped down from his full time responsibility of Streets in order to begin a ministry in leadership training. He is now the Executive Director of SOUL (Sending Out Urban Leaders) for the City. SOUL for the City’s mission is to recruit, train, and resource new leaders in order to impact the youth of Memphis.

The training of additional Watchmen will hopefully allow Ken to take what he has learned from his 28 years at Streets and equip other Watchmen to care for and protect Memphis.

Manna house

The

Peter Gathje works the living room at the Manna House as if he were greeting VIPs at a five-star hotel. He knows everyone by name. He cordially introduces his guests to one another and facilitates polite conversation. He patiently listens to guests’ narrating (at great length) their trials of the week. As his guests are offered more coffee and a seat at a lounge sofa, Peter makes a point to cheerily engage every person in the room and encourage them to take advantage of the Manna House’s spoils. However, Peter is not in trained in hospitality management. He is a professor at the Memphis Theological Seminary. And the Manna House is not a bed and breakfast; it is a “place to hang out” for the area’s poor.

Peter started the Manna House nearly 10 years ago after recognizing the need of the neighborhood in which he worshiped. Sacred Heart Catholic Church is located in one of Memphis’ grittier areas. The area surrounding the intersection of Cleveland and Jackson has been dubbed as the Crosstown Neighborhood, and it has attracted attention of several ministries and non-profit organizations. As the Sacred Heart mass lets out, the congregation cannot help but notice the startling number of homeless in the area. Peter asked the people for an answer on how to help. “We would worship with people at Sacred Heart, and then when we walked outside of church, they would panhandle us. We took the time to get to know these folks and asked them how we can be most helpful. The church already had a soup kitchen, so when I asked around, I heard that these people just needed a place to hang out.” Peter, along with the partnership of fellow parishioner Kathleen Kruczek, established what would be known as the Manna House at 1228 Jefferson. People can come in at 8 AM to 11:30 AM on Mondays, Tuesdays and Thursdays, and they are offered much more than a place to hang out.

“Let mutual love continue. Do not neglect to show hospitality to strangers, for by doing so some have entertained angels without knowing it.” Hebrews 13:1-2.

The building Kathleen purchased for the ministry was used for storage purposes and was in bad shape. After countless hours of work and restoration, the Manna House opened and offered its visitors coffee, and “word on the street” marketing soon made the Manna House a popular destination for those in need. Later, the Manna House would offer showers, toiletries, changes of socks, tee shirts, undergarments, shoes and cold weather gear. “Every person that walks through that door is Jesus,” says Peter, drawing on Matthew 25:40- “And the King will answer them, ‘Truly, I say to you, as you did it to one of the least of these my brothers, you did it to me.’”

Peter calls the visitors at Manna House “guests” most of the time. He is otherwise referring to them as “teachers.” He says, “What I learned here from my teachers is what life on the streets truly looks like, and the injustices that they suffer.” He encourages his students at MTS to volunteer at the Manna House, as what people can learn there is critical to Christian theology. A systemic understanding of what happens to the homeless is critical to Peter’s teaching. He notes that, for the most part, homelessness is a continuation of poverty, a snafu in our system. “A home is viewed by society as a commodity instead of a human right,” Peter says. He shakes his head as he describes situations of police harassment and abuse of the homeless from people for the sport of it. One of the Manna House regulars recently had to spend the night in a local hospital for his breathing. After admitting himself when he could barely breathe, he received treatment and received a bill for over $23,000. “I’m going to pay it off five dollars at a time,” the man states. That is 4,600 payments from a person that has no permanent roof over their head.

Mike B., a guest of the Manna House, walks up to the front porch with a New York Times tucked under his arm. He notes some interesting articles he has skimmed, and hands it to Peter, recommending he reads a piece involving Catholicism and the Gnostic Scriptures. Mike immediately debunks many stereotypes society places on the homeless. He describes a sincere and tearful account of how death and family drama led him to homelessness. Mike tended to his sick mother around the clock, and when she died, she left Mike and his two siblings her small home. He was dependent on his mother as her caretaker, so when his older siblings decided to sell the house and give him less than his share, Mike was left with no other resources and no reliable family. Mike became depressed, and he battled his depression with alcohol. Mike, an educated and articulate man (who actually attend the private school at Sacred Heart), now cannot “win for losing” in a society that holds its homeless is such low regard. After hearing a history that resembles that of the Bible’s story of Jacob and Esau and the loosing of

his birthright, one can understand the importance of a place like Manna House and its ability to allow their guests some dignity. “But there’s no excuse for my drinking,” Mike makes sure to add. And despite his struggles, Mike finds hope: “The good news is that the city is coming back. I can see that even from where I am.”

The Manna House’s volunteers receive a five page manual that reads like a guide to restaurant or hotel hospitality. It lists tasks and outlines the best way to greet guests, refresh coffee and creamer, distribute clothes, etc. Atop the list of their hospitality vision reads “Do welcome each guest with dignity and grace.” The Manna House volunteers believe that by offering hospitality, they affirm that hosting their guests involves not only providing needed material goods, but more importantly honoring guests’ humanity and personhood. As a guest makes their way inside, they first put their name on a list for a shower. When their name is called, they enter a room that resembles a clothing warehouse, stacked floor to ceiling with socks, jeans, tee shirts, toiletries and other items. They grab a towel and travel-sized showering supplies, and they enjoy what may be the only shower they have had in a week. They then dress in their new donated clothes (volunteers are reminded that men will not wear pink), and then they make their way to the living room. They can sit and enjoy coffee and conversation with other guests or volunteers, and volunteers know that part of their task is to patiently listen to the guests, as many have not spoken to someone who would listen in days or even weeks.

One such man is Cowboy, a middle-aged homeless man dressed in a bright orange button-down shirt and cartoonish suspenders. He sits cross-legged on a couch inside and offers a warm smile. When approached, he introduces himself and offers what is now a vintage courtesy of “How do you do?” and “I’m doing well, thank you, ma’am.” Cowboy used to have a bike and would ride all the way from Bartlett just to visit the Manna House. His bike has since been stolen, but that does not stop him from wearing holes in the soles of his shoes, hustling in his honest work and good intentions to make money and visit the Manna House. When asked to tell his story, he tells the familiar tale of being born impoverished and taking small jobs like infrequent yardwork to make ends meet. He then concentrates on something completely surprising: a story of thanks. Cowboy recalls blowing leaves for money one afternoon and falling backwards into a pool. He prayed as he sunk to the bottom, blower still attached and unable to swim. “God told me, ‘Not yet, Cowboy. There is still more I want you to do.’” Cowboy wipes a tear and

remembers the helping hand of someone miraculously pulling him out of the water, his lungs full of water. Cowboy continues to count each day on earth as a blessing.

When a guest walks around back, they come upon brightly painted picnic tables in a well-kept back courtyard. There they can relax, and one Thursday a month, they can take advantage of a podiatrist washing their feet and then tending to them, as many of the guests walk nearly 20 miles per day. On Mondays, guests also enjoy a hot meal, known as “More on Monday,” a service provided by Ashley More. The program is particularly noteworthy as Ashley is a former guest of the Manna House who has since found housing as well as a calling to help those in need, something to which she can easily relate. On the side of the back area sits a meditation pavilion, complete with a crucifix, a statue of St. Francis of Assisi, and several chairs. Peter notes that this area is respected by the guests and is a quiet place for personal reflection. It is also where the guests gather as memorial to a fellow guest that recently passed. There is an air of gratitude and peacefulness throughout the Manna House, and Peter notes that it is rarely disrupted.

The Manna House not only offers hospitality, it offers hope. One man stands on the porch and chats politely with Peter. He is a guest, but has recently found housing and earns it

through the Burrito Bus Ministry, an organization that activates local homeless and has them distribute burritos to other homeless via bus. His work gives him pride as well as gratitude. He says he owes it to the “good people of the Manna House,” nodding towards Peter. When asked what motivates him, Peter turns to Mike B. and asks him, “Mike, what do you think my motivation is?” Mike quickly responds. “I have no idea what would possess you to this.” After a quick shared laugh, Peter explains. “I think part of trying to be a disciple of Jesus is to love folks. Matthew 25 (in the Bible) is very clear. People like Mike are the very presence of Christ in our lives. Now Mike may not believe that some days, but it’s true. Every person here is a child of God and should be treated that way.” The Manna House’s heartfelt commitment to the more humbled and downtrodden of Memphis has made them 4Memphis’ May recipient of the Memphis Love Challenge. “Follow your heart,” the saying goes, “and the rest will follow.” For George Flanigen, he found his calling as a teenager, and he has built a life and business doing what he loves. Passion has fueled his successful career from the beginning, and his latest project is no exception.

“When I got on my very first movie set at 15 years old, it was as an extra and made me want to do what I’m doing,” George recalled, “The movie was ‘W.W. & the Dixie Dancekings’ with Burt Reynolds and Jerry Reed, and it gave me my first taste of filmmaking.” First, he had to finish high school, but then he grew his passion for filmmaking at the University of Memphis (then Memphis State). He earned a degree in Business Administration with a minor in Television and Film Production. He returned to his native Nashville, founded Deaton Flanigen Productions with partner Robert Deaton, kept chasing his dream, and within a decade of graduation was lauded the Outstanding Young Alumnus Award by the University.

George may have been smitten with the film industry at a young age, but he has always tinkered with old cars and is a self-proclaimed gear-head too. “I’ve bought and sold cars, and worked on cars all my life.” He bought his first car to fix up before he could even legally drive it, and he worked his way through Memphis State buying and re-selling Corvettes. “It’s never gotten out of my system. I’m still a car collector, and I was a hobby racer for awhile...I never lost that love of anything with a motor.” When the chance came along to work with a dear friend, rescue cool classic cars with interesting stories, and restore the cars in the process, it was dream opportunity come true.

“Lost in Transmission” is a new show premiering on History®, and follows George and his buddy Rutledge Wood as they comb backyards and barns in search of old cars in need of some, make that lots, of TLC. “When there is a love affair with a car, and the

owners have kept it for years, that’s interesting to me,” George said. “It’s a car they’ve loved all their life, but they just couldn’t get it back on the road because of time or money or expertise. For us to be able to take that car, restore it, then hand it back to that owner, and see them drive off in it, I love that story!”

And the storyline is a familiar one for George. He has his own tale of a beloved 1931 Ford 5-Window Coupe. “It was my dad’s car. My dad took it apart, and never put it back together. He didn’t have the means to put it back together so he just let it sit there. And it sat there, and sat there, and sat there. My dad passed away, and I took the car and started storing it because I too didn’t have the means or the time to put it back together. But I kept it long enough, that five years ago I was able to restore it and bring it back onto the road.” George restored the car the way that he believed his father would have restored it himself in the mid-sixties. He brings that same joy he experienced personally to “Lost in Transmission” when he and Rutledge get a treasured car running like new again. They find a DeLorean, a Ford F-100 pickup truck, a VW Thing, and a few characters too, while on the road filming the project.

It may sound like a cliche that can’t possibly be true, but when you love what you do, you don’t work a day in your life. Just ask George Flanigen.

The Texan SandwichHard Rock Café

1 hamburger bun- toasted5 oz pulled BBQ chicken2 oz chipotle BBQ sauce1/3 c mixed shredded cheese

(cheddar and Monterrey jack)1/4 c fried jalapenos 3/4 c crispy fried onions

For the Onions and JalapenosSlice 1 whole onion very thinly. Strain diced jalapenos. Place both in separate baking dishes and cover with buttermilk and soak for at least an hour. Combine 2 cups all-purpose flour, ¼ tsp of cayenne pepper and a tablespoon of salt and set aside. Heat Canola oil to 375 degrees. Grab a handful of onions, toss into the flour mixture, tap to shake off excess, and plunge into hot oil. Repeat with jalapenos. Fry for a few minutes and remove as soon as golden brown. Set to the side.

For the BBQ ChickenPlace ½ lb of boneless chicken thighs in a pan with 2 cups of chicken stock and cover with aluminum foil. Place in oven set to 375 degrees and bake for 45 minutes. Remove from oven and after cooling, use two forks to pull chicken finely and stir in chipotle BBQ sauce.

Serve on bun and top with mixed cheese, fried onion straws and fried jalapenos! Add more BBQ sauce for more Memphis flavor!

Apple Smoked BBQ Seitan Sandwiches Salud! Cooking School at Whole Foods Market Poplar(Makes 6 sandwiches)

2 c vital wheat gluten½ c nutritional yeast1 apple- grated½ onion- grated2 tsp garlic powder

2 ½ c apple juice- divided1 c and 2 Tbl barbeque sauce, divided2 tsp liquid smoke2- 2 ½ c vegetable broth (as needed)

BBQ Rub2 tsp chipotle chili powder2 tsp sweet paprika2 tsp smoked paprika2 tsp granulated garlic2 tsp kosher salt1 tsp black pepper2 tsp cumin2 tsp dried thyme

2 tsp dried oregano1 tsp cinnamon1 tsp ground ginger1 large onion, julienned1 Tbl olive oil6 BunsKosher Pickle slicesExtra Barbeque Sauce for serving

Preheat oven to 350F. Combine wheat gluten, yeast, grated apple, grated onion and garlic powder in large bowl. Stir together 1 cup apple juice, ½ c. plus 2 Tbl BBQ sauce and liquid smoke together; add to the dry mixture, stirring until dough forms, adding vegetable broth if necessary. Knead dough for 3 minutes, or until elastic. Shape into 2 loaves.

Mix together dry rub seasonings in a small bowl. Cover seitan loaves liberally with seasoning and set aside. Reserve remaining rub. Place loaves in a medium baking dish, lightly sprayed with canola oil, and add remaining apple juice and vegetable broth as needed to fill the pan about ½” inch deep. Spread remaining ½ c. barbeque sauce over the tops of each loaf and cover lightly parchment paper. Bake for 30 to 45 minutes, or until seitan is firm. Remove the parchment paper and cook an additional 7 minutes to brown the seitan if desired for a “crispy” crust.

While seitan bakes, julienne the onion and sauté until caramelized in olive oil. Season with reserved BBQ rub. To assemble, slice and chop seitan into bite size pieces. Serve with pickle slices, sautéed onion and extra barbeque sauce.

New Orleans Shrimp and GritsOwen Brennan’s

For the Shrimp6 jumbo shrimp- shells removed with tail left on2 oz Tasso ham- julienned2 oz andouille sausage- quartered and sliced1 garlic clove- smashed1/4 c scallions- sliced1/2 c shitake mushrooms- sliced

2 oz butter- clarified1 c shrimp stock1 tbl butter1 c shrimp stock1 tbl butter1 tsp Cajun seasoningSalt and pepper to taste

Heat a sauté pan with the clarified butter until smoking. Add shrimp and Cajun seasoning, and brown briefly without burning. Add andouille, Tasso, mushrooms, and garlic sauté for one minute and deglaze with shrimp stock. Reduce stock for two minutes, about a third a cup. Add the butter, remove from heat, and stir butter into sauce. Add the scallions. Place a scoop of grits in a bowl, arrange shrimp around the bowl, and pour sauce on top. For the Smoked Cheddar Grits 1 c stone ground grits1/2 c diced onion1 garlic clove- smashed1 quart chicken stock

1/2 c heavy cream1 c shredded smoked cheddar cheese2 fl ounce clarified butterSalt and pepper to taste

In a heavy bottomed pot, sauté onions and garlic in clarified butter. Do not brown. Add chicken stock and bring to a boil. Add grits and reduce to a simmer. Stir frequently and add more stock if needed until grits are soft. Stir in cream and cheese. Cook five more minutes and allow grits to thicken. Season with salt and pepper.

Clean and devein the foie gras lobe. Use offset smoking box to cold smoke your foie gras portion. Expose to smoke for 3 to 5 minutes. Allow to rest and then portion, season and sear.

1 tbl chili powder3 tbl tomato paste1/2 cup veal stock1 pint blackberries

Scrape tamarind pod and put contents with toasted cumin, coriander, chili powder, and tomato paste and veal stock. Reduce by half and add a pint of blackberries. Enjoy

1 Lucchessi’s Ready-To-Bake pizza crust or dough2 c Lucchessi’s pizza sauce2 c grated mozzarella 1 c Commissary barbeque (chicken or pork)

2 c of Lucchessi’s 3 cheese blend (parmesan, mozzarella and cheddar cheese)Drizzle of Commissary Barbeque sauce

Preheat oven to 425. Layer uncooked crust with pizza sauce and then mozzarella. Then add separated barbeque chicken or pork. Then add the 2 cups of cheese blend evenly on top of barbeque. Drizzle desired amount of barbeque sauce. Cook the pizza for 18 to 20 minutes and enjoy!

Barbequed TroutInterim

For the Trout1 filet smoked trout1 sunny side egg

For the Hash1 sweet potato1 Idaho potato

1 onion- caramelized1/2 c andouille sausage

For the Sauce2 c BBQ sauce1 c cold butter1 tsp of garlic and shallot mix

Salt and pepper to taste1 1/2 c white wine dash of heavy cream

Take white wine, garlic, and shallot and reduce until the wine is almost gone, then add a dash of heavy cream and reduce until cream and wine mixture thicken. Turn down heat and gradually add butter until it combines with the cream and wine mixture. Add the BBQ sauce into the butter mixture and stir till combined, then strain and hold in a warm location.

Next, blanch and shock your sweet potato and Idaho potato, and then caramelize your onion. When the onion is caramelized, add the potatoes and andouille sausage and sauté until it’s hot. Next, sauté the fish in a hot pan until desired temperature (3 minutes on each side until tender). Finally, make your sunny side egg (via frying) and put the components together on your plate. Enjoy!

Salmon Gravlax with Lemongrass Barbeque

For the Salmon4-6 oz of cured salmon1 tbl dill2 tbl fennel2 tbl salt

2 tbl brown sugar2 tsp white peppercorn- crushedPinch of clovePinch of anise

Mix herbs and spices in a food processor, and then coat the salmon. Thinly slice and arrange on a plate.

For the Lemongrass Barbeque Sauce4 stalks of lemongrass1 onion- chopped1/2 tsp garlic1/2 c chives1 tbl white peppercorn- crushed1/2 tsp thyme

1/4 c white wine1/4 c jalapeños- chopped 1 tbl sugar1 tbl vinegar1 tbl tomato paste

Mix ingredients in a food processor until smooth. Drizzle desired amount over salmon and enjoy!

Bacon Wrapped Scallops Bleu Restaurant & Lounge

8 large scallops8 thin slices of bacon 2 tbl Jerk BBQ sauce

Olive oil as needed8 large toothpicksSalt and pepper as needed

For the ScallopsSeason the scallops with salt and pepper and rub with jerk BBQ sauce all over. Wrap the scallops with bacon and secure bacon with large toothpicks. In a large skillet at medium heat, sear the scallops with the olive oil for about 30 seconds on each side and remove from heat. Place in the oven for about two minutes or until bacon is crispy. Let it rest for about a minute or two. Remove the toothpicks.

For the Lime Vinaigrette:2 limes- zest and juice1 tbl of honey1 oz green bell pepper1 c olive oil

1 tbl of Dijon mustard2 oz waterSalt and pepper to taste

In a blender, place the lime juice, zest, honey, water, bell pepper and mustard. Start blending in a low rotation and start adding the olive oil slowly until all the oil is gone. Turned off and season with salt and pepper.

For the Apple Salad with Lime Vinaigrette1 granny smith apple- thinly sliced1/2 lb frisee lettuce or favorite lettuce2 oz lime vinaigrette

Salt and pepper to tasteChive or scallion for garnish8 cherry tomatoes

Toss the lettuce, apple, and vinaigrette in a bowl and season to taste with salt and pepper. For plating, divide the salad on plates with equal amount, and place two scallops on each plate and garnish with chives and cherry tomato as shown on picture.

For the Lobster1 regular-sized lobster tail

Cut up the shell to the tip of the tail, and carefully pull meat through so that it sits atop the shell.

For the Barbeque Sauce2 c ketchup1/2 c cider vinegar1 c water1/4 c brown sugar1/2 tbl black pepper

1/2 tbl onion powder1/2 tbl ground mustard seed1 tbl lemon juice1 tbl hot sauce1 tbl Worcestershire sauce

Combine all ingredients and bring to a boil. Reduce heat, simmer 25 to 30 minutes.

For the Orange and Tomato Salsa2 Roma tomatoes- seeded and diced1/2 red onion chopped1 orange- peeled and cut into segments

Juice of 1 orange1 jalapeño- seeded and diced1/2 bunch cilantro- choppedSalt and pepper to taste

Mix all ingredients together. Baste lobster tail with barbecue sauce and bake at 400° for 8 to 12 minutes. Top lobster with salsa and serve with cole slaw. Drizzle with extra BBQ for garnish.

Smoke wafted in heavy plumes from the building, and when Helen stepped out into the fresh air, she wiped her eyes and a tear or two. “It’s a hard job. I just enjoy it,” she laughed. Helen Turner cooks up some of the best barbeque in the South with smoke, heat, and dedication at her namesake eatery, Helen’s Bar-B-Q in Brownsville, TN.

Even though Google maps was giving me directions, when I rounded a corner on Washington Avenue, the smoke hanging over a building was like a big “x” marking Helen’s spot. No doubt I had arrived. As the windowless door to the restaurant creaked open, I stepped inside que-topia. Helen’s place feels and smells like a true Southern BBQ joint, where something real and good is dished.

Helen Turner didn’t come to this career with a burning passion to be an entrepreneur or a rogue female pitmaster, but through life circumstances, necessity and a bit of luck she is now both. After being laid off from her job at a plant in Covington, TN, a friend asked her to partner with him in a barbeque business. He eventually left the business with Helen, saying he was too old for this hard work. For the 18 years since, she has kept it cooking, feeding barbeque aficionados from Brownsville to Brooklyn, and in the process she’s become a notable restaurateur and one of very few women barbeque pitmasters

in the nation. She really didn’t realize that she was breaking through the smokehouse ceiling in what is traditionally a man’s world; she was just doing her job.

The screened-in outbuilding where the pits are located and the cooking magic happens is adjacent to the restaurant. A door connects the outbuilding to the kitchen, and it is a natural extension where Helen shifts easily from inside to outside duties. It is like a screened-in back porch that has been charred by a campfire, with opaque black screens from years of smoke.

The keys to making Helen’s barbeque special are the wood burning fire and the smoke. Helen’s husband of 34 years is an integral part of the business, and has the distinction of lighting her fire every morning. to make my fire,” she said. The wood is a combination of oak and hickory, and they burn at least three cords every week. When Helen gets to the restaurant at 7am, the coals are ready for her to start cooking the meat.

Cooking the barbeque is nothing short of grueling. Helen shovels hot coals from the fire pit to the cooking pit about twelve feet away. The heat and the smoke are stifling. She leans in with her long-handled shovel and moves several scoops of embers to the pit with the rack holding the pork shoulders. Shoulders take 10-12 hours to cook, so the meat she cooks one day will be served the next. Numerous times during the day, she slips through the kitchen door into the pit area. She pokes the fire, shovels more coals, turns the meat, and gets covered with the smokey aura of a pitmaster. “I used to go to the beauty shop every week to get my hair fixed. I told them to cut it off, so every night when I get home, I can wash out the smoke,” she laughs. Helen closes up at 7pm, 12 hours after she started.

The lines between the pit, the kitchen, and the restaurant are blurred with the smoke. The ceiling is low and a light haze hangs just above our heads. Smoke drifts in when the door is opened and through the seams even when it’s not. Three tables make up the cozy dining room that is part storage and part community gathering place. A rack of buns is tucked in one corner, and a tv tuned to ESPN in another, and the tables rotate often with

friends, neighbors, and visitors, all seeking Helen’s tasty barbeque.

The atmosphere is homey and warm, and while sure, that is due in part to the hot grills, the kitchen, and the confined space, it mostly has to do with Helen herself. “They come in, and I say “have a seat and make yourself at home.’ I have a good time with ‘em too.” When a Helen’s regular stopped in, Helen shouted from the kitchen, “I saw that red truck pull in the lot...I’ve got your order started!”

Helen’s barbeque is moist and succulent with a crisp outer crust. Pork shoulder, still wrapped in heavy foil from being cooked the previous day, is warmed in the oven then chopped. Helen serves her barbeque with slaw on - not on the side - the sandwich, and a light vinegar-based sauce tops it off. Sides of beans and macaroni and cheese are kept warming in a Crock Pot. No industrial warmers here, just more charm that is uniquely Helen’s Bar-B-Q.

Maybe it’s the wood burning fire, maybe it’s the smoke, maybe it’s power in this talented pitmistress, but this may be the most perfect barbeque sandwich of all time and could even bring tears to your eyes.

Memphis’ highly-anticipated opening of Bass Pro Shop at the Pyramid has arrived, and waterfowling and boating

enthusiasts everywhere are over the moon for the new shop. Dubbed as being “more than a store, it’s an adventure,” the new Bass Pro Shop that has been built

out in Memphis’ previously unoccupied downtown pyramid now resembles Disney’s Epcot, but

for hunters.

Walking into Bass Pro Shop at the Pyramid will give new customers chills. Its sheer size is almost intimidating, begging the question: “Where should I go first?” The new shop includes Uncle Buck’s Fishbowl and Grill, which is both a bowling alley and restaurant, complete with underwater décor of floating mermaids and alligator ball returns. The facility hosts a fine gun room, which contains some of the world’s finest collectible firearms and accessories. There are both archery and firearm ranges to fine-tune form. An ATV area allows shoppers to test the latest in ATV and UTVs. If the activities sound exhausting, guests can find rest and replenishment at the Big River Sky High Club: a restaurant, bar, and massive aquarium situated at the apex of the pyramid, 300 feet above the Mississippi River and with panoramic views of the Mighty Mississippi and the city. The shop also boasts a 28-story glass elevator- the biggest free-standing elevator in America. Visiting and need somewhere to stay? The Big Cypress Lodge is comprised of 103 elegant guest suites that wrap around the parameter of the pyramid, and it offers a spa and workout facility, too. It allows visitors the ability to adequately submerge themselves in the Bass Pro Shop at the Pyramid’s waterfowling and fishing experience (which could take days to fully explore) without leaving the building. Every elevated area overlooks a lifelike cyprus tree and waterfowl area, complete with mossy oaks, muddy water, and realistic game afoot. Despite the grand reveal of such a lavish structure, Bass Pro Shop appreciates its humble beginnings and its close-to-home ties with Memphis and the University of Mississippi.

In 1971, Johnny Morris, frustrated by the lack of tackle in local stores, rented a trailer and drove across the country, filling it with the newest premium fishing tackle that he could find. When he returned home to Springfield, Missouri, Johnny set up shop in his dad’s liquor store, and the first Bass Pro Shop was born. Now, Bass Pro Shops operates 91 retail stores and Tracker Marine Centers across America and Canada and are visited by more than 120 million people every year. Following in his father’s footsteps roughly 44 years later, Johnny’s son John Paul is excited to be working for his father’s organization, especially when Memphis holds special sentiment to him.

John Paul “JP” Morris is the General Manager of Bass Pro Shops Website and eCommerce. He also is one of the company’s product development resources and hunters, drawing on his skills as a born-and-raised hunter and fisherman in order to assist in bringing the highest quality and best knowledge to Bass Pro Shop shoppers. “Memphis is a gateway to the Mississippi Flyway and is home to some of the best duck hunting in the country,” notes JP. “Bringing this waterfowling headquarters to Memphis was a no-brainer: it gives us an opportunity for growth and allows us to showcase our expertise.”

In playing such a large role to the organization and its newest location in Memphis, JP pulls on his Memphis knowledge from firsthand experience: JP remembers attending many

University of Memphis basketball games at the pyramid as a child, and, moreover, he was a graduate of the (nearly) local University of Mississippi in 2001. Born in Springfield, Missouri, JP knew he wanted to attend a university that had a strong school of business and allowed him close proximity to his favorite pastime, hunting, when it came time for chosing a college. “I remember visiting the Ole Miss and wanting to visit the business school. When I approached the business school there, a truck full of guys came to screeching halt in front of it and piled out in hunting gear, and I noticed there were dead turkeys in the bed of the truck. That’s when I knew the University of Mississippi was for me.” JP enjoyed countless hours in and around Memphis, taking in the hunting and fishing, as well as the other exciting offers of Memphis. “Bas Pro Shops has a great partner in the city of Memphis. TRAVEL

There are three absolutes of visiting the wine country – and I would argue those absolutes apply to any wine country. First, you’ll eat too much. Second, you’ll entertain fantasies of leaving your normal life behind, working in a tasting room and accepting your wages in wine instead of a paycheck. Finally, you’ll find yourself a bit of a wine snob upon your return home, bemoaning to friends the lack of “small production” offerings at your neighborhood wine shop.

I do speak from experience with these absolutes, as I’ve been victim to them from previous trips: Rioja. Napa. Côtes de Provence. And Sonoma County, where the charming town of Healdsburg is the setting of my fantasy wine life.

In my dreamy Healdsburg life, I somehow manage to occupy a stunning home with a few rows of ancient vines that’s within walking distance of downtown, its charming square, and its tasting rooms and restaurants.

Feeling Townie

On those days I decide to stay in town, I start with big breakfast at Costeaux, the French bakery that opened in 1923 as The French American Bakery, and was eventually bought by a French couple, Jean and Anne Costeaux. The Seppi family, who expanded the bakery’s footprint, now owns the bakery added a café that’s as popular with locals as it is with visitors.

Next, I’d pop into Portalupi, the swank tasting room of a small vineyard that distributes nothing it produces; in other words, you can pick up your bottles in town or join the wine club and they will ship them to you. Yep, those are your only options. Owned by Jane Portalupi and her husband Tim Borges, the winery focuses not so much on producing the same taste over and over, but producing wines that capture the essence of the combination of soil

and sun and rain and fog that make each vintage unique. I’d grab a 4-pack of the Vasso di Marina – two red and two white blends that come in milk bottles – for my everyday wine, and add few bottles of the winery’s Barbera to have on hand when I want to impress. The milk bottles are a throwback to the inspiration for the table wine, Marina Portalupi, Jane’s Nonna (grandmother), who bottled her wine for her village in Piemonte, Italy, in milk jugs.

Since it’s time now for lunch, there’s no better way than to make your own, with the help of Donna del Ray of Relish Culinary Adventures, who started her cooking school in the back of a vintage truck in 2003 and eventually moved into a sleek space just off the main square in downtown Healdsburg. After a few hours with Donna, chef Anne Cornell and the Relish team, one does feel confident enough to smoke salmon on the grill, whip up some pickled shallots and a citrus-y vinaigrette, and create a pretty (and yummy) salad.

Time to be a Valley girl

Beyond the charms of downtown Healdsburg, its location is superb, being just a few minutes drive to the wineries of the Alexander, Dry Creek and Russian River Valleys. With some 400 wineries scattered throughout Sonoma, the best part about heading to out of Healdsburg proper is deciding which wineries to explore on any given day. Here are three of my favorites – in both my fantasy wine life and real life:

Wilson is a family-owned winery that overlooks Dry Creek Valley – a stunning view made even more so, thanks to a fanciful, climb-able and huge sculpture of a wolf on the winery grounds. The focus at Wilson is really on single-vineyard zinfandels although other wines are offered, too.

A good friend introduced me to J Winery’s Pinot Gris, and while the winery distributes a lot of that variety and others,

including a fab Brut Rosé, J offers far more vintages in limited or club-only distribution. The winery (just bought by the Gallo organization) offers food and wine pairings that are simply divine, all in a gorgeous contemporary setting.

Dry Creek Vineyard is set among the 185 acres of estate vineyards that were the foundation of the winery, and like Wilson, is family-owned. Like J, there are a number of Dry Creek vintages you can find locally – and a large number of wines you can only find in the winery’s large tasting room. Best bet on a weekend visit is a flight tasting – an exploration of a number of varietals, held in the cellar.

Ron Olson Art Opening Reception

Million Dollar Agents Open House

An Open House for Million Dollar Agents was held recently on April 9 in a palatial $3.5 million dollar home, recently purchased by a Memphis physician. The event was co-hosted by Memphis House Hunters/Remax agents Michael Mosteller and his par tner Nikki Perry. Real estate brokers mingled with mortgage, banking, and insurance professionals and enjoyed touring the grand 3-story, 20,000 square foot property in Eads.

Junior Achievement 30Th Annual Bowl-A-Thon

Junior Achievement of Memphis and the Mid-South held its 30th Annual Bowlin’ on the River Bowl-A-Thon in February and March at bowling centers across the Mid-South—B illy Hardwick’s All-Star Lanes, Winchester Bowling Center and FunQuest Family Entertainment Center in Collierville. The largest fundraiser of the year, Junior Achievement’s bowling event drew more than 100 local corporations and organiz ations with nearly three thousand bowlers participating. The Grahamwood Gala

The 3rd Annual Grahamwood Gala was held March 28 at Propcellar Memphis. Guests were treated to delicious food by Liz Ferguson Catering, Grahamwood parent, and wer e entertained by the music of Travis Roman while bidding on over 200 items from local businesses. Chaired by visionary Grahamwood parent volunteers, Juliana Hurdle, Virginia Burbank, and Mary Kate Brandon, this lavish evening was a t remendous success and raised $20,000 for Grahamwood Elementary School; 100% of the proceeds raised directly benefit Grahamwood Parent Teacher Association.

The Benjamin L. Hooks Institute for Social Change held the 2015 Join Hands for Change Gala Thursday, April 9 at The Columns in Downtown Memphis. This event is part of the University of Memphis’ Critical Conversations Series, which focuses on human and civil rights, diversity and inclusion. The gala coincides with the fifth anniver sary of the death of Memphis civil rights icon Dr. Benjamin L. Hooks, for whom th e Hooks Institute is named. Delta Blues Winery Grand Opening

The newest winery in Tennessee is now open in Lakeland. The Delta Blues Winery hosted a ribbon cutting in early April and offered tours of the vineyard between rain showers, and also the beautiful tasting room and bottling facility. The winery is located at 6585 Stewart Road and is open daily. Every Friday during the summer season, they are hosting ReWine parties at 7pm to relax and “rewine” from a long week! Crosstown Concourse Groundbreaking
